LAURI'S YUMMY NUT BREAD
This recipe for nut bread has been handed down from my grandmother and is sooo delicious. It's easy to make and everyone who tries it always asked for the recipe. For best results, mix with a wooden spoon, not with an electric mixer. It will overmix and become tough.

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5 inch loaf pas.
- In a large bowl, stir together the sugar, eggs, vegetable oil and vanilla until smooth using a wooden spoon. Combine the flour, baking soda, salt and cinnamon; stir into the sugar mixture alternately with the buttermilk just until mixed. Stir in the walnuts. Divide the batter evenly between the two pans.
- Bake for 55 minutes in the preheated oven, until a toothpick inserted into the crown comes out clean. Allow the bread to cool for about 10 minutes before removing from the pans, and wrap in aluminum foil.

BLUE RIBBON ZUCCHINI NUT BREAD
This is the best Zucchini Nut Bread I have ever had and the only one I will make. It's from "Country Fair Cookbook" All recipes in this book are Blue Ribbon winners from fairs around America prior to it's publication in 1975. Wrap and refrigerate overnight to allow the flavor to mellow. I have also made this as muffins. Just lower the temperature. Now that I live in Australia I make this using the Aussie measuring cups and spoons and it turns out fine. I've also made it with half carrot and half zucchini. And other times I've used half wholewheat flour and half plain, just for a change and it works well too. My husband loves it and says it's more like a cake then a bread since it's so moist.

Steps:
- Preheat oven to 350°F (175°C).
- Sift together plain flour, cinnamon, baking soda, salt and baking powder.
- Beat eggs well.
- Gradually add sugar and oil, beat together well.
- Add vanilla and dry ingredients from above blend well.
- Stir in the zucchini.
- Combine walnuts and 1 tsp of flour, stir this into the batter.
- Pour batter between two 2 greased (I use baking paper) 8 1/2" x 4 1/2" x 2 1/2" loaf tins.
- Bake for 1 hour or till tests done (skewer poked in the middle comes out clean).
- Cool in tins on racks for 10 minutes before removing from tins, cool on racks.
RIBBON NUT BREAD
I have not tried this recipe, but looking at the ingredients, I know it has to be good. If I see a recipe that looks good, but I have not tried it, I will post it, but let you know that I have not made it. This would be a good holiday gift if you like to give homemade goodies to friends and neighbors. It is from a Kraft cook booklet.

- Preheat oven to 350 degrees.
- Mix cream cheese, sugar and egg, mixing until well blended.
- Combine the dry ingredients in a large mixing bowl.
- Combine the oil, milk, eggs and lemon peel in a small bowl.
- Add the oil mixture to the dry ingredients, mixing until just moistened.
- Fold in the nuts.
- Pour 1 cup of the batter into a greased 9 x 5 loaf pan.
- On top of the batter, add the cream cheese mixture.
- Cover this with the remaining batter.
- Bake at 350 degrees for 1 hour.
- Cool for 10 minutes and remove from pan.

CINNAMON SWIRL QUICK BREAD
This vanilla flavored cinnamon swirl quick bread is moist and soft with a thick ribbon of cinnamon sugar swirled inside. Feel free to turn this recipe into muffins or mini loaves. See recipe notes below.

- Preheat oven to 350°F (177°C). Spray a 9×5 inch loaf pan with nonstick spray.
- Mix the 1/2 cup (100g) granulated sugar and 1 Tablespoon of ground cinnamon together.
- Whisk the flour, baking soda, and salt together in a large bowl. In a medium bowl, whisk the egg and 3/4 cup (150g) granulated sugar together until combined. Whisk in the oil, sour cream, milk, and vanilla extract. Pour the wet ingredients into the dry ingredients, then whisk to completely combine. Avoid over-mixing. You will have about 3 cups of batter.
- Pour/spread half of the batter into prepared loaf pan. Sprinkle almost all of the cinnamon sugar evenly on top (reserve about 2 Tablespoons for topping). It's a very thick layer of cinnamon sugar. Carefully pour/spread remaining batter evenly on top. The top layer of batter will want to stick to the cinnamon sugar filling, making spreading a little tougher to do, but use a spoon to carefully spread it out as best you can. Sprinkle with the rest of the cinnamon sugar. Using a knife, make a large swirl down the loaf pan, as shown in the video tutorial above. Avoid over-swirling, which will mix the layers together too much.
- Bake the bread for 50 minutes to 1 hour, covering loosely with foil about halfway through to prevent the top from over-browning. Poke the center of the bread with a toothpick. If it comes out clean, the bread is done. Oven times will vary between ovens. My bread usually takes 55 minutes. Cool bread completely in the pan set on a wire rack.
- Drizzle with icing, if using. Slice and serve. Cover and store leftover bread at room temperature for 1 day or in the refrigerator for up to 1 week.
UNIQUE AND YUMMY BANANA CRUNCH BREAD
Everytime I make this bread, someone thinks its an old family secret and I have been told by many that it is the best banana bread ever. I originally found it in a magazine 10 years ago. The ginger adds a unique taste and the crunch topping is very yummy.

- Heat oven to 350 degrees. Grease 9x5x3-inch loaf pan.
- Combine flour, sugar, baking powder and salt in large bowl. Cut in butter until mixture resembles coarse crumbs. Stir in bananas, walnuts, ginger, eggs and vanilla until mixture is just moistened. Spoon batter evenly into prepared pan.
- Prepare Crunch Topping: Combine flour, sugar, butter and cinnamon in a small bowl. Sprinkle evenly over batter.

- In a large bowl, beat eggs for 5 minutes. Gradually add sugar; beat 1-2 minutes longer (mixture will be thick and light in color). Add cream, milk, vanilla, 2 cups flour, cream of tartar, baking soda, salt and nutmeg; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth, 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and refrigerate for 2-3 hours. , On a floured surface, roll dough to 1/2-in. thickness. Cut with a lightly floured 2-1/2-in. doughnut cutter. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry doughnuts, a few at a time, until browned, about 2 minutes on each side. Drain on paper towels.

COCONUT BRUNCH BREAD
My MIL gave me this coconut bread recipe 20 years ago. It's one of my husbands favorites dishes to make for brunch.

- 1. Beat the eggs in large mixing bowl. Add sugar, oil and coconut flavoring and blend well. Sift together flour, soda, powder and salt. Add this to the egg mixture, alternating with buttermilk. Fold in flaked coconut and walnuts.
- 2. Pour into greased and floured 10 inch bundt pan. 325 for 1 1/2 hours. Test
- 3. After the cake comes out of the oven and while still in the bundt pan, combine the sugar, water and butter. Bring to a boil and simmer for 5 minutes. Remove the topping from the heat and add 1 teaspoon of coconut flavoring. Pour immediately over the warm bread and let stand 4 hours before removing from the pan
MARY'S BLUE RIBBON BANANA BREAD
Yum! This is an old-fashioned banana bread recipe that's delicious. It's a very basic recipe but so good. Reminds us of something our grandmother would make. This banana bread is moist and tender, slightly dense, and has a nice crust on the outside. This would be great for breakfast or a snack.

- 1. Sift dry ingredients together.
- 2. In a large bowl cream butter and sugar well.
- 3. Add eggs and beat well until light and fluffy.
- 4. Add vanilla.
- 5. Mix banana pulp with sour cream.
- 6. Add pulp alternately with dry ingredients to butter, sugar, and eggs mixture on slow speed.
- 7. Scrape sides as needed.
- 8. DO NOT OVER BEAT. Beat only until combined. I then stir with a wooden spoon to make sure it is all combined.
- 9. Grease and flour a loaf pan, 9X5X3. Bake at 350 degrees for 50-60 minutes.
- 10. Test with a cake tester. Do not test in the crack. Test off to the side. It should come out clean, but be careful not to over bake. You want a loaf of moist banana bread.

- 1. Put raisins in bowl. Cover with boiling water to plump.
- 2. Drain water and throw away the water.
- 3. Cream butter and sugar.
- 4. Add eggs and beat well.
- 5. Blend in pineapple.

- 7. Add raisins and nuts.
- 8. Mix together.

- 3. In another bowl combine flour, baking soda and salt.
