PUMPKIN PASTA WITH WINTER HERBS AND PARMESAN CHEESE



Pumpkin Pasta with Winter Herbs and Parmesan Cheese image

Number Of Ingredients 12

Kosher salt
1 pound fusilli pasta
1/2 cup extra-virgin olive oil
6 sprigs fresh sage
3 sprigs fresh rosemary
10 tablespoons (1 stick plus 2 tablespoons) unsalted butter
1 tablespoon freshly grated ginger
1 to 2 cloves garlic, sliced
One 15-ounce can pure pumpkin puree
2 teaspoons dark brown sugar
3/4 cup finely grated Parmesan
Freshly ground black pepper

Steps:

  • In a large pot, bring 6 quarts of water to a rolling boil. Add a generous amount of salt. The pasta water should taste like sea water. Add the pasta to the pot and stir so it doesn't stick to the bottom as it cooks. Cook the pasta according to package instructions, 8 to 10 minutes. Reserve some of the pasta cooking water. Drain the pasta in a colander and hold it there until the sauce is finished.
  • While the pasta is cooking, heat the oil in a large, high-sided skillet over medium heat until it shimmers. Add the sage sprigs and cook until crispy but not browned, about 1 minute. Transfer with a slotted spoon to a paper towel-lined plate and set aside. Fry the rosemary sprigs in the same hot oil until crispy but not browned, about 1 minute. Transfer to the same plate. Sprinkle the fried herbs with salt. Remove the leaves from the stems (discard the stems). Discard the oil or save for another use.
  • Return the skillet to medium heat and melt and cook 8 tablespoons (1 stick) of butter until it starts to turn light brown. Add the ginger and garlic and stir until fragrant, about 30 seconds. Add the pumpkin, sugar and some of the reserved pasta water. Stir in about 1/2 cup of Parmesan. Season with salt and pepper to taste. Stir in the remaining 2 tablespoons of butter. Add the cooked pasta to the skillet and warm gently, tossing to coat the pasta with the sauce. Stir in some of the fried sage and rosemary. Top with the remaining Parmesan and fried herbs.

This recipe for basic roasted pumpkin is so simple and very versatile. You can eat the sweet, fibrous flesh straight out of the shell with some olive oil, salt, and pepper, or you can get creative. Once you've roasted the pumpkin as directed below, consider making Pumpkin Wedges with Sage or Indian-Spiced Pumpkin.

Steps:

  • Preheat oven to 400 degrees.
  • Cut pumpkin in half; scrape out seeds.
  • Drizzle pumpkin with olive oil, and season with salt and pepper. (Omit pepper if using in sweet dishes.)
  • Place cut side down on a baking sheet. Roast until very soft, about 35 to 45 minutes.

For the pumpkin:
12 ounces pumpkin, butternut or other winter squash, peeled, seeded and cut into 1/2-inch cubes
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon chopped fresh thyme
1 garlic clove, finely minced
2 tablespoons extra-virgin olive oil
For the cheese crackers:
Vegetable oil or nonstick spray
8 tablespoons grated Parmesan cheese, or Argentino Reggianito
For the dressing:
1 cup (lightly packed) roughly chopped fresh basil leaves
1 garlic clove, peeled
1/4 cup grated Parmesan cheese or Argentino Reggianito
1/4 cup extra-virgin olive oil
2 tablespoons white balsamic vinegar or apple cider vinegar
For assembly:
3 cups watercress (large stems removed).

Steps:

  • For the pumpkin: Preheat the oven to 375 degrees. On a baking sheet, toss the pumpkin with salt, sugar, thyme, garlic, and olive oil. Roast until tender and lightly browned, 15 to 25 minutes. Remove from heat and set aside; do not turn off oven.
  • For the cheese crackers: While the pumpkin is roasting, prepare the cheese crackers. On a non-stick or lightly oiled cookie sheet, divide the grated Parmesan or Argentino Reggianito cheeses into four equal mounds placed about 3 inches apart. Bake until cheese has melted, turned lightly golden, and set into a cracker; watch carefully to prevent burning. Remove from oven, and using a spatula, gently loosen crackers from the cookie sheet, and set aside on a plate. Let the crackers cool and become crisp.
  • For the dressing: In a blender, combine basil, garlic, Parmesan or Argentino Reggianito, and olive oil. Process until smooth. Transfer to a small bowl, and add vinegar, mixing well. Set aside.
  • For assembly: In a large bowl, combine watercress and dressing, and toss until all the leaves are coated. Place equal portions on two or four plates. Top with roasted pumpkin, and garnish with cheese crackers.

500 g cherry tomatoes, halved
1 red capsicum
1 red onion
300 g shell pasta
1 cup snow peas, Halved
1 large carrot, Thinly sliced
1/2 cup chopped fresh coriander
2 tablespoons Italian dressing
2 tablespoons chili sauce
salt and pepper (to season)

Steps:

  • Place pumpkin pieces onto an oven tray.Drizzle lightly with olive oil and cook in oven 20 minutes.
  • Add tomatoes and capsicum and cook for a further 10 minutes.
  • Meanwhile cook pasta in boiling salted water until tender then drain.
  • Blanch snow peas and carrot. Add all vegetables and corriandeer to cooked pasta.
  • Add sauce, dressing and salt and peeper combine well and serve.
