Robin's Beans image

We call them Robin's after our cousin that introduced us to these easy to make and remarkable tasting beans. (I have used generic with good results and they are very good without any seasonings added)

1 (15 ounce) can ranch style beans
1 (15 ounce) can pork & beans
1 (10 ounce) can Rotel tomatoes & chilies (Diced)
1/4 teaspoon chili powder
1/4 teaspoon cayenne
1/4 teaspoon black pepper

Steps:

  • Empty all cans into a 2 quart saucepan.
  • Stir in seasoning.
  • Heat on medium for 10 minutes.
  • Stir often.

ADOBO RICE AND BLACK BEANS

Number Of Ingredients 4

1 1/2 cups water
1 cup instant brown rice
1 (15-ounce) can black beans, rinsed and drained
1 teaspoon adobo seasoning with cumin

Steps:

  • Bring the water to a boil in a medium saucepan. Add rice, black beans and adobo seasoning and bring to a simmer. Reduce heat to low, cover and simmer 10 minutes. Remove from heat and let stand 5 minutes. Fluff with a fork.

Beans with pure Latin flavor. Accented with potatoes, pumpkin, ham, garlic, and cilantro, this side dish could steal the show!

1 small onion, chopped
1 small green bell pepper, chopped
2 cloves garlic, chopped
1 tablespoon fresh cilantro leaves
1 teaspoon annatto or achiote powder
1 tablespoon olive oil
½ cup diced ham
1 (16.5 ounce) can red beans, drained
1 cup peeled and diced potatoes
½ cup peeled and diced pumpkin
1 cup water
1 teaspoon salt

Steps:

  • In a blender or food processor, puree onion, bell pepper, garlic, cilantro, and annatto powder. Set mixture aside.
  • Heat a large, heavy saucepan over medium heat. Pour in olive oil and saute ham with pureed mixture for 10 minutes, until browned. Mix in beans, potatoes, pumpkin, water, and salt. Reduce heat to low and simmer, stirring occasionally, for approximately 25 minutes, until mixture thickens and potatoes and pumpkin are tender.
