This delicious recipe was provided compliments of world famous Chef Chai of Chai's Island Bistro, Dining Out with Chai & Singha Thai Restaurant.

8 ounces Opakapaka
1 ounce Flour
2 ounces Clarified butter
Salt and Pepper
1/4 cup grapefruit juice
1/8 cup Orange juice
1/8 cup Lemon juice
1/8 cup White wine
1 Shallot (diced)
6-8 pieces Whole black peppercorns
2 Bay leaves
1/4 cup Heavy Whipping Cream
1/4 pound Unsalted Butter
Salt and Pepper

Steps:

  • Season the opakapaka with salt and pepper, then cover evenly with flour.
  • Heat the clarified butter on medium heat in a saute pan.
  • Place the opakapaka in the pan with the skin side up and cook for 3 - 3 1/2 minutes. Turn fish over and cook for an additional 3 - 3 1/2 minutes.
  • Place the cooked opakapaka on a large plate and drizzle the tri-citrus butter sauce around the fish.
  • Garnish with fried basil and fruit sections.

ROASTED BUTTERNUT SQUASH AND GINGER SHEET PAN SOUP



Roasted Butternut Squash and Ginger Sheet Pan Soup image

One 16-ounce bag precut butternut squash
One 16-ounce bag baby carrots
3 garlic cloves, peeled
1 small yellow onion, quartered
2 tablespoons olive oil
1/4 teaspoon kosher salt, plus additional as needed
1/8 teaspoon ground black pepper, plus additional as needed
One 32-ounce box chicken broth
1 tablespoon prepared ground ginger paste

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed sheet pan with parchment paper.
  • Place the butternut squash, baby carrots, garlic and onion in a large mixing bowl. Add the oil, salt and pepper and toss to coat.
  • Transfer the squash mixture to the lined sheet pan and spread the mixture evenly across the pan. Bake until the onions are lightly browned, 40 to 45 minutes. Allow to cool slightly.
  • Place half of the cooked vegetables in a blender using tongs along with 2 cups chicken broth and half the ginger. Blitz until smooth and transfer to a large soup pot. Repeat with the remaining vegetables, broth and ginger.
  • To serve immediately, place the pot over medium heat. Warm the soup through and season with salt and pepper to taste.
  • To freeze, divide soup evenly among four 16-ounce mason jars. Leave at least 1 inch of space at the top of each jar to prevent cracking. Screw on lids and freeze. To serve, place jars in a saucepan filled with cold water over medium heat until warm. Or, place a frozen jar in your lunchbox and reheat in the microwave for an on-the-go lunch.

Butterflied Tea and Orange Brined Roasted Turkey with Asian Ginger Butter image

Rub this bourbon-citrus-brined bird with a soy-sesame butter.

5 oranges, plus slices for garnish (optional)
2 cups kosher salt
1 cup bourbon
1 cup sugar
12 plain tea bags
12 black peppercorns
6 whole cloves
4 bay leaves
One 14- to 16-pound turkey, not kosher or self-basting, butterflied
16 tablespoons (2 sticks) unsalted butter, at room temperature
1 1/2 tablespoons finely grated fresh ginger
1 tablespoon Asian sesame oil
1 tablespoon soy sauce
4 scallions, finely chopped, plus more for garnish (optional)
3 garlic cloves, finely grated

Steps:

  • The day before, remove the zest from the oranges in wide strips using a vegetable peeler, applying gentle pressure so that most of the white pith is left behind. Reserve the zest, juice the oranges into a medium saucepan. Add the zest, salt, bourbon, sugar, tea bags, peppercorns, bay leaves, cloves and 4 cups (1 quart) of water. Bring to a boil, then turn off the heat and let the mixture sit for 30 minutes. Pour the brine into a plastic container or pot large enough to hold the turkey, add 20 cups (5 quarts) ice water and stir to combine. Submerge the turkey, adding more ice water if needed. Weigh it down with a plate to keep it submerged and refrigerate at least 8 hours and up to 12 hours.
  • The next day, drain, rinse and pat the turkey dry. Put on a large paper-towel-lined cutting board and let sit out at room temperature until it reaches room temperature, about 1 hour.
  • Mix the butter, ginger, sesame oil, soy sauce, scallions and garlic in a medium bowl until well combined.
  • Position a rack in the middle of the oven and preheat the oven to 375 degrees F.
  • Pat the turkey skin dry again and rub the ginger butter evenly over the surface, also getting underneath the skin of the breasts. Lay the turkey in a large roasting pan as flat as possible. If the pan is a bit small, tuck the wings behind the back with the drumsticks resting on the ledge of the pan and place a large rimmed baking sheet lined with aluminum foil at the bottom of the oven to catch drippings.
  • Roast until a meat thermometer inserted in the thigh registers 165 degrees F, 1 hour 30 minutes to 2 hours. Transfer to a cutting board and let rest 30 minutes before serving. Garnish with orange slices and chopped scallion if using.

Excellent to spread on any fish when baking/broiling, also great for seafood (Prawns) to stir fry. Try it on chicken MMmm I add garlic to it as well. It is quick to prepare and saves times when you want to use it because it's already made.

2 pounds salmon fillet
1 cup orange juice
2 teaspoons balsamic vinegar
1 teaspoon finely chopped fresh ginger root
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place orange juice in a small saucepan over medium low heat. Cook and stir 10 to 15 minutes, until reduced by about 1/2 and thickened. Remove from heat, and allow to cool.
  • Stir balsamic vinegar and ginger root into orange juice.
  • Line a medium baking dish with parchment paper. Place salmon fillet on paper, skin side down. Season with salt and pepper. Cover with 1/2 the orange juice mixture.
  • Bake salmon in the preheated oven 10 to 15 minutes. Brush with remaining marinade, and continue baking 10 to 15 minutes, until easily flaked with a fork.
