Black-Bottom Banana Bars image

These bars stay very moist, and their rich banana and chocolate flavor is even better the second day. My mother-in-law gave me this recipe, and it's a big favorite with both my husband and two sons.-Rene Wright, Ferryville, Wisconsin

Number Of Ingredients 10

1/2 cup butter, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups mashed ripe bananas (about 3 medium)
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup baking cocoa

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Stir in the bananas. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. , Divide batter in half. Add cocoa to half; spread into a greased 13x9-in. baking pan. Spoon remaining batter on top and, if desired, swirl with a knife to marble batter. , Bake at 350° until a toothpick inserted in the center comes out clean, about 25 minutes. Cool on a wire rack.

1/2 cup light margarine
1 cup Splenda sugar substitute
2 egg whites
1 teaspoon vanilla
1 1/2 cups mashed bananas
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup cocoa

Steps:

  • Preheat oven 350.
  • Spray 13x9 pan with cooking spray.
  • Cream margarine and splenda.
  • Add egg whites and vanilla, beat until combined.
  • Blend in bananas.
  • Combine flour, baking soda, baking powder and salt.
  • Add to creamed mixture.
  • Divide batter in half and add cocoa.
  • Mix well, Spread cocoa batter into pan.
  • Spread remaining batter over this and swirl with knife
  • Bake 25-30 min till toothpick comes out clean.

  • Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch baking pan and set aside. I use a metal baking pan for this recipe; a glass baking pan may require additional baking time.
  • In a large bowl, whisk together the butter, sugar, egg, vanilla, buttermilk (or sour cream), and mashed bananas. Add the flour, baking powder, baking soda and salt and mix until no dry streaks remain (don't overmix).
  • Scoop half of the batter into a second bowl (about 20-22 ounces of batter if you are weighing your ingredients). Add the cocoa powder to this bowl and mix until evenly combined.
  • Spread the chocolate batter in the prepared pan. It will be a thin layer but should cover the bottom of the pan.
