- Place bread, cut side up, on a baking sheet. Broil 3-4 in. from the heat for 2-3 minutes or until toasted., Meanwhile, in a small bowl, combine the mayonnaise, chipotle pepper, garlic, lime juice, pepper and salt; spread over cut sides of bread. Sprinkle bottom half with blue cheese. Layer with roast beef, onion, tomato and lettuce; replace top. Cut into four sandwiches.

Steps:
- Whisk together water, salsa, and seasoning packets.
- Place roast in crock pot and pour seasoned mixture over roast.
- Cook on low for 8-10 hours.
- Shred beef.
- To make sliders: Cut each roll in half and place on a baking sheet.
- Place a slice of swiss cheese on each roll.
- Place baking sheet in oven and broil for 1-2 minutes until rolls are golden and cheese is melted.
- For chipotle sauce mix together sour cream, chili sauce and horseradish sauce.
- Remove rolls from oven and place a spoonful of shredded beef on bottom part of roll.
- Spread chipotle sauce on the top half of roll.
- Place top half on beef to make the slider.

BEEF SLIDERS WITH CHIPOTLE SPECIAL SAUCE

Steps:
- Make the special sauce: Stir all the sauce ingredients together in a small bowl. Season to taste with salt and pepper and set aside.
- Make the sliders: Mix the ground beef, garlic and onion powders, salt, Worcestershire sauce and pepper in a large bowl. Form the meat mixture into ten 2-inch patties.
- Heat a large cast-iron skillet over medium-high heat. Add enough canola oil to coat the pan and heat until the oil is smoking. Add the patties and cook, flipping once, until heavily caramelized on both sides, 4 to 6 minutes for medium rare. Top each patty with a slice of cheese. Transfer the patties to a plate. Wipe out the pan, add the butter and melt over low heat. Add the buns cut-side down and toast them in the butter.
- Spread the chipotle special sauce on both cut sides of each bun. Place a patty and a piece of lettuce on each bun. Top each slider with a pickled jalapeno strip and a pickled carrot slice, securing them with a bamboo pick.
SLIDERS WITH CHIPOTLE MAYONNAISE
Steps:
- For the chipotle mayonnaise:
- Add all the ingredients to a food processor and puree. Season, to taste, with salt and pepper.
- For the sliders:
- Preheat grill over medium-high heat.
- Form the meat into 2 to 3-ounce portions, packed tightly. Season with salt and pepper.
- Place the sliders on the grill. Wait until they are nice and crusty on the first side, about 4 to 5 minutes and then flip and cook another 4 minutes. When the sliders are about done, top with desired cheese and close the grill, allowing the cheese to melt.
- Place the slider on mini burger buns and top with chipotle mayonnaise and any other desired toppings.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Slice the rolls in half vertically, leaving each roll attached as a sheet. Peel off the top layer and set aside; place the bottoms of the rolls in the prepared dish. Layer roast beef and cheese across the rolls.
- Heat oil in a a small skillet over medium-high heat. Cook onion, bell pepper, and mushrooms until soft, about 5 minutes. Spread pepper mixture over cheese and beef. Place the tops of the rolls back on.
- Mix melted butter, garlic powder, adobo seasoning, and Italian seasoning together. Brush seasoned butter on the tops of the rolls, pouring any extra over the sides.
- Bake in the preheated oven until cheese starts to melt, about 15 minutes. Separate each roll into a sandwich using a serrated knife. Serve hot.
