JUICY BAKED PORK CHOPS
These baked pork chops are the best oven baked pork chops ever! They are so easy to make, super juicy, and flavorful. Rub them with a few pantry staple spices and pop them into the oven for about 18 minutes and dinner will be ready!

- Turn your oven to 400 degrees Fahrenheit.
- In a small bowl, mix together the paprika, onion powder, garlic powder, salt, pepper, and oregano.
- Drizzle the 1 tablespoon of olive oil over both sides of the pork chops. Sprinkle the spice mix evenly over both sides of the pork chops and place them in a baking dish. (see notes) Drizzle them with the remaining tablespoon of olive oil.
- Bake the pork chops uncovered for 18 minutes, or until they reach an internal temperature of 140 degrees Fahrenheit. Once you remove them from the oven, let them rest in the pan for 5 minutes before serving.

PORK CHOPS WITH APPLES, QUINCE AND SAGE
Pork chops with apples, quince and sage are such an autumn treasure. Rich and very tasty main dish.

Steps:
- Season the pork chops with salt and pepper. Sprinkle both pork chops with fennel seeds, drizzle with olive oil, pressing firmly into each side and place one sage leave on top of each pork chop.
- Heat a large skillet over medium high heat. Add a tablespoon of olive oil, remove the sage from the pork chops and place them into a heated skillet. Sear on all sides (except for the bone side) for 4 minutes (all together 12 minutes).
- While the pork chops are in the skillet, clean the apples and quince, remove the core and cut both apples and quince into quarters.
- When the pork chops are golden and cooked through, transfer them from the skillet to a large pan. Using a brush, lightly brush them with dijon mustard. Pour brandy into the same skillet (the alcohol will evaporate and the taste will be sweet and delicious) and honey. Scrape base of the pan with a wooden spoon to release caramelised residue, to give taste. Reduce the heat and add one sage leave, thyme, apples, quince and two cloves of garlic, peeled and crushed. Stir to combine then increase the heat and cook for about 5 minutes, stirring occasionally. Add apple cider vinegar, season with salt and pepper, then pour in 150 ml (2/3 cup) of water. Cover with a lid and cook for another 10 minutes.
- Prepare the crunchy topping. Slice the stale bread into small chunks, place in a small bowl and add two tablespoons of water. Place a skillet over high heat. Add a tablespoon of olive oil and stale bread. Stir to combine and cook for about 6 minutes, then remove from the heat. Transfer the bread to a small bowl and add the freshly grated horseradish. Set aside until serving.
- Remove the lid from the skillet and cook for another 5 minutes. Add in the pork chops, mustard side down. Don't forget about all the remaining pork juices on the plate, add them to the skillet, cover with a lid and cook for another 5 minutes, on low heat.
- Serve pork chops with apples, quince and sage. Top with crunchy topping and serve with potato puree or parsnip puree. Pour over the pan juices and serve. Enjoy.
SAUCY BROWN SUGAR BAKED PORK CHOPS

- Preheat your oven to 350 °F.
- Stir together the soy sauce, Worcestershire, garlic, ketchup and brown sugar . Adjust this mixture to taste, some people like more ketchup along with the brown sugar. Once you have adjusted it to taste, move on to the next step.
- Place the pork chops in the bottom of a baking pan, cast iron skillet or oven safe skillet of your choice. Pour the sauce over the pork chops.
- Bake in the oven for 25-30 minutes, or until the pork chops reach an internal temperature of 145 °F.
- Remove and serve. The sauce is excellent on rice!

- Preheat the oven to 375 degrees F (190 degrees C).
- Sprinkle chops on all sides with thyme, salt, and pepper. Place on a baking sheet.

PORK CHOPS WITH CARAMELIZED ONIONS AND SMOKED GOUDA

- Preheat oven to 350°F. Heat 3 tablespoons oil in heavy large skillet over high heat. Season pork with salt and pepper. Dredge in 1 cup flour; shake off excess. Working in batches, add pork to skillet and sauté until brown, about 3 minutes per side. Arrange pork in single layer in 15x10x2-inch glass baking dish. Sprinkle 1 teaspoon paprika over pork.
- Discard contents of skillet; wipe clean. Add 3 tablespoons oil; heat over medium-high heat. Add onions; sprinkle with sugar and sauté until well browned, stirring often, about 20 minutes. Add garlic; sauté 1 minute. Add 1 tablespoon paprika. Place onions over pork. Pour enough broth over so that chops are almost covered. Cover with foil. Bake until pork is tender, about 45 minutes. (Can be made 1 day ahead. Uncover; cool slightly. Cover; chill. Rewarm covered pork in 350°F. oven, about 20 minutes.)
- Reduce oven temperature to 200°F. Using tongs, transfer pork to large bowl, leaving onion mixture in baking dish. Pour contents of baking dish into strainer set over medium bowl. Return onion mixture to same baking dish, spreading evenly (reserve cooking liquid). Arrange pork atop onions; sprinkle cheese. Cover dish with foil; set in oven to keep warm.
- Melt butter in heavy large saucepan over medium heat. Add 5 tablespoons flour. Cook, until mixture just begins to color, whisking often (mixture will be dry and crumbly), about 4 minutes. Gradually whisk in reserved cooking liquid. Bring sauce to boil, whisking constantly. Boil until thickened, whisking often, about 5 minutes. Season with salt and pepper.
- Transfer pork and onions to plates. Spoon sauce around pork and serve.
CARAMELIZED PORK CHOPS
The caramelized coating on the pork is created by sprinkling it with sugar before pan-frying. The vinegar and ketchup give you a very quick sweet and sour finish. Add a splash of tabasco and worcestershire sauce to the pan with the ketchup if you wish to spice up the sauce. This dish also works well with chicken breasts or legs.

- Preheat the oven to 400°F Season the pork with salt and pepper then sprinkle on both sides with the sugar.
- Place a small roasting tin or ovenproof frying pan over a high heat. Add the oil and the pork to the pan and cook for about 5 minues, turning now and then until dark golden all over.
- Transfer the chops in the pan to the oven. Cook for 12-15 minutes.
- Remove the pan from the oven and place over a high heat once more. Remove the meat and add keep warm. Add the vinegar to the pan - this will boil and reduce very quickly.
- Add the tomato ketchup and water and stir.
- Pour the sauce over the chops and serve.

EASY CARAMELIZED ONION PORK CHOPS

- Rub chops with 2 teaspoons seasoning salt and 1 teaspoon pepper, or to taste.
- In a skillet, heat oil over medium heat. Brown pork chops on each side. Add the onions and water to the pan. Cover, reduce heat, and simmer for 20 minutes.
- Turn chops over, and add remaining salt and pepper. Cover, and cook until water evaporates and onions turn light to medium brown. Remove chops from pan, and serve with onions on top.
