Dressing:
4 scallions (dark green tops only)
1 jalapeño pepper (seeds removed)
1/4 c. Cilantro leaves
2 tbsp. fresh lime juice
1/4 tsp. kosher salt
1/4 c. extra-virgin olive oil
Salad:
1 avocado
1 head butter or Boston lettuce
12 cherry tomatoes
1/4 c. Cilantro leaves
3 oz. Ricotta salata
4 scallions (white parts only)

Steps:

  • To make dressing: In a mini food processor or blender, add scallions, 1 teaspoon jalapeño pepper, cilantro, lime juice and salt; pulse to combine. Continue to process while adding olive oil. Once dressing is well blended, taste and adjust spice/heat level with additional jalapeño, being careful not to add too much at one time.
  • In a small bowl, mix avocado with about half the dressing and set aside. This will prevent the avocado from browning.
  • Assemble salad by arranging lettuce leaves in bottom of a large serving bowl. Add tomatoes, then cilantro leaves; crumble ricotta salata over the top and sprinkle with scallions. Place avocado in center; serve remaining dressing on the side.

1 lb. strawberries
2 tbsp. balsamic vinegar
1/4 tsp. salt
1/4 tsp. pepper
5 oz. baby-greens-and-herbs mix
3 c. coarsely shredded cooked chicken
4 oz. herbed goat cheese

Steps:

  • In large bowl, combine strawberries, balsamic vinegar, salt, and pepper.
  • Let stand 10 minutes, stirring often. Add baby-greens-and-herbs mix and coarsely shredded cooked chicken; toss to combine.
  • Divide among 4 plates. Top with herbed goat cheese.

2 cups cherry tomatoes
8 cups fresh arugula
1 carton (8 ounces) fresh mozzarella cheese pearls, drained

2 cups fresh blueberries
6 ounces thinly sliced prosciutto, julienned
Additional mint leaves

Steps:

  • In a small bowl, whisk the first 9 ingredients. Add tomatoes; let stand while preparing salad., In a large bowl, combine arugula, mozzarella, peach slices, blueberries and prosciutto. Pour tomato mixture over top; toss to coat. Garnish with additional mint leaves. Serve immediately.

4 cups shredded green cabbage
2 cups shredded red cabbage
1 cup shredded carrots
2 green onions, trimmed, chopped (both white and green parts)
1 red bell pepper, cored and cut into thin sticks
4 large radishes, halved and thinly sliced
1 cup chopped parsley
1/2 cup chopped fresh dill
1 teaspoon sumac
kosher salt
1 cup toasted sliced almonds

Steps:

  • Make the mustard vinaigrette. In a small bowl, whisk together the Dijon mustard, lime juice, garlic, olive oil, and spices.
  • Make the salad. In a large mixing bowl, combine the cabbage, carrots, onions, red bell pepper, radishes, parsley and dill. Season with salt. Add the sumac. Add the toasted almonds. Toss gently to combine.
  • Pour the vinaigrette all over and toss to combine.
  • If you have the time, give the salad 30 minutes to 1 hour for the flavors to meld.

¼ cup extra virgin olive oil
¼ cup strawberry preserves
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
¼ teaspoon sea salt, or to taste
1 head red leaf lettuce
1 cup sliced strawberries
1 cup blueberries
¼ cup crumbled feta cheese
2 tablespoons sliced almonds

Steps:

  • Combine olive oil, preserves, white wine vinegar, Dijon mustard, and sea salt in the bowl of a small food processor. Pulse several times, until dressing is combined. Pour into a serving container and set aside.
  • Wash lettuce and dry in a salad spinner. Use some of the outer, larger leaves to line a medium salad bowl, with the red color of the leaves to the outside of the bowl.
  • Tear remaining lettuce leaves and add to the bed of whole leaves. Arrange strawberries, blueberries, and feta cheese crumbles on top of the torn lettuce. Sprinkle with sliced almonds and drizzle with strawberry vinaigrette. Refrigerate any remaining dressing in a sealed container, up to 5 days.

This recipe is more about assembly than actual cooking. (I mostly wanted to post my pics, which are pretty!) I had store-bought Romaine and Aerogarden -grown mixed greens, as well as strawberries and blueberries, needing to be eaten, so I made this salad (a variation of the usual strawberry-feta salads). I also put Recipe#49956 on it, but any bottled raspberry vinegrette will work. Also, it would be good with sliced chicken, avocado, onion, etc on top, or made with spinach. Feel free to enjoy it on the 4th, or any day!

2 tablespoons candied or toasted walnuts
4 strawberries, sliced

  • Pile the feta and walnuts in the middle of the greens.
  • Scatter the strawberries and blueberries on top.

2 packages (3 ounces each) lime gelatin
5 cups boiling water, divided
4 cups cold water, divided
1 package (3 ounces) lemon gelatin
1/2 cup miniature marshmallows
1 package (8 ounces) cream cheese, softened
1 cup mayonnaise
1 can (8 ounces) crushed pineapple, undrained
2 packages (3 ounces each) cherry gelatin

Steps:

  • In a large bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. dish; refrigerate until firm but not set, about 1 hour., In a large bowl, dissolve lemon gelatin in 1 cup boiling water. Stir in marshmallows until melted. Cool for 20 minutes. In a small bowl, beat cream cheese and mayonnaise until smooth. Gradually beat in lemon gelatin. Stir in pineapple. Carefully spoon over the lime layer. Chill until firm but not set. , Dissolve cherry gelatin in 2 cups boiling water. Add remaining cold water; stir. Spoon over the lemon layer. Refrigerate entire gelatin salad overnight. Cut into squares to serve.
