ROLLED HAZELNUT BREAD
This is an impressive bread that is easy enough for beginners to make. It also contains my favorite flavor combo...toasted hazelnuts and chocolate! This loaf freezes well. Prep time does not include rising time.

- To make bread dough: In small saucepan, heat milk to lukewarm.
- Stir in yeast and 1 tsp granulated sugar.
- Cover and let stand for 10 minutes or until foamy and double in volume.
- Maenwhile, in large bowl, stir together 1 cup flour, 1/4 cup sugar and softened shortening.
- Stir yeast mixture with a fork and add to flour mixture.
- Gradually beat in remaining flour to make a soft dough.
- Turn out onto a lightly floured board and knead dough for about 10 minutes or until dough is smooth and elastic.
- Shape into a ball and place in a clean, greased bowl.
- Cover with a tea towel and let rise in a warm place for about 1 hour or until double in bulk.
- To make filling: Place hazelnuts in a frying pan and toast on medium-high heat, shaking pan constantly, until skins start to loosen and nuts turn light brown.
- Remove from heat and place in a tea towel.
- Rub vigorously to remove skins, being careful not to burn yourself.
- Let cool.
- Grind toasted hazelnuts in a food processor (you should have about 1 1/2 cups) and then place into a medium bowl.
- Grind chocolate chips in food processor.
- Add to ground nuts.
- Add sugar, egg white, water and almond extract to bowl.
- Beat egg yolk with a fork and add half of it to the nut mixture.
- Mix well.
- To assemble: Punch down risen dough and let rest on floured surface for about 10 minutes.
- Roll out into a 18 by 12 inch rectangle.
- Spread filling evenly over dough, leaving a 1/2 inch border.
- Starting at long side, roll up tightly, jelly-roll fashion.
- Pinch ends closed and form into a slight horseshoe shape.
- Place seam side down on large, greased baking sheet.
- Cover with a towel and let rise in a warm place for about 1 hour or until double in bulk.
- Using a very sharp knife, cut diagonal slits on top of bread, spacing them about 2 inches apart.
- Bake in preheated 400 degree oven for 30 to 35 minutes or until loaf is golden brown and bread sounds hollow when tapped (if bread is browning too quickly, cover with tin foil).

HAZELNUT, CHOCOLATE AND BANANA ROLLED BREAD
A Jamie Oliver (Naked Chef) recipe from foodnetwork.com. I copied the recipe before it disappeared, which tends to happen on that site. We sampled this bread the other day at a brunch and immediately asked for the recipe as did everyone else sitting around the table! Gooey, messy and delicious. Kids will love it! A superb "dunker" for coffee.

- NOTE: If so desired, use your bread machine on the DOUGH cycle to prepare the dough for this recipe.
- Basic Bread Mix: In a large bowl, mix all the dry ingredients together. Stir in the water then mix into a dough.
- Dry roast the hazelnuts in a cast iron skillet and set aside to cool.
- On a floured cutting board and rolling pin, roll the dough out into a long, rectangular shape about 1/2 inch thick, 15 inches long and 12 to 15 inches wide.
- On the rolled out dough use a buttered spatula knife to cover the surface with the hazelnut/chocolate spread. Sprinkle some of the toasted chopped hazelnuts and the sliced banana onto the dough. (Reserve 1/3 cup hazelnuts for the top of the bread.).
- The next step is the only tricky part as the dough will want to stick to the cutting board. Roll up the dough into jelly roll fashion. (The shape will not be perfect and that's okay.) Sprinkle your hands and the cutting board with additional flour to facilitate rolling the dough. An extra pair of hands help, too.
- Transfer the shaped dough to a buttered and floured 10" tube pan. Shape the dough around the tube pan, spreading and stretching out the dough to fit the pan evenly. Sprinkle with chopped hazelnuts.
- Proof the dough for 15 minutes.
- Bake in a preheated 400°F (200°F) for approximately 25 minutes.
- The loaf tastes best eaten the same day it is baked.

Steps:
- Put bread flour, milk, white sugar, 1/4 cup melted butter, egg, yeast, and salt in a bread machine; set to "dough" cycle and press Start.
- Preheat oven to 375 degrees F (190 degrees C). Grease and 9x12-inch baking dish and line with parchment paper.
- Transfer dough to a floured work surface and punch dough. Roll dough into a large rectangle. Spread 2 tablespoons softened butter over dough and top with chocolate-hazelnut spread. Sprinkle hazelnuts over chocolate layer. Roll dough around the filling into a log shape; cut into 12 even portions. Arrange rolls in the prepared baking dish.
- Bake in the preheated oven until rolls are cooked through, about 25 minutes.

- In a large mixing bowl, whisk the flours, rolled oats, salt, and yeast together until mixed. Stir in the water and honey until a chunky, thick dough forms, then add hazelnuts and spread them out in the dough. If needed, add a few more teaspoons of water, just enough to get the dough barely wet throughout (it’s OK if it doesn’t form a ball and remains all sticky). Cover the mixing bowl with a cloth or plastic wrap and let it rest overnight (about 12 hours) at room temperature.
- In the morning, preheat the oven to 450°F (230°C) and place a 4 to 6-quart heavy covered pot (cast iron, enamel or ceramic) inside, until you reach the desired temperature, or ideally for 30 minutes.*
- Once the oven is hot, remove the covered pot, and carefully line with parchment paper (be careful, it’s hot!). Gently scrape the dough from the bowl, shape roughly onto a ball with your hands and place in the pot (the dough will look a little bit sticky and messy but it’s normal, just let it be). Sprinkle the remaining oats on top, and place in the oven with the lid on for 30 minutes. Remove the lid, and bake for another 10-15 minutes to get the outside crust golden brown and crispy. Transfer onto a cooling rack, and let cool. It’s done!

- Place the milk in a small saucepan and heat up until it is lukewarm. Add cubed butter and take of the heat. Swirl the saucepan few times, to encourage the butter to melt. Set aside and allow all the butter to melt.
- In a large bowl of a freestanding electric mixer, mix together the flour, sugar, yeast and salt. Make a well in the middle, and add lukewarm milk and melted butter and large egg. With mixer running on low speed, combine these ingredients together for 2 minutes. Increase the speed to medium- high and mix for further 6-8 minutes until you have smooth and elastic dough, that no longer sticks to the sides of the bowl. Remove the dough from the bowl, and using your hands shape it into a ball.
- Lightly grease a large bowl with some olive oil, then place the dough in the bowl and cover with clean kitchen towel, cling film or shower cup. Set aside (ideally, somewhere warm), and let it rise for 2 hours or until double in size.
- To make the filling, place the softened, cubed butter, brown sugar and cinnamon in a bowl of a standing mixer fitted with paddle attachment and beat until well combined and fluffy, about 3 minutes. Set aside. Line the 10' round baking tin or dish with baking paper and set aside. Line the large baking tray with baking paper and set aside too.

- Mix the lukewarm milk with the dry yeast and let sit for about 5 minutes so it can bubble up a bit. Add the flour, sugar, salt, heavy cream, egg, and yeast milk to a large bowl and knead for about 8 minutes until you get a smooth but sticky dough that comes off easily from the sides of the bowl. Cover the bowl with a clean kitchen towel and let the dough rise for 60-120 minutes until almost doubled in size.
- While the dough is rising add the milk, sugar, and butter to a saucepan and gently heat up on the stove until the butter has melted. Add the ground hazelnuts and mix everything until you get a thick paste. Remove from the heat and let cool down. Line an 8 inches (20cm) springform tin with some baking parchment, grease lightly, and set aside.
- When the dough has doubled in size, transfer to a floured surface and divide into 5 equal pieces, shape into balls and let rest covered another 10 minutes. Roll out to rectangles with 4×6 inches (10x15cm). Place 1/5 of the filling on the shorter side of the rectangle and cut several times into the dough opposite of the filling so it kind of looks like fringes. Roll up from the side where the filling is and place in the prepared springform tin and repeat with the remaining dough and filling. Place the rolled-up logs close to each other in a ring in the springform tin, cover with plastic wrap and let rise once more for 60-120 minutes until risen nicely.
- Preheat the oven to 350°F (180°C). Brush the risen bread carefully with some milk and bake for 18-20 minutes until nicely browned on top (it can still be light in color on the sides). Take out of the oven and let cool down on a wire rack, then remove from the tin.
