Pancakes
1 lb. baking potatoes
1 large egg
1/4 c. matzo meal
1/4 c. grated onion
salt
vegetable oil
Scallops and Caviar Sauce
1 1/2 c. Champagne
9 black peppercorns
3 thyme sprigs
1 bay leaf
1 large shallot
1 tsp. fresh lemon juice
1 1/2 tbsp. Crème fraîche
1 1/2 stick cold unsalted butter
1 oz. caviar
salt
vegetable oil
20 medium sea scallops
2 tbsp. minced chives

Steps:

  • Make the pancakes: Coarsely shred the potatoes and squeeze out any excess liquid. Transfer to a large bowl and stir in the egg, matzo meal, onion, and a large pinch of salt. Shape the mixture into 20 scallop-size cakes, about 1/2 inch thick; press the cakes to compress them.
  • In a large skillet, heat 1/4 inch of vegetable oil until shimmering. Working in batches, fry the pancakes over moderately high heat until browned and crisp, about 3 minutes per side. Lower the heat if the pancakes brown too quickly and add more oil if necessary. Transfer the pancakes to a baking sheet and sprinkle with salt.
  • Prepare the scallops and caviar sauce: Preheat the oven to 325 degrees F. In a small saucepan, combine the Champagne with the peppercorns, thyme sprigs, bay leaf, shallot, and lemon juice and boil over high heat until reduced to 1 tablespoon, about 15 minutes. Strain the sauce into another small saucepan. Stir in the crème fraîche and bring to a simmer over moderate heat. Remove from the heat and stir in the softened butter, 1 tablespoon at a time. Stir in the caviar and season lightly with salt. Cover the sauce and keep it warm.
  • Wipe out the skillet and heat 1/4 inch of oil in it until shimmering. Season the scallops with salt and add half of them to the skillet. Cook over high heat until richly browned, about 1 1/2 minutes per side. Transfer to a plate and keep warm while you cook the remaining scallops.
  • Rewarm the potato pancakes in the oven. Arrange the pancakes on a platter and set a scallop on each one. Add the chives to the caviar butter sauce and spoon over the scallops. Serve right away.

2 pounds new red potatoes (or a mixture of red and purple)
2 tablespoons extra-virgin olive oil
2 tablespoons fresh chives, finely chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup sour cream
1 teaspoon prepared horseradish
1 (2-ounce) jar caviar

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Wash and dry the potatoes. Slice them into 1/2-inch rounds and put them into a bowl. Drizzle in the olive oil; add 1 tablespoon chives, salt, and pepper, and toss to coat well. Arrange the potatoes separately on the baking sheet. Roast until the potatoes are cooked through, about 35 to 40 minutes. Remove from the oven and set aside to cool.
  • In a small bowl, mix the sour cream and horseradish.
  • To assemble, top the roasted potatoes with a dollop of the sour cream mixture and a sprinkling of chives. Add a small amount of caviar with a plastic spoon. Serve at room temperature.

1/2 teaspoon baking powder
1 teaspoon kosher salt
2 large eggs
6 tablespoons milk
4 tablespoons finely chopped chives
2 tablespoons extra-virgin olive oil, plus more for frying
2 cups Gorgonzola dolce
1 cup mascarpone
10 slices bacon, cooked until crispy
4 tablespoons chopped chives

Steps:

  • For the pancakes: In a bowl, combine the flour, baking powder, and salt. Make a well in the center of the flour and add the eggs, milk, chives, and the olive oil. Gradually combine the flour into the wet ingredients and stir until smooth.
  • Coat a large saute pan with olive oil and put over medium-high heat. When the pan is hot, drop the batter by teaspoonfuls into the pan. Cook until bubbles form on the top of the pancake, about 1 minute. Flip and cook on the other side. Remove the pancakes to a large plate and cool. Continue making pancakes until all the batter is used.
  • In a medium bowl, combine the Gorgonzola and mascarpone and put it into a pastry bag. Pipe the Gorgonzola mixture onto the pancakes. Top with shards of the crispy bacon and chives. Arrange on serving platters and serve. Coolio!

Red Pepper Pancakes with Smoked Salmon, Caviar and Chive Cream Sauce image

3 red bell peppers
3 ounces butter, plus additional for greasing
3 eggs, separated
1 1/2 cups all-purpose flour
1 teaspoon baking powder
4 slices smoked salmon
3 ounces creme fraiche
2 ounces American caviar
3 tablespoons minced fresh chives

Steps:

  • Char the peppers over a flame; place in a bowl and cover to steam until cooled. Peel and seed, reserving the juice.
  • Melt the butter in a saucepot and cool. Puree three-quarters of the bell peppers in a blender, then dice and reserve the remainder.
  • Whisk to combine the butter, egg yolks, and bell pepper puree. Mix together the flour and baking powder in a separate bowl. Whisk the dry ingredients into the wet ingredients until smooth, then chill 10 minutes. Whip egg whites until they hold stiff peaks and fold them into the red pepper batter.
  • Form the smoked salmon into rosettes.
  • Spoon 1/4 cup pancake batter onto a greased pancake skillet over medium heat. Cook until bubbles start to appear, about 3 minutes, then flip and cook until the bottom is slightly golden, about 3 minutes more.
  • Top each pancake with 1 tablespoon of the sauce and a smoked salmon rosette. Dollop a dot of creme fraiche in the center of each rosette. Top with caviar and chives.

2 cups flour
1 teaspoon salt
1 cup water
1/2 tablespoon sesame oil
1/2 cup thinly sliced scallion
1/2 cup sliced chives
3 tablespoons unsalted butter, room temperature
vegetable oil, for frying
1/4 cup low sodium soy sauce
1 tablespoon rice wine vinegar
2 teaspoons sugar
1 teaspoon sesame oil
1 teaspoon garlic powder
1/4 teaspoon ground ginger

Steps:

  • Whisk together the dipping sauce, making sure the sugar dissolves, and set aside.
  • Whisk together the flour and salt in a large bowl.
  • Bring 1 cup of water to a boil in a small saucepan.
  • Measure out 3/4 cup of water and pour over the flour mixture.
  • Mix together with a fork. Add the sesame oil and mix. The dough will be shaggy.
  • Add 2 more tablespoons of the remaining hot water. And mix with a wooden spoon until the shabby dough comes together.
  • Shape into a mound in the bowl, then transfer to a floured surface. Knead for 7-10 minutes, incorporating more flour as needed, until the dough becomes smooth.
  • Shape the dough into a ball, wrap in plastic wrap, and cover with a towel. Let rest for 1 hour at room temperature.
  • Meanwhile, combine the scallion and chives in a bowl and set aside.
  • Flour a surface and shape the dough into a thick log. Cut into 6 portions.
  • Work with one portion of dough at a time, keeping the others covered with a damp towel.
  • Flatten the dough portion by hand. Use a rolling pin to roll into a very thin rectangle, about 12 x 8 inches, with the long side facing you.
  • Brush all over with a thin layer of softened butter. Sprinkle evenly with 1/4 teaspoon of salt and about 2 tablespoons of the scallion-chive mixture.
  • Tightly roll the dough away from you so you're left with a log. Gently roll the log back and forth on the surface with your hands so that the log has an even thickness throughout.
  • Starting at one end, roll the dough into a tight coil, tucking the end piece underneath. This should resemble a cinnamon bun. Then flatten slightly with the palm of your hand. Place on a parchment-lined baking sheet and cover with a damp towel.
  • Repeat with remaining portions of dough, then let rest at room temperature under the damp towel for 15 minutes.
  • Cut 4 small squares of parchment paper and flour a work surface.
  • Place a bun onto the floured surface and roll into a 6-1/2 inch round. Place back onto the parchment-lined baking sheet and top with a small square of parchment paper. Cover with the damp towel.
  • Continue rolling out the remaining dough portions, stacking with parchment squares between dough rounds.
  • Heat about 1/2 tablespoon of vegetable oil in a nonstick skillet over medium low heat. Cook for 2-3 minutes per side until golden brown.
  • Transfer to wire rack set inside a baking sheet. Repeat with remaining pancakes.
  • Cut each pancake into 4 wedges and serve with the dipping sauce.

1/8 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter, divided use
1 garlic clove, minced
10 ounces Baby Spinach
1 1/2 tablespoons lemon juice
2 tablespoons lemon zest
2 tablespoons chopped chives

Steps:

  • Season scallops with salt and pepper.
  • Melt 1 Tbs butter in non-stick skillet over medium-high heat.
  • Add garlic and cook until fragrant, about 30 seconds.
  • Add spinach and stir until wilted.
  • Transfer spinach to platter and cover to keep warm.
  • Wipe out skillet and return to heat. Add remaining butter. When butter is melted, and just begins to sizzle, add half the scallops and cook until browned, about 2 minutes. Transfer to platter.
  • Repeat with remaining scallops.
  • Carefully add lemon juice to pan, scraping up any brown bits from bottom of pan.
  • Remove from heat, stir in chives and zest.
  • Pour over scallops and spinach and serve.

5 cloves garlic, minced
2 shallots, chopped

¼ cup chopped parsley
1 lemon wedges for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place scallops, melted butter, garlic, and shallots in a bowl. Season with nutmeg, salt, and pepper. Stir gently to combine. Transfer to a casserole dish.
  • In a separate bowl, combine bread crumbs and olive oil. Sprinkle on top of scallops.
