ROB FEENIE'S GREEN PEA RISOTTO

A beautiful creamy dish, "the richness of the risotto is a wonderful balance for the smooth texture of salmon" Rob Feenie. I also serve this dish with chicken, pork chops, and sometimes add mushrooms, snow peas, baby carrots and just make a meal of it.

Number Of Ingredients 10

4 cups chicken stock (you may only need 3)
3 tablespoons olive oil
4 large shallots, peeled and finely chopped
2 cups arborio rice
2 cups dry white wine
2 -4 tablespoons parmesan cheese, freshly grated (I have used Asiago or Gruyere in a pinch)
3 tablespoons butter, unsalted if you have it
4 tablespoons mascarpone cheese
1 cup peas, blanched (Use fresh, frozen, or snow peas.)
1/3 cup parsley or 1/3 cup chives

Steps:

  • Place stock in a large pot on medium heat and bring to a gentle simmer. Keep hot.
  • In another pot, heat olive oil on medium heat. Saute shallots until translucent (do not brown).
  • Add rice and cook for 3 - 4 minutes, stirring until grains are coated with oil.
  • Add wine, stir gently and cook until liquid is absorbed.
  • Add 1/2 cup of hot stock at a time, bring to a simmer and stir gently; wait until each addition is nearly all absorbed before adding more. Do not stir too often or too hard, as you risk breaking the grains.
  • Continue this process until the risotto has cooked approximately 15 minutes. (The ristto should be al dente (firm, but tender), moist, almost creamy.
  • Gently stir in Parmesan, butter, and mascarpone.
  • Fold in peas and parsley.
  • Season to taste with salt and freshly ground white pepper, serve on warm plates.

1 1/2 cups frozen baby peas
1 lb shrimp (frozen raw , peeled)
1 lemon, juiced (optional)
3 pints canned chicken stock
1 tablespoon olive oil
2 medium onions, finely chopped
2 cloves garlic, finely chopped
1/2 head celery, finely chopped
2 cups arborio rice
salt and pepper
1/2 cup butter
1/2 cup grated parmesan cheese

Steps:

  • Heat stock.
  • In a separate fry pan heat the olive oil.
  • Add onion, garlic and celery and slowly fry for about 3 minutes.
  • Add rice to veggies Season with s& p and turn up the heat.
  • As the rice begins to fry, stir it.
  • After a minute it will look slightly translucent Add your first ladle of hot stock and a 1/8 tsp.
  • salt.
  • Turn down the heat to a simmer.
  • Keep adding ladles of stock for 15 minutes, stirring and allowing liquid to be absorbed before adding the next.
  • Add stock until the rice is soft but firm Remove from the heat.
  • Add butter and Parmesan Stir gently.
  • Place lid on pan and allow to sit for 2 to 3 minutes.
  • Add shrimp and peas and simmer for 1 minute.
  • S& P to taste Serve with a bit of olive oil drizzled over the top.

10 g dried mushrooms
1 onion
2 tablespoons oil
25 g butter
1 garlic clove
350 g rice
125 ml white wine
1 1/3 liters vegetable stock
250 g mushrooms
200 g peas
2 tablespoons parsley

Steps:

  • Put the dried mushrooms in a bowl and pour over 100ml hot water. Leave to soak for 30 minutes. Drain, reserving the liquid, and chop.
  • Cook the onion in 1 tbsp oil and half the butter, until soft. Add the garlic and cook for another minute, then add the soaked mushrooms and cook for 2 minutes, stirring.
  • Add the rice and stir over a low heat for 1 minute, then add the white wine, if using, and simmer until it has almost evaporated.
  • Add the reserved mushroom liquid and the hot stock, a ladleful at a time and stir. Make sure the hot stock has been almost absorbed before you add the next ladleful. Stir frequently and continue cooking for 12 minutes.
  • While the risotto is cooking, heat the rest of the oil and butter in a frying pan and cook the sliced fresh mushrooms until they shrink. Add to the risotto with the pan juices and the peas and continue cooking, adding the stock, a ladleful at a time, until the rice is tender and creamy.
  • Stir in half the chopped parsley. Serve the rest sprinkled on top.

BAKED RISOTTO WITH GREENS AND PEAS



Baked Risotto With Greens and Peas image

This easy baked risotto eliminates the constant stirring required in traditional risotto recipes. It's laden with vegetables, namely kale and spinach, but other leafy greens like Swiss chard or collard greens would work equally well. If you happen to have some extra asparagus, sub it in for the peas. This risotto makes a great starter or side dish, but you can also turn it into a vegetarian main course by using vegetable or mushroom stock in place of the chicken broth, and topping it with sautéed mushrooms, a fried egg or crispy tofu slices. Leftovers can be refrigerated for two days and reheated with more broth, or repurposed into crunchy rice cakes or arancini. Simply form into patties or balls, coat in bread crumbs and shallow-fry until golden and crunchy.

2 tablespoons extra-virgin olive oil
1/2 cup finely chopped yellow onion
1 small garlic clove, minced
1 cup Arborio rice (about 7 ounces)
Kosher salt and black pepper
4 ounces green or lacinato kale (about ⅓ bunch), stems separated and thinly sliced, leaves stacked and cut into 1/4-inch-thick ribbons (about 4 packed cups)
3 1/2 cups low-sodium chicken broth
4 ounces baby spinach (about 4 packed cups)
1 cup frozen peas, thawed
3/4 cup grated Parmesan (3 ounces), plus more for garnish
3 tablespoons unsalted butter
1 tablespoon lemon juice

Steps:

  • Heat oven to 375 degrees. In a large Dutch oven, heat oil over medium. Add onion and cook, stirring occasionally, until softened, about 3 minutes. Add garlic and stir until fragrant, 1 minute. Add rice, season with salt and pepper, and stir until coated in oil and lightly toasted, 2 minutes.
  • Add kale, season with salt and pepper, and stir until wilted, 30 seconds. Add broth and bring to a boil over high heat.
  • Cover and bake until almost all of the liquid is absorbed and rice is tender, about 20 minutes.
  • Stir in spinach and peas until spinach is wilted. Add Parmesan, butter and lemon juice, and stir until well blended and saucy. (Liquid will continue to absorb as risotto sits.) Season with salt and pepper. Serve in bowls and top with more Parmesan.

LEEK, BACON, AND PEA RISOTTO

I learned how to make risotto at a cooking class in Italy, the day before my wedding. Risotto takes practice and patience, but even if the consistency isn't perfect, this recipe is delicious regardless.

1 leek, white and light-green parts only
6 cups low sodium chicken broth
2 slices bacon, cut crosswise into strips
1 1/4 cups arborio rice
1/2 cup dry white wine
1/2 cup frozen peas (optional)
1/4 cup parmesan cheese, finely grated, plus more for serving
1 tablespoon fresh lemon juice
coarse salt
ground pepper

Steps:

  • In a saucepan, bring broth to a simmer over medium.
  • Halve leeks lengthwise; rinse thoroughly. Pat dry; thinly slice.
  • Meanwhile, in a large, straight-sided skillet or Dutch oven, cook bacon over medium, stirring, until lightly browned but not crisp, 5 minutes. Add leeks; cook, stirring, until softened, 2 minutes. Increase heat to medium-high. Add rice and cook, stirring, until translucent around edges, 1 minute.
  • Add wine and stir until evaporated, about 2 minutes. Add 1 cup broth. Reduce heat to medium-low and cook, stirring, until broth is absorbed, about 2 minutes.
  • Repeat process, gradually adding broth, until rice is al dente and risotto is creamy (you may not need all the broth), about 35 minutes.
  • Stir in peas (if using) after the final addition of broth.
  • Remove skillet from heat and stir in Parmesan.
  • Cover and let stand 2 minutes.
  • Season risotto with lemon juice, salt, and pepper.
