Muenster, Turkey, and Apple Quesadillas image

There's no trick to this speedy, kid-pleasing meal that plays well on the busiest fall nights.

1 tablespoon vegetable oil, plus more for baking sheets
1 tablespoon honey
1 tablespoon Dijon mustard
8 flour tortillas (10-inch)
1 1/2 cups shredded Muenster (6 ounces)
8 ounces sliced cooked turkey
1 Granny Smith apple, halved, cored, and thinly sliced
Halloween Salad, for serving (optional)

Steps:

  • Preheat oven to 425 degrees, with racks in upper and lower thirds. Lightly brush two rimmed baking sheets with oil, and place in oven to warm up. In a small bowl, combine honey and mustard; set aside.
  • Place 4 tortillas on a work surface. Dividing evenly, sprinkle with half the cheese, top with turkey, honey-mustard, and apples; finish with remaining half of cheese. Cover with remaining 4 tortillas, and brush tops with oil.
  • Carefully remove hot baking sheets from oven; place two quesadillas on each. Bake until golden, about 20 minutes, flattening with a spatula, and rotating sheets halfway through. Let cool 5 minutes before serving.

Number Of Ingredients 8

Vegetable oil cooking spray
1/3 cup whipped cream cheese, at room temperature (about 3 ounces)
1/2 tablespoon honey
4 (8-inch) whole wheat tortillas
1/2 small red apple, such as Red Delicious, cored and sliced into 1/4-inch thick slices
1 cup shredded smoked mozzarella (4 ounces)
1 cup shredded mild Cheddar (4 ounces)
8 thin slices smoked Black Forest deli turkey meat (5 ounces)

Steps:

  • Spray a nonstick grill pan or nonstick griddle pan with vegetable oil cooking spray. Place over medium-high heat.
  • In a small bowl, mix together the cream cheese and honey until smooth. Spread evenly over 1 side of each tortilla, leaving a 1/2-inch border around the edge. Place 2 or 3 apple slices in a single row about 1 inch from the nearest edge of each tortilla. In a small bowl, combine the 2 cheeses. Sprinkle half the cheese mixture on top. Place 2 slices turkey side-by-side on top of the cheese. Sprinkle the remaining cheese on top. Tightly roll up each tortilla like a jelly roll.
  • Place the tortilla rolls, seam-side down, on the grill. Cook, turning every 2 minutes, until the tortillas are brown on all sides and the cheese starts to melt. Cool for 10 minutes.
  • Using a sharp serrated knife, slice each tortilla roll into 1-inch pieces.
  • Arrange on a platter and serve.

One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.
