CUBAN PIZZA

1 pound whole-grain flour, plus more for dusting
10 ounces very cold water
2 teaspoons active dry yeast
1 tablespoon sea salt
1/2 cup orange juice
1/2 cup diced white onion
1/4 cup whole garlic cloves
1/4 cup fresh lemon juice
1/4 cup lime juice
1/8 cup dried oregano
1 1/2 tablespoons toasted ground cumin
5 1/2 tablespoons kosher salt
1 tablespoon toasted and ground black peppercorns
1/8 cup extra-virgin olive oil
One 5-pound pork butt
2 English cucumbers
2 fresh dill sprigs, minced
2 cups white distilled vinegar
2 tablespoons salt
1/4 teaspoon ground turmeric
2 teaspoons toasted black peppercorns
1 1/2 teaspoons toasted mustard seeds
4 garlic cloves, crushed
1/2 cup ice
Oil, for oiling dough
150 grams 50/50 shredded mozzarella and provolone blend
100 grams shaved ham
1 cup mayonnaise
1 cup yellow mustard, preferably French's

Steps:

  • For the pizza dough: Pour the flour, water and yeast into the bowl of a stand mixer and mix for 2 1/2 minutes. Scrape the bottom of the bowl and mix for another 2 1/2 minutes. Throw sea salt on top of the mixed dough; cover with plastic wrap and let rest for 30 minutes. Uncover and mix in 1-minute increments until the dough passes the "window test" to verify gluten development (see Cook's Note).
  • Leave the dough in the mixing bowl. Cover and refrigerate until it doubles in size, about 2 hours.
  • For the Cuban pork: Process the orange juice, white onion, garlic, lemon juice, lime juice, oregano, cumin, salt and pepper in a blender. Continue to blend, streaming in the oil. Transfer to a bowl and add the pork. Marinate overnight, refrigerated.
  • Preheat the oven to 250 degrees F.
  • Pour the pork and marinade into a Dutch oven and braise in the oven, covered, for 12 hours. Let meat rest, then shred.
  • For the pickles: Slice cucumbers 1/4-inch thick. Place in a storage container along with the dill.
  • Combine the vinegar, salt and turmeric in a medium saucepan. Make a sachet with the pepper, mustard seeds and garlic and add it to the saucepan. Bring to a boil, then remove the pan from heat. Add the ice and allow to cool fully before removing the sachet and pouring the liquid over the cucumbers. Make sure all ingredients are submerged in the brine and refrigerate. Let sit at least 24 hours before using.
  • For the pizza: Preheat a wood-fired pizza oven to 750 degrees F or a regular oven to the highest it will go, 500 to 550 degrees F. Place a pizza stone in the regular oven, if you have one.
  • Oil a 300-gram ball pizza dough (save the rest for another use) and stretch into a pizza round, then top with 100 grams Cuban pork. Top with shredded cheese and shaved ham.
  • Bake, checking occasionally, until the crust is cooked through, about 8 minutes. Let cool 1 to 2 minutes.
  • Stir together mayo and mustard in a bowl. Top pizza with pickles and Dijon mayo.

MONSTER COOKIE PIZZA

This recipe came about because of an accident with a cookie recipe. My son Aaron was making chocolate chip cookies for the first time with me supervising. He did great with the mixing but when it came time to bake he used the ice-cream scoop to put them on the cookie sheet. We went to check on them because they were going to spread out and we were surprised to find that they were spreading over the side of the pan so while my son got them out of the oven before they started to bake completely, I got a cookie sheet with sides and we sprayed it and scraped the melting cookies on to it. We finished baking them and to our surprise they looked like a pizza because all the chocolate was on the top and the cookie was on the bottom.

1/2 cup shortening
1/2 cup butter
2 1/2 cups all-purpose flour
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1 (12 ounce) package semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • In a mixing bowl beat the shortening and butter with an electric mixer on medium to high speed for 30 seconds. Add 1 1/4 cups of the flour and the brown sugar and beat until thoroughly combined. Add the eggs, 1 at a time, and mix until incorporated. Add the vanilla and baking soda. Beat in the remaining 1 1/4 cups flour and mix until well combined. Stir in chocolate chips.
  • Using a large ice-cream scoop, place full scoops of the batter on a cookie sheet with no sides. Bake for 5 minutes or until they start to melt. Remove from oven and place on a cookie sheet with sides or a medium size jelly roll pan. Finish baking about 6 to 10 minutes or until cookie base is dark brown. Remove from oven and let cool. They can be sliced into squares or broken into pieces.

JIM LAHEY'S NO-KNEAD PIZZA MARGHERITA

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before.

3 cups all-purpose flour or 3 cups bread flour, more for dusting
1/4 teaspoon instant yeast
1 1/2 teaspoons salt
1 1/4 cups water
1 vine-ripened tomatoes (about 5 oz.) or 1 heirloom tomato (about 5 oz.)
1 pinch salt
1/4 teaspoon extra virgin olive oil
5 tablespoons tomato sauce
2 ounces buffalo mozzarella (about 1/4 ball)
basil leaves
1 tablespoon extra virgin olive oil
salt

Steps:

  • To make dough: In a large bowl, mix the flour, yeast, and salt. Add water and stir until blended (the dough will be very sticky). Cover with plastic wrap and let rest for 12 to 24 hours in a warm spot, about 70 degrees.
  • Place the dough on a lightly floured work surface and sprinkle the top with flour. Fold the dough over on itself once or twice, cover loosely with plastic wrap, and let rest for 15 minutes.
  • Shape the dough into 3 or 4 balls, depending on how thick you want the crust. Generously sprinkle a clean cotton towel with flour and cover the dough with it. Let the dough rise for 2 hours.
  • To make sauce: Blanch tomato for 5 seconds in boiling water and quickly remove. Allow to cool to the touch. Peel the skin with your hands and quarter the tomato. Remove the jelly and seeds, and reserve in a strainer or fine sieve. Strain the jelly to remove seeds, and combine resulting liquid in a bowl with the flesh of the tomatoes. Proceed to crush the tomatoes with your hands. Add salt and olive oil and stir.
  • To make pizza: Place pizza stone on the middle rack of the oven and preheat on high broil. Stretch or toss the dough into a disk approximately 10 inches in diameter. Pull rack out of oven and place the dough on top of the preheated pizza stone. Drizzle 5 generous tablespoons of sauce over the dough, and spread evenly. Try to keep the sauce about ½ inch away from the perimeter of the dough. Break apart or slice the buffalo mozzarella and arrange over the dough. Return rack and pizza stone to the middle of the oven and broil for approximately 6 minutes. Remove and top with basil, olive oil, and salt.

  • In the bowl of a stand mixer fitted with a dough hook, pour the warm water in and sprinkle with yeast. Aim for the water to be the warmth of a bottle you’d feed a baby. If the water is too hot, it will kill the yeast. Let stand until yeast is foamy, about 5 minutes.
  • Add olive oil and sugar to yeast mixture. Turn mixer on low and slowly add flour and kosher salt. Turn speed up to medium and mix until everything comes together and forms a ball of dough. Transfer to a lightly floured surface and knead just a couple times to bring it together into a ball. Transfer dough ball to a bowl that has a light coating of olive oil. Turn the dough ball to coat with olive oil. Cover bowl with plastic wrap and set aside in a warm area for about an hour. The dough should approximately double in size.
  • * While dough is rising, prepare pizza toppings (directions below). Place a 12″ cast iron skillet in the oven and preheat oven to 450°F.
  • Cut dough in half. Place both pieces on a floured surface and gently knead each one a few times. You can now prepare both pieces (if making two pizzas, you will need to double the pizza topping ingredients listed) or freeze the second piece by wrapping it in plastic and placing it in a resealable freezer bag for up to 3 months. With a rolling pin, roll a piece of dough into a 10″ round, or the diameter equal to the bottom surface of your 12″ cast iron skillet.
