Steps:
- Preheat oven to 350°.
- Heat olive oil in a large nonstick skillet over medium-high heat. Add onion; cook 2 minutes.
- Add mushrooms; cook, stirring frequently, 4 minutes or until the mushrooms are tender.
- Add spinach; cover and cook 1 minute or just until spinach is wilted.
- In a medium bowl, combine eggs, egg whites, 1/4 cup cheese, salt, and pepper; mix well.
- Add spinach mixture; mix well.
- Pour mixture into an 8-inch round cake pan coated with cooking spray.
- Sprinkle remaining 1/4 cup cheese over frittata.
- Bake 30 minutes or until eggs are set in center and cheese has melted.
- Cut into 4 wedges.

Steps:
- Cook pasta according to direction on package.
- Heat olive oil in skillet. Add vegetables and saute until translucent (5 minutes).
- Add garlic and cook 1 minute.
- Stir in tomatoes, chicken broth, parsley, basil, oregano, pepper flakes.
- Bring to a boil. Reduce heat and simmer until sauce thickens.
- Stir in cooked pasta and heat through.
- Garnish with parmesan and gouda cheese.

This is not a healthy dish by any means, but it is delicious. The chicken breasts turn out juicy and tender and are topped with a layer each of bacon and melted, browned smoked gouda. Yummm!

Steps:
- Preheat oven to 375°F.
- In an oven-safe skillet (NOT cast iron), cook bacon over medium heat or until crispy and fat-rendered. Set bacon slices aside on a paper towel to drain. Once cooled, crumble and set aside. Do not drain bacon fat from skillet.
- While bacon is cooking, season chicken breasts on both sides with thyme, garlic powder, onion powder, salt and pepper. Then dust both wides of each breast with 1 tbs. flour each.
- Bring skillet to medium-high heat. Lightly brown both sides of chicken breasts for approximately five minutes each side. Don't worry if they don't cook through. Remove breasts to a clean plate, cover and set aside.
- Remove skillet from heat and deglaze with white wine. Remove from heat.
- Return breasts to skillet, arrange crumbled bacon evenly over both and arrange gouda slices atop bacon layer.
- Roast in oven for 10 minutes or until chicken is cooked through, and cheese has melted and begun to brown.

- Heat olive oil in a large pot on medium heat. Saute onions until they start to turn translucent, about 5 minutes. Add garlic and heat for another minute will stirring constantly. Stir in flour and cook for another minute while stirring constantly.
- Stir in chopped broccoli and potato, making sure to coat all pieces with the sauteed onion, garlic, and flour mixture.
- Add chicken broth and bring to a boil. Lower to medium heat and cook for another 20 minutes, or until broccoli and potato pieces soften. Stir in half-and-half.
- Transfer everything to a blender and blend until smooth.
- Return pureed mix to the pot. Stir in shredded gouda, Serve immediately.

QUESADILLAS WITH SMOKED GOUDA AND CARAMELIZED ONION
I first came across this recipe in Epicurious but I have tweaked it into something my friends like better. It is a great appetizer with margaritas or chilled Chardonnay!

Steps:
- Melt 2 tablespoons butter in heavy medium skillet over medium heat.
- Add onion and sauté until onion is golden brown, stirring frequently, about 25 minutes.
- Season with freshly cracked pepper.
- Remove from heat. Cool to room temperature.
- Brush heavy large skillet with remaining butter. Place over medium-high heat. Working in batches, Sprinkle cheese, prosciutto and sautéed onion on tortilla, dividing equally, top with another tortilla making a sandwich. Cook quesadillas just until brown spots appear, brushing skillet with butter between batches, about 2 minutes per side. Transfer quesadillas to cutting board. Cut each into 6 triangles. Arrange on platter and serve hot or at room temperature.
- I usually serve with sour cream mixed with mango chutney and Tabasco, and lime wedges.

- Prepare rice according to package directions.
- In large saute pan, heat olive oil on medium. Add brussels sprouts, season with salt and pepper to taste, and saute until tender and lightly browned, 8-10 minutes.
- In a bowl, stir cooked rice, sprouts, and all other remaining ingredients. Mix until cheese is melted and everything is nicely mixed. If too thick, add a little water to thin it out. Season with more salt and pepper, if needed.
- Serve warm/right away, 3/4 cup per person.

- Preheat oven to 400 degrees.
- In a large bowl, combine the broccoli, rosemary, garlic powder, pepper flakes and avocado oil. Season with salt and pepper, to taste.
- Unfold the puff pastry and set it down flat on top of a lightly greased baking sheet. Evenly spoon the broccoli mixture on top of the puff pastry, leaving 1/2 inch of the edges untouched. Sprinkle the Gouda and mozzarella cheese evenly over all.
- Bake in a preheated oven for 18 to 23 minutes, or until the pastry is golden brown. Cut into squares with a pizza cutter.
