Acapulco goes to Rome for a visit...the rest is history. The fusion of the two cities are a perfect marriage. This pizza is a spicy and sweet sensation! The crispy tortilla topped with a rich marinara sauce, whole milk mozzarella cheese, spicy beef chorizo, sweet jalapena peppers, roasted bell peppers strips with caramelized onions, kalamata olives, grilled sweet corn, a sprinklin' of black beans topped with a blend of fiesta cheeses and fresh torn basil...this is UMAMI! Number Of Ingredients 11

4 medium tortillas, flour
4 tablespoon(s) marinara sauce
4 ounce(s) mozzarella cheese
1 - chorizo tube (mexican sausage, spicy beef)
1/4 cup(s) mezzetta greek pitted kalamata olives
1/4 cup(s) mezzetta sweet & hot jalapena pepper rings
1/4 cup(s) mezzetta roasted bell pepper strips & caramelized onions
1 - grilled sweet corn (ear cut off cobb)
1/4 cup(s) black beans
4 ounce(s) fiesta cheeses
4-6 - basil, fresh (torn)

Steps:

  • in a heated skillet fry chorizo for 5-6 minutes. remove and drain oil
  • in a hot oiled skillet, grill corn for 5-6 minues. cut off cobb
  • preheat oven to 400 degrees. assemble pizza on an oven proof pan
  • baked pizzas for 10-12 minutes or until tortilla is crispy and the cheese has melted. top with fresh basil & enjoy!

Number Of Ingredients 11

2 pounds ground beef
1 envelope (1-1/4 ounces) taco seasoning
3/4 cup water
1 bottle (15 ounces) mild green taco sauce
9 flour tortillas (6 inches)
2 cups shredded cheddar cheese
1 can (16 ounces) refried beans
2 cups sour cream
4 green onions, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
Optional: Chopped tomatoes and chopped avocados

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Add taco sauce; simmer until slightly thickened, 5-10 minutes., Cover the bottom of a 13x9-in. baking dish with 3 tortillas, tearing them into pieces as necessary. Layer half the meat mixture over tortillas; sprinkle with half the cheese. Layer with 3 more tortillas; spread with refried beans. Cover with sour cream; sprinkle with green onions and olives. Layer remaining tortillas over top; cover with remaining meat mixture and cheese. Bake until heated through, 25-30 minutes. Let stand a few minutes before serving. If desired, serve with chopped tomatoes and avocados.

ROASTED ROMAN-STYLE ROMANESCO



Roasted Roman-Style Romanesco image

Because of this vegetable's bizarre and unusual appearance, this is the kind of thing people pass over in the market, mostly because they're confused by it and don't know what to do with it, but this recipe shows exactly what to do with it. If you do what I do, you'll be enjoying one of the most delicious vegetables you'll ever have. Serve drizzled with more olive oil or garlic aioli.

2 drizzles olive oil, divided, or as needed
2 heads Romanesco, leaves and stems removed
3 oil-packed anchovy fillets
3 tablespoons olive oil
¼ teaspoon red pepper flakes
1 lemon, juiced
¼ cup plain dry bread crumbs
½ cup finely grated Parmigiano-Reggiano cheese, divided
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C). Drizzle olive oil into a roasting pan or baking dish.
  • Cut Romanesco into quarters, being sure to cut directly through the thick center core, so that they stay together when roasted. Set aside until needed.
  • Add anchovies and 3 tablespoons olive oil to a large mixing bowl and use the back of a fork to mash the anchovies into a paste. Add red pepper flakes and lemon juice and stir with a fork to combine.
  • Toss Romanesco in the dressing until the pieces are thoroughly coated. Sprinkle with bread crumbs and 1/2 of the Parmigiano-Reggiano cheese and toss until evenly coated.
  • Transfer Romanesco into the prepared pan, cut side-down. Scrape all cheese and crumbs from the mixing bowl and scatter over the top. Grate the remaining Parmigiano-Reggiano to cover the tops and lightly drizzle with olive oil.
  • Bake in the preheated oven until the cheese is browned and the Romanesco is tender, as tested with the tip of a knife in the cores, about 20 minutes. Serve immediately with fresh lemon wedges.
