ROASTED RUTABAGA

Roasted Rutabaga image

This is a new recipe I discovered this past Thanksgiving. We wanted to try a a new vegetable. I have to admit rutabaga, or yellow turnip as it is sometimes called, was something I wasn't totally wild about trying, but it turned out great. I love it now! Definitely a repeat!

1 rutabaga, peeled and cut into 1/2-inch cubes
2 tablespoons olive oil, or more to taste
2 teaspoons kosher salt
1 teaspoon white sugar

Provided by Melissa Clark

Categories     salads and dressings

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 12

1 1/2 pounds rutabaga, peeled and cut into 3/4-inch pieces
5 tablespoons extra virgin olive oil, more for drizzling
1 tablespoon maple syrup
3/4 teaspoon kosher salt, more to taste
Freshly ground black pepper to taste
1 1/2 cups farro
2 tablespoons finely chopped shallot
2 teaspoons red wine vinegar, more for drizzling
1 fat garlic clove, minced
1/2 cup crumbled ricotta salata or feta cheese
1/2 cup toasted, chopped hazelnuts
2 bunches watercress or arugula, cleaned and trimmed

Steps:

  • Preheat oven to 400 degrees. Toss rutabaga with 2 tablespoons oil, the maple syrup, 1/2 teaspoon salt and black pepper to taste. Spread out on a baking sheet and roast, stirring once or twice, until rutabaga is very tender and browned, 30 to 40 minutes.
  • Meanwhile, bring a large pot of salted water to a boil and add farro. Cook until tender, checking often. This can take from 20 minutes to an hour, depending upon type of farro used. Add more water if necessary.
  • In a large bowl, whisk together the shallot, vinegar, garlic and 1/4 teaspoon salt. Whisk in 3 tablespoons olive oil and some pepper.
  • Drain farro well and add to bowl along with rutabaga, tossing everything well. Let cool slightly (it can still be warm but not hot), then mix in the cheese and hazelnuts. Taste and add more salt, pepper and olive oil if necessary.
  • In another bowl, drizzle watercress or arugula with a little oil and vinegar and toss well. Serve farro on a bed of watercress.

MAPLE-ROASTED BRUSSELS SPROUTS AND RUTABAGA WITH HAZELNUTS

Maple-Roasted Brussels Sprouts and Rutabaga with Hazelnuts image

The skin of rutabaga is thick and tough, so you'll want to use a sharp, hefty chef's knife to remove it entirely and later to cut the flesh. The maple glaze tends to caramelize quickly, so be sure to keep an eye on the vegetables during the final stage of roasting.

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Time 1h5m

Number Of Ingredients 7

1/2 cup pure maple syrup
2 1/2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
Coarse salt and freshly ground black pepper
2 pounds rutabaga, skin removed and cut into 1 1/2-inch pieces (5 cups)
3/4 pound brussels sprouts, trimmed and halved lengthwise
1 ounce toasted hazelnuts, chopped (1/3 cup)

Steps:

  • Preheat oven to 400 degrees. Whisk together maple syrup, oil, lemon juice, and 1/4 teaspoon salt in a large bowl. Add rutabaga, and toss.
  • Transfer rutabaga and all but 2 tablespoons glaze to a rimmed baking sheet (leave remaining glaze in bowl). Spread rutabaga in a single layer, sprinkle with 1/4 teaspoon salt, and roast for 35 minutes, tossing halfway through and making sure rutabaga is spread toward the edges of pan.
  • Raise oven temperature to 450 degrees. Toss brussels sprouts with remaining glaze in bowl and 1/4 teaspoon salt. Remove sheet from oven, and add sprouts. Toss, and spread in a single layer. Roast vegetables, tossing every 5 minutes, until glaze is very thick and vegetables are deep golden brown, about 20 minutes. Season with pepper and sprinkle with hazelnuts.

ROASTED ROOT VEGETABLES

Roasted Root Vegetables image

Maple syrup and warm, fall spices add a touch of sweetness to easy roasted beets, carrots, parsnips, turnips, and sweet potatoes.

Provided by Nava Atlas

Categories     HarperCollins     Side     Vegetable     Vegetarian     Vegan     Wheat/Gluten-Free     Maple Syrup     Cinnamon     Rosemary

Yield Serves 4-6

Number Of Ingredients 10

1 large sweet potato, peeled, cut in half lengthwise, and sliced
2 medium beets (red or golden), peeled and cut into bite-size chunks (see Note)
3 to 4 medium carrots, peeled and cut into 1/2-inch-thick slices, or about 1 cup baby carrots
2 to 3 medium parsnips, peeled and cut into 1/2-inch-thick slices
1 large or 2 medium turnips, peeled and cut into large chunks
1 tablespoon extra-virgin olive oil
2 tablespoons maple syrup, blackstrap molasses, or agave nectar
Pinch each of ground cinnamon and nutmeg
Fresh rosemary leaves to taste (optional)
Salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 425°F.
  • Combine all the vegetables in a large mixing bowl.
  • Drizzle in the oil and maple syrup, then sprinkle in the cinnamon and nutmeg. Stir together.
  • Transfer the mixture to a lightly oiled large roasting pan (lined with parchment if you like). Bake for 30 minutes, more or less, stirring every 10 minutes or so. The vegetables should be tender on the inside and touched with golden brown on the outside.
  • Toward the end of the cooking time, sprinkle on some fresh rosemary leaves, if desired. Season with salt and pepper; then transfer to a covered serving container. Serve immediately or keep warm until mealtime.
  • Variations:
  • Though they break the root veggie theme, brussels sprouts and/or thinly sliced red onions are terrific additions, lending a nice contrasting flavor and color.
  • Stir in ribbons of collards or lacinato kale about 10 minutes before the vegetables are done.
  • Experiment with other root veggies, including ordinary white or yellow potatoes, Jerusalem artichokes, Chioggia beets, rutabagas, and daiko.
