Delicious Almond Rice Pilaf image

A delicious side dish for beef or chicken. A great change from plain rice or boxed rice mixes. I like to serve this with grilled chicken or with saucy cube steaks.

2 teaspoons vegetable oil
¼ cup diced onion
1 cup white rice
2 tablespoons slivered almonds
2 cups water
1 cube beef bouillon
1 teaspoon dried parsley

Steps:

  • Heat oil in a saucepan over medium heat; cook and stir onion until tender, about 5 minutes. Add rice and almonds, cooking and stirring until rice is lightly toasted, about 5 minutes more. Stir in water, bouillon, and parsley; cover and reduce heat to medium-low. Simmer until water is absorbed and rice is tender, about 20 minutes. Remove from heat and allow rice to rest for 5 minutes before serving.

1/4 c slivered almonds
1 Tbsp butter or margarine
2 1/2 c chicken broth
1 Tbsp parsley flakes
1 c uncooked rice

Steps:

  • 1. Toast almonds in non-stick skillet over medium heat, stirring constantly.
  • 2. In a 2-quart saucepan, combine broth, Parsley Flakes and margarine. Bring to a boil.
  • 3. Stir in rice. Cover and reduce heat to simmer for 20 minutes. Remove from heat and let stand 5 minutes. Fluff rice with a fork.
  • 4. Gently toss in almonds and serve.

FISH ALMONDINE



Fish Almondine image

From when I was expecting my first baby, Alex, to well past the birth of my second child, Paige, I used to meet my grandmother, Ga-Ga, at Luby's Cafeteria in my hometown for lunch on an almost monthly basis. Luby's had a mega-long (it seemed like a football field, but probably wasn't quite) serving line of prefilled small plates holding such comfort foods as Jell-O salad, macaroni and cheese, Salisbury steak, fried chicken, mashed potatoes, and slices of pie as far as the eye could see. But for me, the single most memorable dish at Luby's was their gloriously consistent Fish Almondine. No matter which seventeen sides I selected (okay, sometimes it was eighteen), Fish Almondine was always the main course for me. This is my best attempt to re-create the Luby's magic. (I love and miss you, Ga-Ga.)

3/4 cup panko breadcrumbs
1/3 cup sliced almonds
3 tablespoons salted butter, melted
2 tablespoons chopped parsley
Kosher salt and black pepper
1/3 cup all-purpose flour
Six 6-ounce cod fillets
1/2 cup mayonnaise
Juice of 1 lemon

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, combine the panko and almonds. Drizzle in the melted butter and toss until well combined.
  • Add the parsley and toss it in . . .
  • Then stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Put the flour in a shallow dish and add a pinch each of salt and pepper. Stir to combine.
  • Dredge both sides of the fish in the flour, shaking off any excess.
  • Spread a generous tablespoon of mayonnaise over each piece of fish . . .
  • And sprinkle the crumb mixture on top, pressing lightly to make sure it sticks.
  • Bake until the crumbs are golden and the fish is flaky, 16 to 18 minutes. Squeeze the lemon juice on top and serve.

1/8 cup sliced almonds
Kosher salt
1/2 pound haricots verts, cut into 1-inch pieces
1 tablespoon unsalted butter
1/2 medium onion, finely chopped
1 1/2 cups converted (parboiled) white rice
2 3/4 cups low-sodium chicken broth
1 bay leaf
1 wide strip lemon zest
1 teaspoon fresh lemon juice
Freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F. Spread the almonds on a baking sheet and bake until golden brown, about 6 minutes. Transfer to a small bowl and let cool.
  • Bring a saucepan of salted water to a boil. Add the haricots verts and cook until crisp-tender, about 3 minutes. Drain and rinse under cold water. Wipe out the saucepan.
  • Melt the butter in the saucepan over medium-high heat. Add the onion, season with salt and cook, stirring occasionally, until soft, about 4 minutes. Add the rice and cook, stirring, until lightly toasted, 1 to 3 minutes. Add the chicken broth, bay leaf and lemon zest and bring to a boil. Reduce the heat to low; cover and simmer until the liquid is absorbed, about 18 minutes. Remove from the heat; add the haricots verts, cover and let stand 5 minutes. Uncover and stir in the lemon juice, half of the almonds, and pepper to taste. Remove the bay leaf. Transfer the rice to a bowl and top with the remaining almonds.

  • In a medium saucepan, melt the butter over medium-high heat. Stir in the onion and almonds. Cook for 5 to 7 minutes or until the onion is softened and the almonds are golden, stirring occasionally. Add the rice; cook and stir for 1 minute. Slowly stir in the broth and add the salt and the pepper, to taste. Bring to a boil. Cover, reduce heat to low, simmer for 15 to 20 minutes or until liquid is absorbed.   • In a 10-inch round baking dish toast almonds in oven until golden, about 5 minutes. Add butter and rice and toss to coat. Stir in broth and salt and cover dish with foil. Bake rice in lower third of oven 1 hour and 15 minutes, or until rice is tender. If all of broth has not been absorbed, bake rice, uncovered, 5 minutes more.

2 cups wild rice, washed and drained well
1/2 cup olive oil
2 tablespoons chopped onions
2 teaspoons chopped chives
1 teaspoon finely chopped shallot
2 teaspoons chopped green peppers
3/4 cup slivered almonds
1 (8 ounce) can sliced water chestnuts, drained
4 ounces fresh button mushrooms, sliced
4 1/2 cups chicken broth, brought to a boil
salt
black pepper

Steps:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onion, chives, shallots and green pepper and sauté until soft.
  • Stir in the rice and sauté 2 to 3 minutes more.
  • Add the almonds, water chestnuts and mushrooms.
  • Turn the mixture into a casserole dish.
  • Stir in the boiling chicken broth and season with salt and pepper, to taste.
