2 eggs
3/4 c milk
3/4 c sugar
1 tsp margarine
3 Tbsp heaping, flour
1 tsp vanilla
1 small can, crushed pineapple
1 pie crust, prebaked

Steps:

  • 1. First we pay tribute to the maker of the recipe. Thank you Retha Malone.
  • 2. Cook pie crust in oven for directions for a cream pie. Set aside to cool and fill.
  • 3. Meanwhile:
  • 4. Separate egg yolks from egg whites.
  • 5. In a saucepan, combine the sugar, flour, milk and egg yolks. Cook on medium heat until the mix starts to thicken. Add the crushed pineapple, margarine and vanilla.
  • 6. Pour the mixture into the pie crust.
  • 7. Meringue:
  • 8. Beat the egg whites until they form peaks. "You could turn the bowl upside down and it wouldn't fall out." Add 1/2 sugar and beat until smooth.
  • 9. Spread the meringue over the pie...make pretty swirls and cook at 350 until meringue has a lovely brown tint.
  • 10. Cool and serve.

1/4 cup sugar
1/4 cup butter, melted
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
2-1/2 cups cold milk
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 can (8 oz.) crushed pineapple in juice, well drained

Steps:

  • Heat oven to 375ºF.
  • Combine graham crumbs, sugar and butter; press onto bottom and up side of 9-inch pie plate. Bake 8 min. or until lightly browned; cool completely.
  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in 2 cups COOL WHIP, then pineapple; spoon into crust.
  • Refrigerate 3 hours or until firm. Top with remaining COOL WHIP before serving.

Pastry for single-crust pie (9 inches)
CREAM LAYER:
1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
2 cups 2% milk
3 egg yolks, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
PINEAPPLE LAYER:
1/3 cup sugar
2 tablespoons cornstarch
1/4 cup water
1 can (20 ounces) crushed pineapple, undrained
2 tablespoons butter
MERINGUE:
3 egg whites
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • Line a 9-in. deep-dish pie plate with pastry; trim and flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Bake at 450° for 8 minutes. Remove foil; bake 5-7 minutes longer or until lightly browned. Cool on a wire rack., In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Gently spread over cream mixture., For meringue, in a large bowl, beat the egg whites, vanilla and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread over hot filling, sealing edges to crust., Bake at 350° for 15 minutes or until golden brown. Cool on a wire rack for 1 hour; refrigerate for 1-2 hours before serving.

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

Dough for single-crust pie
1/3 cup sugar
1 tablespoon cornstarch
1 can (8 ounces) crushed pineapple with juice
CREAM CHEESE LAYER:
1 package (8 ounces) cream cheese, softened to room temperature
1/2 cup sugar
1 teaspoon salt
2 large eggs
1/2 cup 2% milk
1/2 teaspoon vanilla extract
1/4 cup chopped pecans

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., Combine sugar, cornstarch and pineapple plus juice in a small saucepan. Cook over medium heat, stirring constantly until mixture is thick and clear. Cool; set aside. , Blend cream cheese, sugar and salt in mixer bowl. Add eggs, one at a time, beating after each addition. Blend in milk and vanilla. (Mixture may look curdled.)
