SMALL BATCH CHOCOLATE CHIP COOKIES
Steps:
- Heat oven or toaster oven to 350°F.
- Beat butter and sugars together in small bowl until creamy. Add egg yolk and vanilla; beat until well mixed.
- Combine flour, baking soda and salt in another small bowl. Add flour mixture and chocolate chips to butter mixture. Stir, by hand, until combined.
- Drop dough by rounded tablespoonfuls, 2 inches apart, onto ungreased cookie sheet. Bake 9-11 minutes or until edges are light golden brown.

Steps:
- Preheat oven to 350 degrees.
- Lightly spray a baking sheet with non-stick spray.
- In a medium bowl, mix all of the ingredients together.
- Using your hands, roll dough into 12 balls, flatten each one slightly and place them on a baking sheet.
- Bake for about 15 minutes.
- Remove from oven and let sit for 5 minutes before placing cookies on a wire rack to cool.

- In a medium bowl, beat together with an electric mixer the butter and sugar. Once light and fluffy, add the egg yolk and extracts. Once well incorporated, sprinkle over half the flour mixture and beat gently until combined, then sprinkle over the rest. Beat until no streaks of flour remain, but be careful not to over-mix.
- Dust a clean counter top with flour, and dump the dough out onto it. Gather it into a ball and press it into a 2" thick round disk. Flour your rolling pin, then roll out the dough out big enough to cut out about 8 shapes. Place the shapes on a baking sheet lined with parchment paper or a silicone mat. Gather the dough scraps and re-roll to cut out 4 more shapes and place them on the cookie sheet.
