My wife - an undisputed authority on rice pudding - told me that this is the best rice pudding she's ever had, despite the fact that she doesn't like raisins. I do, however, so I'm keeping them in.

1 cup white rice
2 cups warm water
1 2/3 cups half-and-half
1/2 cup skim milk
1 cup brown sugar
1 tablespoon ground cinnamon
1/4 teaspoon kosher salt
1 egg, beaten
1 1/4 cups golden raisins
2 tablespoons light butter
1 teaspoon vanilla extract

Steps:

  • Bring two cups of water to a boil. Stir in rice and reduce heat to Low. Simmer for 20 minutes, covered, stirring occasionally until the water is absorbed.
  • Stir half-and-half, brown sugar, cinnamon, and salt into the cooked rice. Cook on medium heat, stirring frequently to prevent sticking and clumping. Continue for about 15 minutes, until thick and creamy.
  • Stir in egg, skim milk, and raisins and cook for another 5 minutes.
  • Remove from heat and stir in butter and vanilla extract.

1 1/2 cups brown rice cooked (hot or cold)
1/2 teaspoon cinnamon
3 tablespoons honey (to taste)
3 tablespoons raisins optional
1/2 cup evaporated milk skim

Steps:

  • Mix rice with cinnamon, honey, and raisins. Add milk and stir. This recipe is tasty for breakfast as well as making a delicious dessert. It is high in fiber and nutrition. It also makes a filling healthy snack, as it is not high in sugar. Remember to include veggies and ALL of you snacks to help increase your metabolism if you are highly resistant fat loss. Most desserts DO NOT make the best snacks because of their higher sugar content. This recipe is an exception. *If you are diabetic, you may try a very small amount of fructose to replace the honey. Or try All Fruit Jam, an excellent choice.
