A Minnesotan's Beef and Macaroni Hotdish image

My grandpa's recipe. Old-school and traditional Minnesota staple.

1 pound ground beef
2 cups elbow macaroni
½ large green bell pepper, coarsely chopped
½ large onion, chopped
1 (16 ounce) can tomato sauce
1 pound tomatoes, coarsely chopped
2 teaspoons Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon salt
¾ teaspoon dried basil
¾ teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon chili powder
¼ teaspoon garlic powder
⅛ teaspoon hot pepper sauce (such as Tabasco®)
1 cup beef broth

Steps:

  • Cook beef in large skillet over medium heat, stirring occasionally, until browned, about 5 minutes. Transfer beef to a bowl.
  • Cook macaroni, bell pepper, and onion in the same skillet over medium heat for 3 minutes. Add cooked beef, tomato sauce, tomatoes, Worcestershire sauce, soy sauce, salt, basil, oregano, ground black pepper, chili powder, garlic powder, and hot pepper sauce. Pour in beef broth. Cover skillet and simmer until macaroni is tender, about 15 minutes. Remove lid and simmer, stirring occasionally, until thickened, 5 to 10 minutes.

Number Of Ingredients 9

1 head celery, approximately 10 stalks
3 to 4 large onions
6 to 8 pounds lean hamburger
2 (2-pound) boxes elbow macaroni
1 (50-ounce) large can Campbell's tomato soup, undiluted
2 (46-ounce) large cans Campbell's tomato juice
1 (46-ounce) large bottle ketchup
1 tablespoon brown sugar
1 teaspoon ground black pepper (freshly ground is best, of course)

Steps:

  • Preheat oven to 350°F with the rack in the middle position. Clean and chop the celery into bite-size pieces. Put them in a frying pan with a little butter and start cooking them over low heat, stirring occasionally. Peel and chop the onions into bite-sized pieces. Add them to the frying pan with the celery and continue to cook them, stirring occasionally, until they're translucent. Brown the hamburger over medium heat. Be sure to "chop" it with a spoon or heat-resistant spatula so it browns in bite-size pieces. You can do this in a pan in the oven. Cook the elbow macaroni according to the directions on the box. Combine the undiluted tomato soup, the tomato juice, and the ketchup. Mix in the brown sugar and the pepper. You can do this right in the electric roaster and heats it before adding the other ingredients. Add the cooked celery and onions to the sauce and stir them in. Stir in the browned hamburger. Add the cooked, drained macaroni and mix well. Once everything is thoroughly mixed, cover the disposable roaster with heavy duty foil and put it into a 350°F. oven for 2 hours, stirring occasionally so that it heats evenly and doesn't stick to the bottom. (If you used an electric roaster, put on the lid, turn it up to 350°F., and cook it for 2 hours, stirring occasionally so that it heats evenly and doesn't stick to the bottom of the roaster.) Notes: This is easiest with three people helping: one person to chop and sauté the celery and onions, one person to brown the hamburger, and one person to cook the pasta and mix the sauce.

Go figure - everyone is being good and posting healthy meals since it is the beginning of the year, and here I am tempting you with a very unhealthy dish! You may be wondering if the title was a typo. But it's not! This side dish gets it's name because it is a popular dish for luncheons after funerals. But don't worry, you can eat this creamy, cheesy side dish anytime - not just following a funeral, thank goodness.

1 ½ cups shredded Cheddar cheese blend
2 (10.5 ounce) cans condensed cream of chicken soup
2 cups sour cream
½ cup melted butter
½ cup onion, chopped
1 (32 ounce) package shredded hash brown potatoes
3 cups coarsely crushed corn flakes
2 tablespoons melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine Cheddar cheese, cream of chicken soup, sour cream, 1/2 cup melted butter, and onions in a large bowl. Gently fold in hash browns and spread out in the prepared baking dish. Cover evenly with crushed corn flakes and drizzle with 2 tablespoons melted butter.
  • Bake in the preheated oven for 30 minutes.

No Mormon funeral or any get-together for that matter is complete without funeral potatoes and a baked ham! This is only a basic recipe. It's good this way, but it's up to you to make it 'gourmet.' You can use potato chips, tortilla chips, or even corn flakes for the topping - I like to use sour cream and onion chips!

2 (10.5 ounce) cans cream of chicken soup
1 pint sour cream
1 ½ cups grated Cheddar cheese
½ cup dehydrated onion flakes
1 (30 ounce) package frozen shredded hash browns, thawed
1 cup crushed potato chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine cream of chicken soup, sour cream, Cheddar cheese, and onions in a large bowl. Mix in hash browns. Pour into a 9x13-inch casserole dish. Sprinkle with crushed potato chips.
  • Bake uncovered in the preheated oven until cheese is melted and top is crisp, about 45 minutes.
