Rice Fritters Recipe: a great recipe to turn leftover cooked rice into veggie appetizers or even lunch! They remind me of my childhood.

1 ⅓ lb cooked rice ((600 g))
3,5 oz cheese ((100 g), grated)
1 oz unsalted butter ((28 g), melted)
1 shallot (chopped)
2 tbsp plain flour
½ tsp baking powder
olive oil
1 small egg
pepper
salt

Steps:

  • Combine the cooked rice and egg in a large saucepan or a bowl.
  • Add the grated cheese.
  • Stir well. Now add the plain flour and baking powder. Season the rice with a little pinch of pepper and salt.
  • Stir the rice again and pour in the melted butter.
  • Stir well. Add the chopped shallot and some extra pepper or salt to taste if necessary.
  • Combine the ingredients well. Add extra flour if the rice batter is too runny and wet. Pour a little olive oil in a large non-stick pan and place it over medium heat. Add the rice batter in badges. I used a serving ring but you can also add dollops of the rice and flatten them a little.
  • Fry the fritters until golden and crips and then flip them over. Cook them golden on this side as well. Once done, transfer the finished fritters onto some kitchen paper to drain and fry another badge of them.
  • Once that is done, place the rice fritters on a large serving plate and sprinkle with extra salt. Serve the fritters warm.

This healthy Brussels sprout recipe is delicious enough to convert even those who feel dubious about this vitamin C-packed crucifer. The leafy sprouts get their moment in the spotlight in a shiitake-sesame rice bowl drizzled with a smoky tahini dressing.

1/2 cup tahini
2 tablespoons fresh lemon juice
3/4 teaspoon smoked paprika
1/2 teaspoon ground cumin
1 clove garlic
Kosher salt
1 cup short-grain brown rice

1 1/2 teaspoons toasted sesame oil
2 tablespoons olive oil
One 5-ounce container sliced shiitake mushrooms
One 10-ounce container shredded Brussels sprouts
1 Medjool date, finely chopped
Kosher salt

Steps:

  • For the smoky tahini dressing: In a blender, blend together the tahini, lemon juice, paprika, cumin, garlic, 1/2 teaspoon salt and 1/2 cup cold water until creamy.
  • For the sesame rice: Bring a medium pot of water to a boil, add the rice and 1/2 teaspoon salt, and reduce the heat to medium-low. Simmer, uncovered, until al dente, about 15 minutes; drain. Stir in the sesame seeds and sesame oil.
  • For the warm Brussels sprout-shiitake slaw: Meanwhile, in a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the mushrooms and cook, stirring occasionally, until softened, about 5 minutes. Add the remaining tablespoon olive oil, Brussels sprouts and the date; cook, stirring occasionally, until tender and slightly charred, about 5 minutes. Season to taste with salt. Divide the rice among 4 serving bowls, and top each with some of the warm Brussels sprouts-slaw and tahini dressing.

These toasty sesame cookies from Sicily are the perfect example of the "not too sweet" sweet. Perfect for breakfast or a light snack, the taste like they are, as their name says, fit for a queen.

2 1/2 sticks unsalted butter
1 cup sugar
3 large eggs
4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon vanilla extract
Zest of 1 small lemon
1 cup milk
2 cups sesame seeds

Steps:

  • Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper or silicone baking mats.
  • In a food processor, pulse together the butter and sugar until yellow and fluffy, then add the eggs one at a time. Add the flour, baking powder, vanilla and lemon zest and continue pulsing until a firm dough forms.
  • Scoop off golf ball-sized pieces of dough and roll with your hands into oval shapes. Dip the cookies in the milk, then roll in the sesame seeds. Space 2-inches apart on the prepared baking sheets. Bake until brown and toasty, 10 to 12 minutes. Cool completely on the baking sheets, or cool 2 minutes, then transfer to racks to cool completely (if the baking sheets are needed for another batch). Cookies will last about 3 weeks in a sealed container.

1/2 cup long-grain white rice (Mahatma® brand if you can find it)
Peanut oil for frying
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
3 large eggs
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Cane syrup for serving

Steps:

  • Bring 1 cup of water and a pinch of salt to a boil in a small saucepan. Add the rice, stir once, reduce the heat to low, and cover the pan, cooking 18 to 20 minutes or until the grains of rice are plump and fluff apart with a fork. Turn the rice out onto a parchment paper--lined baking sheet and cool for 15 minutes, then transfer to a plastic container (don't pack it in). Cover with plastic wrap and poke a few holes in the top. Refrigerate for at least 8 hours or up to 2 days.
  • Pour enough peanut oil into a large pot to fill it to a 2 1/2- to 3-inch depth and bring to a temperature between 350°F and 360°F over medium heat. Line a plate with paper towels and set aside.
  • While the oil heats up, place the flour, baking powder, and cinnamon in a medium bowl. Using a stand mixer or a hand mixer, beat the eggs, sugar, and vanilla on high speed until foamy and tripled in volume, 1 1/2 to 2 minutes. Sift in half of the dry ingredients, add the salt, and mix on low speed until only a few dry streaks remain. Sift in the remaining dry ingredients and mix on low speed for a few turns, then add the rice and mix until the fritter batter just comes together into a loose, roughly textured ball.
  • Once your oil is hot, dip a teaspoon in the hot oil, then into the batter and scoop out a heaping teaspoonful. Hold the spoon close to the oil and let the batter roll off and into the oil. Repeat with the remaining batter; using a slotted spoon, turn and baste the fritters occasionally, allowing them to become golden brown on all sides. (Fry the fritters in two batches if your pot becomes overcrowded.) If the temperature of the oil dips below 350°F, increase the heat to medium-high. Once the fritters are golden brown, transfer them to the prepared plate to cool slightly. Serve on a small plate drizzled with lots of cane syrup.

1 cup cooked rice, packed
1 onion, grated
1 large egg
2 tablespoons tapioca starch (to be corn free, or you can use corn starch in the same quantity)
canola oil (for frying, to be soy free or you can use vegetable oil!)

Steps:

  • Combine all the ingredients except for oil and mix well.
  • In a pan, heat oil for shallow frying.
  • When the oil is hot, add a tablespoon of batter, pressing down slightly to form a flat fritter.
  • Fry one side until golden and flip. If there are too many holes in the fritter, add more cornstarch to the batter.
  • Drain fritters on paper towels to absorb excess oil.
  • Serve with salsa, tzatziki or anything else that has a zesty fresh flavor!
  • Enjoy!
