LOW-FAT SCALLOPED POTATOES



Low-Fat Scalloped Potatoes image

2 tablespoons unsalted butter, plus more for the dish
Kosher salt
3 pounds Yukon gold potatoes, peeled and thinly sliced
2 tablespoons all-purpose flour
1 cup low-fat milk (1%), at room temperature
1 cup whole milk, at room temperature
Freshly ground pepper
1/4 teaspoon freshly grated nutmeg
1/4 cup grated gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter a 3-quart flameproof baking dish. Bring a large pot of salted water to a boil; add the potatoes and cook until just tender, 8 to 10 minutes. Drain the potatoes and return to the pot.
  • Meanwhile, melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Gradually whisk in both milks and simmer, whisking constantly, until thickened, about 3 minutes. Remove from the heat and whisk in 1/2 teaspoon pepper, 1 1/2 teaspoons salt and the nutmeg. Pour the sauce over the potatoes and gently toss to coat.
  • Transfer the potato mixture to the prepared baking dish and sprinkle with the gruyere. Bake until heated through, about 10 minutes. Switch the oven to the broiler setting and broil the potatoes until browned on top, about 5 minutes. Let rest 10 minutes before serving.

1/4 cup reduced-fat or fat-free mayonnaise

1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
2 cups cubed cooked ham

Steps:

  • Place potatoes in 2-quart saucepan; add enough water just to cover potatoes. Heat to boiling. Reduce heat to medium-low; cook uncovered 8 to 10 minutes or until tender. Drain.
  • Heat oven to 350°F. In 10-inch nonstick skillet, heat oil over medium-high heat. Add bell pepper and onion; cook 3 to 4 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, in small bowl, mix milk and flour with wire whisk until well blended. Stir into vegetables in skillet. Heat to boiling. Reduce heat; cook uncovered 2 to 3 minutes, stirring constantly, until thickened. Stir in mayonnaise, pepper and cheese; stir until cheese is melted.
  • Place ham and potatoes in ungreased 2-quart casserole. Pour milk mixture over ham mixture; stir to mix. Bake uncovered 25 to 30 minutes or until bubbly and light golden brown on top.

5 -6 medium baking potatoes, peeled and sliced thinly (use a high starch, low moisture potato for best results)
3 -4 green onions, diced (may substitue a small onion diced)
8 ounces ham, sliced in 1/4-inch to 1/3-inch thickeness, trimmed and diced (I prefer Black Forrest Ham)
1 (10 3/4 ounce) can 98% fat-free cream of mushroom soup
1/2 cup 1% low-fat milk
3 slices havarti cheese, diced
kosher salt
black pepper

Steps:

  • Mix the 98% Fat Free Cream of Mushroom Soup with the milk until well blended.
  • Butter the bottom of a 2 qt baking dish.
  • Put aside 1/3 of the havarti cheese to place on top of the casserole.
  • Place an even layer of potatoes on bottom of buttered baking dish, season with small amount of salt and pepper, layer ham, onions, cheese and the soup/milk mixture. Repeat layers until all ingredients are used. Top with the remaining 1/3 of havarti cheese.
  • Cover the casserole and bake at 350 degrees for 60 minutes. Remove cover and bake another 15-30 minutes until potatoes are tender and top of dish is light golden brown.

1 teaspoon dried parsley flakes
1/2 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup gluten-free or all-purpose flour
3 cups 2% milk
6 cups russet potatoes (about 3 large potatoes), sliced thin
1/3lb low-sodium ham steak, chopped
1/2 small onion, grated

Steps:

  • Preheat oven to 375 degrees. Melt butter in a large skillet over medium heat. Add in parsley, thyme, salt, pepper and flour, and whisk together. Cook for 2 minutes, whisking occasionally.
  • Slowly add milk, whisking constantly, until smooth. Turn heat up to high and bring mixture to a boil, whisking constantly. Turn heat back down to medium and continue whisking for 2 minutes.
  • Combine potatoes, ham and onion in a large bowl. Spray a 9x13 pan with non-stick spray and add in half the potato mixture. Top with half the sauce, then repeat the layers. Cover the pan with foil and bake for 65 minutes. Remove the foil and bake for 15-20 more minutes, or until potatoes are tender.

1 tablespoon olive oil
1 tablespoon fresh parsley, chopped
1/2 teaspoon thyme

2 cups milk
3 cups potatoes (red skinned, sliced thin)
1 cup ham
1 small onion, chopped
1/2 cup gruyere cheese, grated

Steps:

  • Add sliced potatoes to well salted pot of water. Once it starts to boil, boil for three minutes. Do not overcook, drain well.
  • In a skillet on medium heat, combine the olive oil and onions. Add salt and pepper to taste and cook for 4 - 5 minutes.
  • Add the parsley, thyme, and ham and cook an additional 3 - 5 minutes then set aside in a bowl.
  • Wipe skillet out with paper towel and melt the butter over medium heat.
  • Add the flour and whisk to combine and the flour has turned a slight brown color.
  • Slowly add the milk and whisk constantly. Add salt and pepper to taste.
  • Bring to a boil and then turn heat down to low and whisk for another 2 - 3 minutes.
  • Add the ham and onion mixture to the skillet. Add salt and pepper to taste.
  • Cook an additional 2 minutes.
  • Butter a 2 quart casserole dish.
  • Add a spoonful of sauce and spread on the bottom of the casserole dish.
  • Place a layer of potatoes on top of the sauce.
  • Continue alternating sauce and potatoes.
  • Sprinkle the gruyere cheese on top and then cover with foil.
  • Bake at 400 degrees for 35 - 55 minutes.
  • Remove foil and bake another 10 minutes to brown the cheese.

2 1/2 lbs yukon gold potatoes, peeled, sliced 1/8-inch thick
1 1/2 cups 1% low-fat milk
1 tablespoon butter
1 large onion, chopped fine
1 garlic clove, minced
1 cup low sodium chicken broth
1 tablespoon cornstarch
1 tablespoon flour
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup grated extra-sharp cheddar cheese
1/2 cup grated parmesan cheese
2 tablespoons panko breadcrumbs

Steps:

  • Heat oven to 425 degrees.
  • Spray 8" baking dish with non stick spray.
  • Coarsely chop 15 slices of potato and microwave 2 minutes or until tender.
  • Mash with 3 tbsp of the.milk and set aside.
  • Over medium heat, in medium sauce pan, melt butter.
  • Saute onion until softened.

  • Cover with foil and bake on baking sheet for 30 minutes.
  • Remove foil and continue baking another 30 minutes or until tender.
  • Cool 10 minutes.
