This is great with, grilled chicken, fish, or veggies. i ahve also used as a dip for cold seafood and crudites. It will stay good for 1 month tightly covered in the fridge.

12 garlic cloves
1 tablespoon vegetable oil
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1 cup mayonnaise
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
salt and pepper, to taste

Steps:

  • Place garlic and oil in small baking dish; stir well.
  • Bake at 300F for 30 minutes or until garlic is soft and golden.
  • Cool to room temperature.
  • Place garlic mixture, lemon juice, and Worcestershire sauce in container of blender.Process until smooth.
  • Add mayonnaise and remaining ingredients, process until smooth.

This stuff is the best! I make it about a dozen times a year. Better than any store bought garlic mayo I ever tasted. Takes tuna salad to a whole new level.

1 garlic clove
1/2 cup mayonnaise
olive oil, salt and pepper

Steps:

  • Slice the head off the the top of a garlic clove, about a half inch from the top.
  • Drizzle olive oil and, salt and pepper over the top.
  • Wrap loosely in foil like a pouch so it has room to steam/roast, 400F for 45 minutes.
  • Wrap the bottom in the leftover foil and squeeze out the roasted garlic, be careful as it is extremely hot. By the time you mash it up, it will lose a lot of it's heat.
  • Squash, smash and mince the garlic up with a knife, I make it a paste, lightly salt the garlic and whisk with 1/2 cup of your favorite mayo. Done.
  • *Will last for 2-3 weeks refrigerated, mine always runs out in about a week ;-).

1 head garlic
2 tablespoons olive oil
salt & pepper
2 cups mayonnaise

Steps:

  • Cut top off 1/4 portion of garlic head.
  • Place garlic head on 6in x 6in square of foil.
  • Drizzle olive oil over and add S & P.
  • Crimp together sides of foil. Make sure all edges are sealed.
  • Bake in 350 degree oven for 25-30 minutes.
  • Remove from oven and let cool.
  • Squeeze cloves of garlic into a seperate bowl and slightly mash to break down cloves.
  • Add mayo and mix.
  • Place in fridge for 30 minutes to set prior to serving.

5 garlic cloves
3 large egg yolks
2 cups light-flavored olive oil
1 to 2 teaspoons fresh lemon juice
Kosher salt to taste
Cayenne pepper to taste

Steps:

  • To roast the garlic, preheat the oven to 450 degrees. Remove the skin from the garlic, place the cloves in a baking dish and cover with foil. Bake the garlic for about 20 minutes, until the cloves are tender when pierced with the tip of a knife. Mash the cloves and set aside.
  • Make a mayonnaise by whisking the egg yolks well in a mixing bowl. Add half the olive oil, drop by drop, whisking constantly. Add the remaining olive oil in a slow, steady stream, whisking constantly.
  • Add one teaspoon of the lemon juice and the mashed garlic cloves to the mayonnaise and whisk to combine. Add kosher salt and cayenne pepper to taste. Add remaining lemon juice according to taste.

1 head garlic
2 teaspoons olive oil
kosher salt and ground black pepper to taste
½ cup mayonnaise
1 teaspoon lemon juice
½ teaspoon Worcestershire sauce
1 pinch ground cayenne pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim off the top of the head of garlic to expose cloves. Drizzle with olive oil. Sprinkle salt and black pepper on top. Wrap in aluminum foil.
  • Bake in the preheated oven until garlic feels soft when lightly pressed, about 1 hour. Unwrap and cool, 5 to 10 minutes. Refrigerate until chilled, 30 minutes to 1 hour.
  • Pull out individual garlic cloves with a sharp knife; place in a small bowl. Mash with a fork until creamy. Add mayonnaise, lemon juice, Worcestershire sauce, and cayenne; mix well until blended.
  • Refrigerate until flavors combine, at least 1 hour.

1 teaspoon olive oil
1 cup mayonnaise
1 tablespoon sriracha sauce
salt and pepper

Steps:

  • Preheat the oven to 375°F.
  • Slice the top 1/3 of the garlic head off. Drizzle the exposed cloves with olive oil. Add salt and pepper. Wrap loosely in foil and bake in oven for about 30 - 40 minutes until the cloves are golden and soft. Allow to cool for about 10 minutes.
  • Once garlic is cool squeeze the cloves out. Mix with salt and pepper to make a paste. Add mayo and sriracha. Enjoy!
