Slow Roasted Root Vegetables With Lemon Mustard Glaze image

Serve as main or side dish. Use a clay pot for the best taste and use low temp and roast as long as possible to bring out the flavor. Serve over rice or noodles for main meal [4 servings] or serve alone [8 servings] for side.

8 cups vegetables, see note
2 tablespoons olive oil, see note
1 teaspoon salt
1 teaspoon rosemary, crushed
1/2 teaspoon cracked black pepper
2 -3 tablespoons balsamic vinegar
1/2 cup dry mustard
1/2 cup white wine vinegar
1/2 cup cider vinegar
1/3 cup honey or 1/3 cup agave syrup
1 teaspoon sea salt
6 large egg yolks
1 tablespoon grated lemon zest
1 tablespoon lemon juice

Steps:

  • Vegetables use in any desired amounts: carrots, onions, celery, garlic, turnips, white potatoes, sweet potatoes, beets, fennel and parsnips. quarter the onions so they stay together. garlic should be peeled whole cloves.
  • Not using clay pot:.
  • Preheat oven to 300°F lightly spray a deep lasgne or roasting pan then place vegetables in pan and drizzle with oil and toss to coat.
  • Cover pot and bake 3 hours or until vegetables are tender. Cover roasting pan with foil if using. Raise oven temp to 350F and sprinkle with balsamic vinegar. Roast for 20 minutes.
  • Toss with 2 to 3 tbsp sunshine lemon mustard and place under broiler for several minutes. Check for vegetables to brown slightly and become crisp at edges. WATCH CAREFULLY ON THIS STEP.
  • For Clay pot:.
  • Preheat oven to 450°F Soak clay pot for at least 15 minutes. Vegetables should be in 2 inch chunks.
  • If using clay pot omit oil and leave vegetables damp. Then sprinkle with the salt, rosemary and pepper. toss to coat.
  • Cook for 45 minutes or until vegetables are tender. You can lower the heat and increase the time also. Do not raise temperature Remove from clay pot and place in other container for broiling step.
  • Lemon mustard:.
  • In med bowl combine mustard, vinegar, honey and salt. Let sit for 2 hours.
  • Whisk in yolks, zest and juice. Place in double boiler and cook over simmering water, stir constantly until mustard thickens.
  • Transfer to glass container. Let cool cap and refrigerate. IT IS NOT SUITED FOR HOT WATER BATH CANNING. Use within 6 weeks.

The root vegetables are wonderful this way. The mustard oil packs a real whollop. Mustard oil is very strong smelling and extremely hot. "USE SPARINGLY". Once opened, the oil may be refrigerated for up to 6 months.

2 -3 tablespoons olive oil
1 tablespoon mustard oil (optional)
6 sprigs thyme, chopped
1/4 teaspoon paprika
1/4 teaspoon cayenne
1/2 teaspoon sea salt
1/4 teaspoon black pepper, fresh ground
2 carrots, sliced 1-inch lengths
4 parsnips, sliced 1-inch lengths
4 medium potatoes, 1-inch cubes, yukon gold
1 large sweet potato, 1-inch cubes
1 large sweet onion, 1/2-inch wedges

Steps:

  • Preheat oven to 375°F.
  • Combine mustard, olive oil, mustard oil, thyme, paprika, cayenne pepper, sea salt and freshly ground black pepper together in large bowl.
  • Whisk and add carrots, parsnips, potatoes, sweet potato and onions to bowl.
  • Let stand 10 minutes and spread in one layer in large baking dish.
  • Roast in 375°F oven for 45- 50 minutes, gently turn vegetables every 15 minutes.
  • Try not to break vegetables when turning.

8 medium parsnips, peeled or scrubbed
8 medium carrots, peeled or scrubbed
4 medium red onions, peeled and quartered
2 heads garlic, halved
1/2 cup plus 4 tablespoons olive oil
8 sprigs fresh thyme
4 sprigs fresh rosemary
Salt and freshly ground black pepper to taste
40 cherry tomatoes, halved
4 tablespoons lemon juice
4 tablespoons capers, roughly chopped
1 tablespoon maple syrup
1 teaspoon Dijon mustard

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Peel parsnips and carrots; depending on size, cut lengthwise in half or quarters, about 4 inches long.
  • 3. In a large bowl, toss parsnips, carrots, onions, and garlic with 1/2 cup olive oil, thyme, rosemary, salt, and pepper.
  • 4. Spread vegetables on one large sheet pan or two smaller pans, and place in oven. Roast for about an hour, turning vegetables once or twice, to get a nice crust on both sides.
  • 5. Meanwhile, heat large skillet, and film with 2 tablespoons olive oil. Add tomatoes, cut side down, and caramelize (no more than 10 minutes). Sauté in two batches. Remove to bowl, and set aside.
  • 6. While the vegetables are cooking, whisk together remaining 2 tablespoons olive oil, lemon juice, capers, maple syrup, and mustard.
  • 7. Place warm roasted root vegetables on serving platter, and pour dressing over the vegetables. Top with caramelized tomatoes.

1/2 cup apple cider vinegar
2 tablespoons yellow mustard seeds
4-5 pounds mixed root vegetables (such as parsnips, kohlrabi, celery root, turnips, and rutabagas), peeled, cut into 1" cubes
1/2 pound thick-cut applewood-smoked bacon, diced
1 large white onion, diced
1 tablespoon (packed) dark brown sugar
Kosher salt, freshly ground pepper
2 tablespoons chopped flat-leaf parsley

Steps:

  • Bring vinegar, mustard seeds, and 1/4 cup water to a simmer in a small pot; cook until seeds are plump, 20-25 minutes. Drain; set aside seeds and cooking liquid separately.
  • Place a steamer basket inside a large pot. Add water to a depth of 1". Bring to a boil. Add root vegetables to steamer basket. Cover and cook, adding water by 1/2-cupfuls if needed to maintain level of water in pot, until vegetables are very tender but not mushy, about 45 minutes.
  • Meanwhile, place bacon in a large skillet; set over medium-low heat and cook until bacon softens and fat begins to render, about 4 minutes. Add onion; increase heat to medium-high and cook, stirring occasionally, until onion and bacon are browned and crisp, about 10 minutes.
  • Add reserved mustard seeds to bacon mixture and cook until seeds begin to pop, about 1 minute. Turn off heat and stir in brown sugar and reserved mustard seed cooking liquid. Season vinaigrette to taste with salt and pepper.
  • Drain vegetables and return to pot. Using a fork or potato masher, coarsely mash. Stir in vinaigrette; season to taste with salt and pepper. Transfer to a 13x9x2" baking dish; cover with foil. DO AHEAD: Vegetable mash can be made 1 day ahead. Chill.
  • Rewarm vegetable mash, covered, in a 350°F oven until just warmed through, 45-55 minutes. Alternatively, place in a microwave-safe bowl and microwave until warmed through (time will vary).
  • Stir parsley into mash. Transfer to a bowl; serve warm or at room temperature.

2 turnips, peeled and cut into cubes (small to medium)
2 medium carrots, scrubbed and cut into 1 inch pieces
1 -2 cup hard winter squash, cubed (pumpkin, butternut, etc.)
1/2 large red onion, peeled and cut into wedges
1 head garlic, separated and peeled
2 chicken sausage, cut into 1 inch slices
2 tablespoons olive oil
2 tablespoons coarse grain mustard
1 tablespoon honey
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 400 degrees.
  • Cut vegetables and place in a 13 x 9 inch baking dish that has been sprayed with non-stick cooking spray. Toss in the garlic and sausages.
  • In a small dish combine the oil, mustard and honey. Pour over vegetables and toss to thoroughly coat. Sprinkle with salt and fresh ground pepper. Place in the preheated oven and cook for 30 to 40 minutes or until vegetables stick fork tender. Stir at 15 minutes and then again at 30.
  • Serve with corn muffins or cornbread for a delicious meal.
