CHEESY RANCH POTATOES
Cheesy Ranch Potatoes are a mouthwatering potato side dish to spice up your dinner routine! These easy to make potatoes are creamy, cheesy, and ready fast!

Steps:
- Preheat the oven to 400 degrees.
- Add the cubed potatoes to a large pot and cover with cold water. Bring the potatoes to a boil over high heat.
- Reduce heat to medium-high and boil for 8-10 minutes just until tender.
- Meanwhile, in a medium bowl, whisk together the ranch dressing, sour cream, seasonings, and half of the cheese until well combined.
- Drain the potatoes and pour them into a large cast iron skillet or 9x9 inch baking dish.
- Pour the dressing mixture over the potatoes and stir to coat.
- Bake in preheated oven for 15 minutes, until hot and bubbly.
- While the potatoes are baking, cook the bacon in a large skillet over medium-high heat until crisp. Drain bacon on a paper towel lined plate and crumble when cool enough to handle.
- Remove the pan from the oven and top with the bacon and the remaining cheese, bake for 3 more minutes until cheese is melted.

- 1. In large bowl, blend soups and cream cheese. Microwave til creamy and cheese is melted, stirring occasionally. Stir in well, the dressing mix, then fold in 1 cup (half) the shredded cheese, then the potatoes. Fold well til all potatoes are coated. Pour/spoon into lightly greased 13x9 glass baking dish, mashing down a little, and spreading in pan evenly. Sprinkle top with rest of shredded cheese. COVER and bake at 350º for 50-55 minutes. Uncover, top with onions. Bake UNCOVERED for another 5 minutes or til onions are lightly browned. *Nice additions: 1 cup diced, fully-cooked ham. Cooked, crumbled bacon (4-6 slices). Sauted onions. Sauted mushrooms.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and cool. Peel and grate potatoes; place in a large bowl. Add the sour cream, cheddar cheese, 3 tablespoons butter, green onions, salt and pepper., Transfer to a greased 2-1/2-qt. baking dish. This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

CHEESY RANCH POTATOES RECIPE

Steps:
- Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
- Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
- Combine cream cheese and sour cream in a large bowl; beat until smooth.
- Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
- When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
- Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
- Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
- Bake 5 minutes longer, or until cheese melts.

- In a small pot, heat the soup, butter or margarine and sour cream over low heat.
