RED WINE CAKE
I made this when FIL discovered some of his Bordeaux bottles were slightly over... Found it in an old Thermomix cookbook. A simple recipe, but very tasty.

Steps:
- Preheat oven to 350 degrees.
- Place all ingredients in a food processor and process until smooth.
- Pour into a well greased 10 1/4 '' spring form pan and bake 1 hour.
- Gently cut around the rim to prevent the cake from sticking to the rim, then let cool completely before removing the ring.
- Serve with whipped cream or whatever topping or frosting you like (we had it without topping).

CHOCOLATE RED WINE CAKE
This cake, from Italian chef Gennaro Contaldo, sounds absolutely amazing -- my two favourite sins, chocolate and red wine, in one! Dusting it with cocoa powder just before serving makes it look extra special.

Steps:
- Preheat the oven to 180 degrees C (350 F).
- Lightly grease a 20cm springform cake tin.
- Cream the butter and sugar together until light and fluffy.
- Add in the eggs, then sift in the cocoa powder, flour and baking powder.
- Mix in the red wine, then fold in the chocolate chips.
- Pour the batter into the pan and bake for an hour or until a toothpick inserted into the centre comes out clean.
- Remove from the oven, let it cool in the tin and then turn out.

- Preheat the oven to 350°. Butter and flour a 12-cup bundt pan. In a bowl, whisk the flour, cocoa powder, baking soda and salt.
- In a large bowl, using a handheld electric mixer, beat the butter with the sugar at medium-high speed until fluffy, 4 minutes. Add the eggs, one at a time, and beat until incorporated. Add the vanilla and beat for 2 minutes longer. Working in two batches, alternately fold in the dry ingredients and the wine, until just incorporated.
- Scrape the batter into the prepared pan, and bake for 45 minutes, until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn it out onto a rack; let cool completely. Dust the cake with confectioner's sugar and serve with whipped cream.

- Add butter, sugar, vanilla sugar, cinnamon and salt into a large bowl and mix with an electric mixer on medium for 6 minutes until creamy. Add one egg at a time, mixing each egg until thoroughly incorporated before adding the next. Set aside.
- Sift the flour, cocoa powder and baking powder with a hand sifter or mesh sieve onto parchment paper. Pour dry mixture into wet ingredients and add the wine. Stir gently until combined. Add dark chocolate pieces and fold in gently.
- Spoon batter into prepared bundt pan and bake in a preheated oven at 350 degrees for 45 - 50 minutes or until inserted toothpick comes out clean. Leave cake in pan for 10 minutes on a wire cooling rack. Remove cake from pan and let it cool completely before adding the icing.
