ROOMIE'S SUNDAY DINNER ZUCCHINI DELIGHT
How to make Roomie's Sunday Dinner Zucchini Delight

Steps:
- NOTE: Use undiluted mushroom soup. Cook zucchinis, onion and pepper until just tender and drain.
- Combine sour cream and mushroom soup in a separate bowl.
- Butter 10\" baking dish; place half of the vegetable mixture in dish; spread half of the sour cream and soup mixture over vegetables; cover with half the stuffing mix.
- Sprinkle with half of the melted butter; repeat for second layer. Bake at 350 for 25 minutes, or until bubbly and top is browned.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Slice zucchini and onion and place in a glass dish baking dish. Add can of tomatoes, salt and pepper. Sprinkle cheese over top. Place lid on dish.
- Bake in the preheated 350 degrees F (175 degrees C) until zucchini becomes tender, 20 minutes.
