RHUBARB PUFFS WITH OATY STREUSEL TOPPING

Steps:
- Heat oven to 200C/fan 180C/gas 6. In a bowl, toss the rhubarb with cinnamon, 1 tbsp flour and 2 tbsp sugar. Line a baking sheet with a piece of baking parchment. Roll out the pastry on a floured surface to approx 20 x 30cm, then cut into quarters and place on the sheet.
- Rub together the remaining flour, sugar, butter and oats to make a rough crumble mixture. Divide the rhubarb between the pastry quarters, leaving a 1cm rim. Sprinkle the oat mixture over, then fold and pinch each corner to keep the filling in. Bake for 20-25 mins, then serve warm.

CREAMY RHUBARB TARTS

- Heat oven to 220C/fan 200C/gas 7. Roll the pastry out thinly and, using a plate or cutter, cut out 4 circles about 14cm in diameter. Use a slightly smaller cutter to cut a circle out of the middle and trim away the outside border, reserving these trimmings.
- Lay the 4 circles on a baking sheet, prick all over with a fork and brush the edges with egg. Use the pastry trimmings to make a border around the edge like a vol-au-vent and press down gently with your thumb. Chill until needed. This can be done up to 1 day ahead or frozen for up to 1 month.
- In a small bowl, mix the demerara sugar with the crème fraîche and spread a thin amount over the base of each tart. Neatly arrange slices of rhubarb, overlapping in a floral pattern, over the crème fraîche, then dust generously with icing sugar. Bake the tarts for 20 mins until puffed up and golden. Leave to rest for a few mins and eat warm with a scoop of ice cream, if you like.

RHUBARB AND RICOTTA CHEESE PUFF-PASTRY TARTLETS

- Combine rhubarb and 2 1/2 cups brown sugar in large pot. Cook over low heat until syrup forms and rhubarb is tender but not falling apart, stirring occasionally, about 35 minutes. Pour rhubarb mixture into sieve set over large bowl. Cover sieve and chill rhubarb and juices overnight.
- Preheat oven to 400°F. Roll out 1 pastry sheet on floured surface to 12-inch square. Cut into four 6-inch squares. Using small plate as guide, cut 6-inch round from each. Place rounds on ungreased baking sheet; pierce with fork. Bake 5 minutes; flatten with spatula. Bake until golden, about 10 minutes longer. Repeat with second pastry sheet to make 8 crusts. Maintain oven temperature.
- Blend ricotta and powdered sugar in bowl. Brush each crust with egg glaze. Leaving 1/2-inch plain border, spread 1/8 of cheese mixture (about 1/4 cup) on each crust. Bake tartlets until topping is set, about 10 minutes. (Can be made 1 hour ahead. Let stand at room temperature.)
- Preheat broiler. Pour rhubarb juices into small saucepan. Boil until reduced to thick syrup, stirring occasionally, about 8 minutes. Spread rhubarb 3/4 inch thick on rimmed baking sheet. Sprinkle with 3 tablespoons brown sugar. Broil until top is crisp and dark brown in spots, about 4 minutes.
- Spoon rhubarb over tartlets. Drizzle with rhubarb syrup and serve.
