Provided by Andrea Geddes

Categories     Main Course

Time 24m

Number Of Ingredients 16

1 brown onion (finely diced)
4 garlic cloves (peeled and crushed)
3 tablespoons olive oil
4 cups mushrooms
1/2 cup dry white wine (like unoaked Chardonnay, Pinot Grigio or Sav Blanc)
6 cups liquid stock (use vegetable or chicken stock)
2 cups arborio rice
4 tablespoons butter
1 cup grated Parmesan cheese
1/4 - 1/2 teaspoon salt (season to taste)
pepper
2-3 sprigs fresh thyme
extra pan fried mushrooms (optional, but recommended)
2-3 tbsp fresh parsley (chopped)
shaved Parmesan cheese
olive oil (a little extra drizzle over the top.)

Steps:

  • Set your pressure cooker to sauté/high temp and add the olive oil, onion and garlic. Cook until the onions have softened (1-2 minutes).
  • Add the sliced mushrooms and cook until they have softened and browned slightly.
  • Add all of the remaining ingredients into the cooker and secure the lid.
  • Select the 'risotto' setting if your pressure cooker has this. If not, set the pressure to high/manual and cook for 12 minutes. It will take 10-15 minutes for the pressure to build before the cooking process starts.
  • Once cooked, carefully vent and remove the lid once the pressure has released.
  • The liquid will be sitting on top of the risotto, so stir until combined. The risotto will appear a little runny, but the rice will continue to thicken as it sits.
  • Top with extra pan fried mushrooms (optional), chopped parsley, shavings of fresh parmesan cheese and an extra drizzle of olive oil. Serve immediately. Enjoy!
  • If your slow cooker has a sauté setting, follow the steps above to cook the onion, garlic and mushrooms. If not, gently sauté the onion, garlic and olive oil in a frying pan over medium heat until soft. Add the mushrooms and cook until soft and browned.
  • Add all of the risotto ingredients to the slow cooker pot and set the slow cooker to 'high' heat for around 2 hours, 15 minutes. **Cooking times will vary due to different brands and types of cookers. Start to check the risotto at around 2 hours. The rice is ready when it has softened to al dente and the sauce has thickened slightly.
  • The liquid will be sitting on top, so stir until combined. The risotto will appear a little runny, but the rice will continue to thicken as it sits.
  • Top with extra pan fried mushrooms (optional), chopped parsley, shavings of fresh parmesan cheese and an extra drizzle of olive oil. Serve immediately. Enjoy!

RISOTTO AI FUNGHI PORCINI IN PENTOLA A PRESSIONE (PORCINI MUSHROOM RISOTTO)

Risotto ai Funghi Porcini in Pentola a Pressione (Porcini Mushroom Risotto) image

Porcini are the most flavorful mushrooms you can find. This risotto recipe explains how to make the risotto the traditional way, as well as in a pressure cooker. With a pressure cooker, you can have this authentic Italian risotto ready after just 4 minutes of cooking!

Provided by miche

Categories     Main Dish Recipes     Rice     Risotto Recipes

Time 47m

Yield 4

Number Of Ingredients 11

4 ounces fresh porcini mushrooms
3 cups beef stock
¼ cup extra-virgin olive oil, divided
1 clove garlic, crushed
1 cup white wine, divided
1 bunch fresh parsley, chopped, divided
salt to taste
1 spring onion, finely sliced
1 ½ cups Arborio rice
¾ cup grated Parmesan cheese
2 tablespoons butter

Steps:

  • Brush dirt off porcini mushrooms with a clean cloth or vegetable brush. Slice into bite-sized pieces.
  • Pour beef stock into a saucepan over low heat. Cover and keep warm.
  • Heat 2 tablespoons olive oil in a skillet over medium heat. Cook garlic until lightly golden, about 1 minute. Stir in mushrooms; cook until slightly softened, 2 to 3 minutes. Pour in 1/2 cup wine; cook until alcohol evaporates, 3 to 5 minutes. Continue cooking until mushrooms are tender but still firm, adding a little beef stock if they look dry, about 10 minutes.
  • Remove skillet from heat; sprinkle half the parsley over mushrooms. Season with salt. Cover and keep warm.
  • Heat remaining 2 tablespoons olive oil in a stovetop pressure cooker. Cook spring onion until softened, about 1 minute. Add Arborio rice; cook and stir until toasted and coated with oil, 2 to 3 minutes. Increase heat and pour in remaining 1/2 cup wine; simmer until alcohol has evaporated and rice has absorbed most of the wine, about 2 minutes.
  • Stir beef stock into the pressure cooker. Seal according to manufacturer's instructions. Increase heat to high; cook until cooker whistles, about 5 minutes. Reduce heat to low and cook for 4 minutes.
  • Remove cooker from heat and release pressure according to manufacturer's instructions. Remove the lid. Fold mushroom mixture, with 1 to 2 tablespoons cooking liquid, into the rice. Stir in Parmesan cheese and butter. Let stand for 2 to 3 minutes. Sprinkle remaining parsley on top.

RISOTTO AI FUNGHI (MUSHROOMS) - 2-QT PRESSURE COOKER

Risotto Ai Funghi (Mushrooms) - 2-Qt Pressure Cooker image

For 2-quart Pressure Frypan or larger pressure cooker, from "Quick Cuisine" by Kuhn Rikon. If doubling recipe, only increase the broth to 3 1/2 cups. For a rich, creamy taste, add butter or cream with Parmesan cheese. When I made this our dining group thought the sundried tomatoes took over the spotlight so we would reduce them next time, but the 20-mo.-old gave this her enthusiastic approval.

BASIC RISOTTO (PRESSURE COOKER)

Basic Risotto (Pressure Cooker) image

This is a good basic pressure cooker risotto recipe. I was skeptical at the idea of quality risotto from a pressure cooker, but this produces the texture and consistency of normal risotto without the continuous stirring. I wouldn't make this with canned chicken broth - the flavor ends up overly salty and metallic. [This is partially adapted from both The Pressure Cooker Gourmet(Victoria Wise) and The Naked Chef (Jamie Oliver).]

Categories     White Rice

Time 25m

Yield 3 serving(s)

Number Of Ingredients 11

1 tablespoon extra virgin olive oil
2 large shallots
1 celery rib
kosher salt
2 garlic cloves
3/4 cup arborio rice
1/4 cup dry white vermouth (dry Martini)
2 cups chicken stock
2 tablespoons butter
parmigiano-reggiano cheese
fresh ground black pepper

Steps:

  • Warm the chicken stock in a small saucepan.
  • Finely chop the shallots, celery, and garlic.
  • Add the olive oil to the pressure cooker, and place over medium heat.
  • Add the shallots and celery with a pinch of salt, and sweat for about 3 minutes, until the shallots are translucent and softened.
  • Add the garlic and cook for about 2 minutes (don't let the garlic brown).
  • Turn the heat up to high, and add the rice with another pinch of salt. Fry the rice for 2 - 3 minutes, keeping it moving so it doesn't burn.
  • When the rice is translucent, add the vermouth (be careful, it will steam). Stir until the alcohol is cooked off and the liquid is absorbed.
  • Add the chicken stock, and give it a stir. Lock on the lid and bring to pressure.
  • Reduce the heat to medium and cook for 4 minutes. Remove the pressure cooker from the heat, and let sit for 7 minutes.
  • Meanwhile, cut the butter into small cubes, and grate the parmesan.
  • Carefully release any remaining pressure.
  • Stir in the butter, cheese, and pepper to taste.
  • Serve immediately.

  • Heat 1 tablespoon of olive oil in an Instant Pot using sauté mode adjusted to high, until the oil starts to shimmer (Medium-high heat in a stovetop pressure cooker). Add the chopped mushrooms to the pot and sprinkle with ½ teaspoon salt. Cook, stirring occasionally, until the mushrooms give up their liquid and start to brown, about 10 minutes. Move half the mushrooms to a plate with a slotted spoon, and set aside for later.
  • Put 1 tablespoon of butter in the pot with the remaining mushrooms, and wait for it to melt. Add the garlic, then stir in the rice, coating it with the butter. Add the wine and scrape the bottom of the pot with a flat edged wooden spoon to loosen any browned bits of mushroom. Pour in the broth, stir in the ½ teaspoon salt (if using homemade broth), and lock the lid.
  • Cook at high pressure for 5 minutes in an Instant Pot, electric pressure cooker, or stovetop pressure cooker. (Use Manual Mode or Pressure Cook for an Instant Pot). Quick release the pressure, then carefully remove the lid, tilting it away from you to avoid the scalding hot steam.
  • Stir the 2 tablespoons of butter into the rice until it melts, then stir in the grated cheese and the sautéed mushrooms set aside earlier. Serve, sprinkling with a little extra grated cheese and some minced parsley. Enjoy!
