This is a recipe I saved from Ediets. I have found that I prefer a little sea salt, fresh ground pepper and splenda mixed with the sauce, but the original recipe did not call for it. I hope you enjoy!

2 1/2 cups fresh green beans
2 garlic cloves
5 teaspoons balsamic vinegar
2 1/2 teaspoons olive oil

Steps:

  • Rinse and snap beans.
  • Mince garlic.
  • Mix garlic, vinegar and olive oil and set aside.
  • Steam beans until tender but firm, approximately 10-15 minutues.
  • Toss with balsamic vinegar dressing.
  • Can be refrigerated and served cold.

Grilled Candied-Garlic Salmon on Crispy Rice Noodles and Baby Asian Greens image

Number Of Ingredients 18

10 cloves garlic, sliced very thin, plus 2 cloves garlic (pressed or minced)
1/2 cup water
1/2 cup white wine
1/2 cup granulated sugar
2 tablespoons butter
2 tablespoons Asian fish sauce
3 tablespoons lime juice
2 teaspoons ginger, minced
2 teaspoons curry paste
6 (6-ounce) salmon fillets
Oil, for frying
8 ounces dried rice noodles (mai fun or rice sticks)
1/2 cup thinly sliced shallots
Flour, for coating
2 cups halved snap peas
1/4 cup thinly sliced scallions
5 cups baby greens
Salt and pepper

Steps:

  • Prepare candied garlic by combining garlic, water, wine, sugar, and butter in a small saucepan and simmer for 10 minutes or until syrupy, but the garlic should not be mushy. Remove garlic to cool. Reserve syrup for the dressing.
  • Marinate the salmon: Combine the fish sauce, lime juice, 1 clove of pressed garlic, ginger, and curry paste and mix well. Remove 1/4 cup of the mixture and set aside. Place the remaining mixture in a shallow bowl and add the salmon. Marinate in the refrigerator for about 30 minutes.
  • To the reserved marinade, add the reserved syrup from the candied dressing and the remaining clove of pressed garlic and whisk well. Set aside.
  • Preheat the grill.
  • Heat 2-inches of oil in a large, deep pot to 350 degrees F. Fry rice noodles according to the package directions, a few at a time, draining on paper towels. (They'll look like Styrofoam.) Set aside. Keep oil hot for the next step.
  • Coat the thinly sliced shallots with flour, shaking off any excess and fry until golden and crisp. Drain on paper towel and set aside.
  • Mix the snap peas, scallions and greens in a bowl.
  • Remove the salmon from the marinade and grill about 5 minutes per side, or to desired degree of doneness.
  • Putting it together: Toss greens with dressing and divide among 6 plates. Top each serving with crispy noodles, then top with a serving of salmon. Top each salmon with fried shallots and candied garlic. Season with salt and pepper, to taste.

5 teaspoons balsamic vinegar
1/2 teaspoon sugar
2 tablespoons olive oil
3/4 lb green beans
1 shallot, sliced
2 garlic cloves, smashed
salt, pepper
1/4 cup water, more if needed
1 tablespoon butter, cut in 4 pieces
1/4 cup toasted sliced almonds

Steps:

  • Add 1 tbsp balsamic vinegar to sugar, mix and set aside.
  • Heat a skillet on high heat, add oil.
  • Add garlic, shallots and green beans, salt and pepper; stir fry for a few minutes until beans start to shrivel.
  • Reduce heat to low, add water and balsamic mixture and cover, cook for 5 minutes more.
  • Stir in remaining balsamic, add butter and almonds, swirling pan to blend.

2 1/2 lb fresh green beans, trimmed
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 cup balsamic vinegar

Steps:

  • Heat oven to 475°F. In large bowl, toss green beans with oil. Spread beans in ungreased 15x10x1-inch pan; sprinkle with salt and pepper.
  • Roast uncovered 15 to 18 minutes or until charred in appearance (do not stir).
  • Meanwhile, in 1-quart saucepan, cook vinegar over medium heat about 9 minutes or until syrupy and reduced to 3 tablespoons.
  • Toss hot beans with balsamic syrup. Serve immediately.

Coarse salt and ground pepper
1 tablespoon olive oil
1 small head radicchio (7 to 8 ounces), halved lengthwise, cored, and sliced crosswise 1 inch thick
1 shallot, thinly sliced into rings
1 or 2 tablespoon balsamic vinegar, preferably white

Steps:

  • In a large skillet, combine beans and 1/2 cup water; season with salt. Bring to a boil over medium-high. Cook until water has evaporated, about 5 minutes.
