SLOW-ROAST SPICED LAMB SHOULDER WITH SUMAC ONIONS



Slow-Roast Spiced Lamb Shoulder with Sumac Onions image

At Maydan the lamb shoulder is cooked sous vide until meltingly tender and then finished in the hearth until crisp and golden brown. We adapted their recipe for the oven to similar effect.

Number Of Ingredients 16

1 (6-7-lb.) bone-in lamb shoulder
2 Tbsp. black peppercorns
2 Tbsp. coriander seeds
2 Tbsp. paprika
2 tsp. ground cinnamon
1 tsp. ground cardamom
1 tsp. ground cloves
1 tsp. freshly grated nutmeg
1 large red onion, thinly sliced
3 Tbsp. fresh lemon juice
2 tsp. sumac
1/2 cup mint leaves
1/2 cup parsley leaves with tender stems
Kosher salt, freshly ground pepper
Special Equipment
A spice mill or mortar and pestle

Steps:

  • Season lamb very generously with salt and pepper; place on a wire rack set inside a rimmed baking sheet.
  • Toast peppercorns and coriander seeds in a dry small skillet over medium heat, tossing often, until fragrant, about 3 minutes; let cool. Finely grind in spice mill or with mortar and pestle; transfer to a small bowl. Mix in paprika, cinnamon, cardamom, cloves, and nutmeg, then rub all over lamb. Chill uncovered at least 4 hours and up to 1 day.
  • Let lamb sit out on counter at room temperature 1 hour before roasting.
  • Place a rack in middle of oven; preheat to 275°F. Transfer lamb to a roasting pan and pour in 3 cups water. Cover tightly with foil and cook, turning lamb over and rotating pan halfway through, until meat is almost falling off the bone, 3-3 1/2 hours. Remove lamb from oven and turn up heat to broil (or to highest heat if you have a drawer-style broiler). Discard foil, transfer lamb to a cutting board, and pour off liquid in pan. Return lamb to pan; roast, uncovered, until nicely browned, about 5 minutes.
  • Meanwhile, toss onion, lemon juice, and sumac in a small bowl with your hands, squeezing onion a bit to soften.
  • Just before serving, toss mint, parsley, and a pinch of salt into onion mixture. Serve lamb topped with onion salad.

ROASTED LEG OF LAMB WITH RED ONIONS AND SOUR CHERRIES

1 (6-pound) leg of lamb, fat trimmed, boned out, rolled and tied by your butcher
1/4 cup extra-virgin olive oil, plus more as needed
1/2 cup freshly ground black pepper, plus more as needed
1 cup chopped fresh basil leaves
Kosher salt
4 medium red onions
1/2 cup red wine
1/4 cup balsamic vinegar
1 cup beef stock
1 cup dried sour cherries, reconstituted in hot water; then drained
1 tablespoon butter

Steps:

  • Preheat oven to 400 degrees F.
  • Rub the lamb leg all over with olive oil, and then the pepper and basil. Let the lamb sit at room temperature for at least 20 minutes.
  • Season the lamb all over with salt, set fat-side up on a rack in a shallow roasting pan, and roast for 30 minutes. Reduce heat to 350 degrees F. and continue to cook for about 1 hour. While the lamb is roasting, peel the onions, cut the ends off, and slice in half into 2 thick rings. Place into a baking pan, drizzle with olive oil, season with salt and freshly ground pepper, and roast alongside the lamb for the last 30 minutes or until they are soft and caramelized. The lamb is done when a thermometer placed in the thickest part of the leg reads 120 to 125 degrees F. Transfer lamb to a cutting board and let rest 10 to 20 minutes.
  • Spoon off the fat from the roasting pan. Set the pan over 2 burners, add the red wine and balsamic and reduce by half, stirring and scraping up any browned bits from the bottom of the pan. Add the beef broth and reduce until sauce reaches desired consistency. Whisk in the sour cherries and butter. Season with salt and pepper and serve with slices of lamb and red onions.

ROAST LAMB, COUSCOUS, RED ONION

Onions are used in most stuffings, both lightening the rice, couscous, or breadcrumbs and introducing sweetness. As they melt down, they keep the filling moist. Ask the butcher to prepare your shoulder of lamb for stuffing. When the bone is removed, it provides a neat pocket that will hold just the right amount.

a large red onion
olive oil
fine couscous - scant 2/3 cup (90g)
boiling water - scant 1 cup (200ml)
golden raisins - a handful
ground cumin - half a teaspoon
ground cinnamon - 2 large pinches
a shoulder of lamb - about 3 pounds (1.3kg), prepared for stuffing

Steps:

  • Peel and thinly slice the onion, then let it soften in a little olive oil over medium heat, stirring from time to time. It is ready when soft and golden. Put the couscous in a bowl, pour over the water, and leave for ten minutes. Preheat the oven to 425°F (220°C).
  • Fluff the couscous with a fork to separate the grains. Stir in the softened onion, the raisins, and the spices. Season generously, then stuff the mixture into the pocket inside the lamb. Pull the meat over the stuffing and seal with a skewer or tie with string.
  • Place the meat in a roasting pan, scattering any spare stuffing around the outside, and rub a little olive oil over the fat. Pour a glass of water into the roasting pan and place in the oven. Roast the lamb for twenty minutes, then decrease the heat to 400°F (200°C) and continue roasting for forty minutes, until the fat is crisp and golden and the juices run clear when the meat is pierced with a skewer. Remove from the oven and let rest for ten minutes before carving.

3 shallots
½ tablespoon dried thyme
2 teaspoons pepper
3 ½ teaspoons salt
5 lb leg of lamb, boneless
1 carrot
potato
onion
4 cloves garlic
salt, to taste
pepper, to taste
olive oil
8 slices garlic bread

Steps:

  • Create the herb rub in a food processor. Pulse the olive oil, rosemary, garlic, shallots, thyme, pepper and salt together until you have a thick paste.
  • Spread out the leg of lamb and rub half of the herb rub all over the exposed side of the lamb.
  • Roll up and securely tie the leg of lamb together with kitchen twine.
  • In the roasting pan, spread out the carrots, onions, potatoes, garlic cloves, salt, pepper, and oil.
  • Rest the leg of lamb on top of the vegetables. Pour the rest of the herb rub all over the leg of lamb, spread out so it coats evenly.
  • Roast at 450°F (230°C) for 50 - 60 minutes or until the internal temperature reads 130°F (55°C) for medium rare.
  • Remove the leg of lamb and let it rest of 20 minutes before you remove the kitchen twine to carve.
  • Serve with the roasted vegetables.
