"My husband is a big meat eater, so when he's out of town, I try to cut back on meat and make this hearty chili," relates Eve Visser of South Bend, Indiana. "It's very quick and easy."

1 can (16 ounces) hot chili beans, undrained
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) Mexican stewed tomatoes
1 cup frozen corn, thawed
1/2 cup chunky salsa
1/2 cup coarsely chopped green pepper
1/2 cup coarsely chopped sweet red pepper
1 tablespoon ground cumin
2 teaspoons chili powder
4 tablespoons fat-free sour cream
4 tablespoons shredded reduced-fat cheddar cheese

Steps:

  • In a large saucepan, combine the first nine ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are crisp-tender. Top each serving with sour cream and cheese.

1/4 cup oil
1 lb firm tofu, drained and in 1/4-inch pieces
1 large onion, chopped
3 cloves garlic, minced
1 (1 lb) can kidney bean, drained
1 (1 lb) can corn, drained
1 (4 ounce) can mushrooms, drained
2 teaspoons chili powder
1 teaspoon cumin powder
1 1/2 teaspoons salt
black pepper
hot pepper
1 (15 ounce) can tomato sauce

Steps:

  • Brown tofu in oil.
  • This may take up to 20 minutes.
  • Remove tofu from pan and drain on paper towels.
  • Add onion to oil remaining in pan and saute 3 minutes.
  • Add garlic and saute 1 minute. Add remaining ingredients.
  • Bring to boil and then l ower to simmer.
  • Simmer for 10 minutes.
  • Serve topped with grated Cheddar cheese and corn chips on the side.
