ROAST BEEF AND HORSERADISH TEA SANDWICHES



Roast Beef and Horseradish Tea Sandwiches image

Yield: 9 sandwiches • Preparation: 15 minutes

Number Of Ingredients 10

9 slices rye bread, crusts removed
1 recipe Horseradish Cream (see below)
9 (2-inch) squares Swiss cheese
½ pound thinly sliced deli roast beef
Garnish: microgreens
1 cup sour cream
1 tablespoon prepared horseradish
1 tablespoon Worcestershire sauce
1 teaspoon hot pepper sauce
½ teaspoon coarsely ground black pepper

Steps:

  • Cut each slice of rye bread into 2 (2-inch) squares.* Spread Horseradish Cream on 9 bread squares. Top each with 1 slice Swiss cheese and desired amount of roast beef. Top with remaining bread squares. Garnish with microgreens, if desired.
  • In a small bowl, combine sour cream, horseradish, Worcestershire sauce, hot pepper sauce, and black pepper. Stir to combine. Refrigerate for 2 hours before serving.

6 slices potato bread
1 recipe Horseradish Aïoli (recipe follows)
12 slices ultra-thin deli-style roast beef
12 slices Campari tomato
Garnish: microgreens
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoons prepared grated horseradish
⅛ teaspoon ground black pepper

Steps:

  • Using a long serrated knife, trim crusts from bread, and cut each bread slice diagonally into 4 triangles. To prevent drying out, cover bread with damp paper towels, or place in a resealable plastic bag until ready to assemble sandwiches.
  • Spread a small amount of Horseradish Aïoli onto each bread triangle.
  • Fold each roast beef slice in half, then in half again to create a ruffled triangle. Place a roast beef triangle on aïoli side of 12 bread triangles. Top each with a tomato slice and another bread triangle, aïoli side down.
  • Garnish with microgreens, if desired.
  • In a small bowl, combine mayonnaise, sour cream, horseradish, and pepper, stirring to blend.

12 thin slices deli roast beef
12 small leaves butter lettuce
½ cup mayonnaise
1 tablespoon sour cream
3 teaspoons grated prepared horseradish

Steps:

  • Spread a side of each bread slice with ½ teaspoon Horseradish Mayonnaise. Top each of 12 slices with a slice of roast beef and a lettuce leaf. Top with remaining 12 bread slices mayonnaise side down.
  • In a small bowl, combine mayonnaise, sour cream, and horseradish, whisking well. Refrigerate until needed.

1/2 cup chopped pitted Greek olives
1/4 cup spicy brown mustard
1/4 teaspoon pepper
6 slices whole wheat bread, crusts removed

6 slices white bread, crusts removed

Steps:

  • Place butter, olives, mustard and pepper in a food processor; pulse until chopped. Spread butter mixture over wheat bread; top with roast beef and white bread. Cut each sandwich crosswise into thirds.

2 teaspoons salt
24 mini slices rye bread
Freshly ground black pepper
6 thin slices (about 6 ounces) roast beef, halved

Steps:

  • Stir the sour cream, horseradish and salt together in a small bowl.
  • Using a butter knife or offset spatula, spread the horseradish cream on 1 side of each rye slice. Put 1 slice of roast beef on 12 of the pumpernickel slices. Finish each sandwich with a grind or two of pepper and the remaining bread. Arrange the sandwiches on a serving platter and serve immediately.

1 medium red onion, halved and thinly sliced
1 tablespoon, plus 2 teaspoons kosher salt, plus more to taste
6 tablespoons red wine vinegar
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup plus 2 tablespoons jarred grated horseradish (with liquid)
1/2 teaspoon grated lemon zest
Freshly ground black pepper
Hot sauce
6 Kaiser rolls
12 slices vine-ripened tomatoes
24 ounces freshly sliced rare roast beef
3 loosely packed cups watercress or arugula, or a combination of both

Steps:

  • In a small bowl, mix together the onion and 1 tablespoon of the salt. Set aside for 20 minutes. Rinse the onions with cold running water. Drain and squeeze to remove excess liquid. Combine the onions and the vinegar and marinate at least 30 minutes or up to 24 hours.
  • In a small bowl, mix together the mayonnaise, sour cream, horseradish, zest, and 2 teaspoons salt. Season generously with pepper and hot sauce to taste. Refrigerate the horseradish sauce for at least 30 minutes.
  • Preheat the broiler. Slice the rolls in half lengthwise. Using your hands, shallowly scoop out the inside of each half. Transfer the rolls to a baking sheet and arrange scooped-side up. Toast the rolls under the broiler for about 1 minute. Slather the inside of the rolls with the horseradish sauce. On each of the roll bottoms, layer 2 tomato slices and season with salt and pepper to taste. Top the tomatoes with some of the roast beef overlapped into "ruffles" and season with salt and pepper. Top the meat with some of the onions and watercress and cover with the tops of the roll. Serve immediately.

24 slice cocktail rye bread
1/2 c mayonnaise
1 Tbsp mustard
2 tsp prepared horseradish
1 c baby spinach leaves

Steps:

  • 1. Mix together the mayonnaise, mustard and horseradish thoroughly. Spread thinly onto party rye.
  • 2. Top bread with baby spinach leaves.

1 tablespoon unsalted butter
1 tablespoon olive oil
4 large Vidalia onions (about 3 pounds), cut into 1/2-inch dice
4 tablespoons prepared horseradish
8 ounces cream cheese, room temperature
Coarse salt and freshly ground pepper
18 thin slices wheat bread
8 ounces roast beef, thinly sliced

Steps:

  • In a large skillet, heat butter and oil over medium heat. Add onions, and stir to coat; cook, stirring occasionally, until they begin to soften, about 10 minutes. Reduce heat to medium-low; continue cooking, stirring every 20 minutes, until onions are amber colored and completely caramelized, just over 1 hour. Remove from heat, and transfer to a bowl to cool.
  • In a small bowl, mix horseradish and cream cheese; season with salt and pepper. Spread two slices of bread with a thin layer of horseradish cream cheese; cover one with a layer of onions, and top with roast beef and other bread slice. Use a serrated knife to trim crusts and cut into four small squares. Repeat with remaining ingredients. Cover with damp paper towels until ready to serve.
