ROASTED LAMB SHOULDER WITH ROSEMARY AND PAPRIKA RUB



Roasted lamb shoulder with rosemary and paprika rub image

Shoulder of lamb is quite fatty, but that's what makes the meat so sweet and succulent, and by cooking it for a long time at a low temperature, the meat becomes so tender it just falls off the bone. This is the perfect roast to put in the oven and leave while you are out as it cooks slowly in the oven and you will return to a house full of wonderful aromas and meltingly tender meat. Serve it with fresh mint sauce.

2.2kg/4.5lb whole lamb shoulder
3 tbsp rosemary, leaves picked and finely chopped
2-3 tbsp olive oil
1 tsp ground paprika
salt and pepper
2 onions, sliced
1.2 litres/2 pint stock
2 tbsp plain flour
1 tbsp redcurrant jelly
gravy browning (optional)

Steps:

  • Preheat the oven to 220C/425F/Gas 7 (200C Fan).
  • Put the lamb on a board. Mix the rosemary, oil and paprika together and season well with salt and pepper. Rub over the lamb on both sides.
  • Put the onions and stock into a small roasting tin, put a rack on top then place the lamb on top. Roast in the oven for 30 minutes, or until brown then reduce the temperature to 160C/325F/Gas 3 (140C Fan). Cover the lamb with aluminium foil and continue to roast for 3-4 hours, basting from time to time until completely tender and the meat is falling off of the bone.
  • Remove the foil and place the lamb on a plate to rest while you make the gravy. Skim off the fat into a bowl. Spoon two tablespoons of the fat into a saucepan.
  • Sieve the roasting juices and softened onion into a measuring jug. Add boiling water to the jug to make up to 570ml/1 pint of liquid. Heat the fat in the saucepan until hot. Add the flour and stir until smooth. Still over the heat, add the roasting juices and whisk until thickened and smooth. Add redcurrant jelly and salt and pepper to taste and a little gravy browning if too pale. Serve with the lamb.

4 pound lamb shoulder
Garlic cloves, sliced
Rosemary sprigs
Sea salt
Olive oil
1 tablespoon flour
1/2 bottle red wine or vegetable stock

Steps:

  • Preheat oven to 350 degrees. Push garlic (3 to 4 slivers) into the shoulder of lamb. Cover with sprigs of rosemary, salt and a little olive oil. Roast uncovered for 3 1/2 to 4 hours. Remove lamb and leave to rest. Drain off the excess fat. Over the heat, add the flour to the pan of juices and cook for 1 to 2 minutes. Gradually add red wine or vegetable stock, stir until thick.

2kg lamb shoulder
3 onions, each sliced into 3 thick discs
1 shallot, halved
4 garlic cloves
4 cherry tomatoes
2 anchovies
½ tsp cumin seeds, toasted
½ tsp coriander seeds, toasted
½ tsp pink peppercorns
2 tbsp rosemary leaves
1 thyme sprig, leaves picked
small bunch mint leaves, chopped
70ml white wine
4 tbsp olive oil
1 tbsp brown sugar
zest and juice 1 lemon
zest ½ lemon
1 garlic clove, crushed
1 tbsp finely chopped mint

Steps:

  • Make the marinade. Blitz 1 halved shallot, 4 garlic cloves, 4 cherry tomatoes, 2 anchovies, ½ tsp toasted cumin seeds, ½ tsp toasted coriander seeds, ½ tsp pink peppercorns, 2 tbsp rosemary leaves, leaves from 1 thyme sprig, chopped leaves from a small bunch mint, 70ml white wine, 4 tbsp olive oil, 1 tbsp brown sugar and zest of juice of 1 lemon in a food processor.
  • Pierce 2kg lamb shoulder all over with a sharp knife, put it in a large roasting tin and slather the marinade onto the meat, coating thoroughly.
  • Cover with cling film and leave in the fridge for at least 3 hrs, preferably overnight.
  • Take the lamb out of the fridge at least half an hour before you cook it to bring it to room temperature. Heat oven to 160C/140C fan/gas 3.
  • Put 3 onions, each sliced into 3 thick disks, in the roasting tin, resting the lamb on top. Cover with tented foil and roast for 5 hrs, basting the meat occasionally.
  • Remove from the oven, transfer the lamb to a board and allow to rest, covered, for at least 30 mins.
  • Return the tin of onions and marinating juices to the oven to keep warm.
  • Combine zest ½ lemon, 1 crushed garlic clove and 1 tbsp finely chopped mint in a bowl.
  • Pull the lamb apart with forks and serve with the roasted onions and gremolata scattered over.
  • Skim off any fat from the juices and serve alongside the lamb.You can use the leftover meat in Rosie's lamb shoulder flatbread recipe (see 'goes well with').

  • Using your hands, rub marinade into meat, making sure it’s completely coated. Arrange fat side up in pan. Cover very tightly with foil and chill for at least 2 hours or, preferably, overnight (the lamb will develop more flavor the longer it marinates).
  • Preheat oven to 325°. Roast lamb, basting occasionally and adding water by 1/4-cupfuls if pan is dry, until meat is completely tender and pulling easily away from the bones, 4–4 1/2 hours (be sure to secure foil tightly around the roasting pan each time you finish basting the lamb).
  • Remove lamb from oven and uncover. Preheat broiler. Broil lamb, basting occasionally, until fat is golden brown and crisp, 5–7 minutes.

  • Sit the lamb, skin-side up, on a board. Using a sharp knife, insert irregular holes through the skin. Insert the garlic into the holes.
  • Place the lamb in a roasting tin and roast for about 20 minutes until brown. Carefully turn the lamb over and roast for a further 20–30 minutes until brown all over.
  • Boil the onion in water for 10 minutes, then add the potatoes and boil for 4 minutes. Drain well.
  • Remove the lamb from the tin. Add the onions and potatoes to the tin and mix together. Add the stock to the tin, then put the lamb on top and cover tightly with foil.
  • Reduce the temperature of the oven to 160C/140C Fan/Gas 3 and cook for 3½–4 hours, or until the lamb is completely tender. Remove the lamb from the tin and place on a board.
  • To make the gravy, spoon the lamb fat into a saucepan. Add the flour and stir over the heat for 30 seconds. Whisk in the stock, wine, redcurrant jelly, Worcestershire sauce and browning.
  • Carve the lamb and serve with gravy and potatoes and onion. Serve with green vegetables.
