3 heads garlic, unpeeled
1 tablespoon olive oil
½ cup sour cream
¼ cup mayonnaise
1 green onions, chopped
1 tablespoon red wine vinegar
½ teaspoon salt
¾ tablespoon ground black pepper

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Cut off the top of the head of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of the head. Brush the cut cloves with a small amount of olive oil, then nestle the head into a piece of aluminum foil.
  • Bake in the preheated oven until the cloves are tender and nicely browned, about 1 hour. Remove, and allow to cool to room temperature.
  • Once cool, squeeze the garlic cloves out of their skins and into a mixing bowl. Mash well with a wire whisk, then add the sour cream, mayonnaise, green onions, vinegar, salt, and pepper. Whisk until evenly blended, then refrigerate 2 to 4 hours to allow the flavors to blend.

Yum yum yum. If you like garlic you will love this. If you don't usually like garlic, you might like this because the garlic is roasted, the flavor mellows and has a sweeter taste (like caramelized). Sour cream may be substituted with plain yogurt to cut some calories. This is great for dipping veggies such as artichokes, asparagus, or whatever, it's really versatile.

1 head garlic (whole bulb)
3 tablespoons mayonnaise
3 tablespoons sour cream
3 tablespoons olive oil
salt and pepper

Steps:

  • Cut off top of garlic bulb to expose most of the garlic cloves.
  • Put the bulb in an oven-safe small dish or on top of a sheet of foil.
  • Drizzle olive oil on the tops of the garlic cloves, add more if needed to drench the tops and sides of the whole bulb. Sprinkle some salt on the top of the bulb on the oil.
  • Wrap or seal up the garlic bulb with foil.
  • Roast in oven at 400°F for 30-40 minutes, until tops and sides are browned and roasted.
  • Take out of the oven and cool for 10 minutes.
  • When cooled enough to handle, squeeze out the garlic cloves from the root or the bottom of the bulb, into a small bowl.
  • Add mayonnaise and sour cream, using a fork, stir until blended.
  • Add pepper to taste, and salt if needed.

Steamed Artichokes and Roasted Garlic Dipping Sauce image

Don't be afraid of the artichoke! This recipe will tell you how to prepare it and to how to actually eat it! (the first time I had no clue what was edible on this cactus-like thing). It is healthy (esp. steamed) and full of fiber. This is a delicious and simple way to enjoy artichokes! The roasted garlic is so mellow and can be prepared while the artichokes are steaming to save time. Sour cream can be substituted with plain yogurt to cut calories. The steaming time of the artichokes and roasting time of the garlic bulb will vary slightly depending on the sizes you have.

2 artichokes
1 lemon
1 head garlic (whole bulb)
2 tablespoons mayonnaise
2 tablespoons sour cream
salt and pepper
3 tablespoons olive oil

Steps:

  • Cut off the bottom stems of the artichokes with a serrated knife and rub the artichoke bottoms with the lemon. Cut about 2 inches off the top of the artichoke, drizzle some lemon juice over the top as well.
  • Optional: Using kitchen scissors, snip off prickly ends of each leaf for easier enjoyment later.
  • Place the artichokes in a steamer and steam 40 to 50 minutes, or until the bottoms are tender when pierced and the leaves pulls out easily. When it's done, quickly plunge into a bowl of iced water to stop the cooking and drain.
  • While steaming the artichokes, prepare the garlic for the sauce: Cut off top of garlic bulb (enough to expose tops of most garlic cloves). Drizzle enough olive oil over the cut cloves to drench the top and sides, sprinkle a pinch of salt as well. Wrap foil around the garlic bulb and seal at the top. Roast in 400 degree oven (I use my little toaster oven) for about 30-40 minutes until soft and roasted, browned around the tops and edges is a good indicator. Let it cool for about 10 minutes.
  • When cool enough to handle, squeeze the garlic cloves from their bulbs by pressing with your hands from the bottom of the bulbs to the top (cut side) into a small bowl. Add the mayonnaise and sour cream, and stir with fork to blend well. Add salt if needed and black pepper to taste. Cover and refrigerate until needed.
  • To eat the artichoke, pull the leaves and dip the bottom tender part into the sauce, pull the tender "meat" with your teeth on the bottom part of the leaves, don't eat (discard) the rough tops. Towards the inside you can bite off more of the tender bottoms of the leaves. Towards the heart of the artichoke, you will see pins and needle-like fuzzy stuff which you can scrape off with a spoon, then you can eat the best part of all, the center or "heart" of the artichoke.

Super easy and tasty creamy garlic dip for fresh or grilled veggies, pita chips, french fries, seafood, grilled meats or whatever you want to dip. Recipe is easily increased, just be sure to use equal parts yogurt, sour cream and mayonnaise; you can adjust garlic and seasonings to your taste.

1/3 cup plain yogurt
1/3 cup sour cream
1/3 cup mayonnaise
4 -16 garlic cloves, minced (to taste)
paprika
salt
pepper
fresh chives, finely chopped (for garnish)

Steps:

  • Stir together equal parts plain yogurt, sour cream, and mayonnaise.
  • Stir in minced garlic and season to taste with paprika, salt and pepper. The sauce should have a velvety consistency, ie not too runny.
  • Garnish with fresh chopped chives.
  • Suggestions for dippers: grilled or fried zucchini, aubergines, roasted red bell pepper, calamari with lemon, pita chips, french fries, or grilled meats.

1 cup whole milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 teaspoon plus a pinch salt
1/4 teaspoon cayenne pepper
3 to 4 heads Roasted Garlic, recipe follows

Steps:

  • Gently heat milk in a small saucepan, just until barely simmering. Remove and keep covered. In a separate saucepan, melt butter. When foam subsides, add flour and stir until smooth. Cook for 1 to 2 minutes, stirring. Do not allow flour to color. Gradually add the warm milk, whisking to combine. Add the salt and cayenne and increase the heat to medium. Cook the mixture, whisking continuously, until the sauce comes to a boil and is thickened. Remove from heat and add 10 of the roasted garlic cloves. Pour the hot mixture into a blender, cover tightly, and process until smooth. Transfer to a small bowl and cool slightly, placing a piece of plastic wrap directly on the surface.

Steps:

  • Put all ingredients in a bowl or jar and serve within a 1/2 hour.
  • This can also be refrigerated.
  • Refrigerate after using.
  • If you purchase a good olive oil, it will solidify in the fridge.
  • Just let it thaw for a few minutes at room temperature.
