I made this when FIL discovered some of his Bordeaux bottles were slightly over... Found it in an old Thermomix cookbook. A simple recipe, but very tasty.

Number Of Ingredients 9

4 eggs
3 1/2 ounces pecans, ground
1/2 lb butter, softened
7 ounces sugar
2 teaspoons cinnamon
2 teaspoons cocoa, unsweetened
1/2 lb all-purpose flour
1 tablespoon baking powder
1/2 cup red wine

Steps:

  • Preheat oven to 350 degrees.
  • Place all ingredients in a food processor and process until smooth.
  • Pour into a well greased 10 1/4 '' spring form pan and bake 1 hour.
  • Gently cut around the rim to prevent the cake from sticking to the rim, then let cool completely before removing the ring.
  • Serve with whipped cream or whatever topping or frosting you like (we had it without topping).

1 package yellow cake mix
1 package instant vanilla pudding
1 1/2 cups red wine
1/2 cup oil
4 large eggs
4 cups powdered sugar
4 -6 tablespoons red wine

Steps:

  • Mix cake mix then bake according to cake mix instructions.
  • For the glaze, mix together in a bowl then pour over warm cake and serve.

This cake, from Italian chef Gennaro Contaldo, sounds absolutely amazing -- my two favourite sins, chocolate and red wine, in one! Dusting it with cocoa powder just before serving makes it look extra special.

200 g butter, softened
250 g caster sugar
4 eggs, beaten
25 g cocoa powder
250 g plain flour
1 teaspoon baking powder
100 ml red wine
1 teaspoon vanilla extract
150 g plain chocolate chips

Steps:

  • Preheat the oven to 180 degrees C (350 F).
  • Lightly grease a 20cm springform cake tin.
  • Cream the butter and sugar together until light and fluffy.
  • Add in the eggs, then sift in the cocoa powder, flour and baking powder.
  • Mix in the red wine, then fold in the chocolate chips.
  • Pour the batter into the pan and bake for an hour or until a toothpick inserted into the centre comes out clean.
  • Remove from the oven, let it cool in the tin and then turn out.

  • In a large bowl, using a handheld electric mixer, beat the butter with the sugar at medium-high speed until fluffy, 4 minutes. Add the eggs, one at a time, and beat until incorporated. Add the vanilla and beat for 2 minutes longer. Working in two batches, alternately fold in the dry ingredients and the wine, until just incorporated.
  • Scrape the batter into the prepared pan, and bake for 45 minutes, until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn it out onto a rack; let cool completely. Dust the cake with confectioner's sugar and serve with whipped cream.

  • Sift the flour, cocoa powder and baking powder with a hand sifter or mesh sieve onto parchment paper. Pour dry mixture into wet ingredients and add the wine. Stir gently until combined. Add dark chocolate pieces and fold in gently.
  • Spoon batter into prepared bundt pan and bake in a preheated oven at 350 degrees for 45 - 50 minutes or until inserted toothpick comes out clean. Leave cake in pan for 10 minutes on a wire cooling rack. Remove cake from pan and let it cool completely before adding the icing.
