Really Easy Sugar Free Vanilla Extract, Double Strength image

When we read the ingredients that can be added to vanilla extract we decided to make our own. It's easy, just a lot of wait time but well worth it. You will never buy vanilla extract again...... Grade B beans are what you want for extract and sugar since they are more dehydrated than Grade A.

20 vanilla beans (tahitian grade b vanilla beans)
1 fifth vodka, 80 proof, cheapest swill you can find

Steps:

  • Split beans and chop into 1" pieces.
  • Mix beans and vodka together in a 1 quart canning jar with a canning lid and band and put into a dark cupboard for at least one month. Give it a shake when you think about it.
  • When you are ready to use, strain it through fine muslin a few times to catch the beans and itty bitty seeds. Store tightly covered in a dark place.
  • You can rinse off the chopped beans and dry on several layers of paper towels and add to a jar of sugar. Just sift the sugar before using.
  • The longer it steeps the better it gets. Do not freeze or refrigerate as this will kill it. This will last until Armageddon. Make extra and stash away for gift giving.

1/4 cup sugar
1 teaspoon lemon juice
1 teaspoon margarine
1 teaspoon vanilla
1 teaspoon vanilla extract or 1 teaspoon almond extract
1/4 teaspoon salt
1/4 teaspoon xanthan gum

Steps:

  • drain tofu for at least 2 hours.
  • discard liquid.
  • combine all ingredients in food processor until smooth.
  • use immediately.

1/2 cup vodka
4 vanilla beans

Steps:

  • Put the vodka in a sterilized glass container.
  • Break or chop the beans into pieces and drop into the vodka.
  • Cover the vodka with a lid.
  • Let sit on a shelf for 2 weeks, shaking every other day.
  • Use a tad bit less than you would regular vanilla extract.
  • When you are gettting low, just add more vodka if the beans still smell good.

1/2 cup warm water

Steps:

  • Slit beans down the middle, and scrape down seeds.
  • Place both in glycerin and warm water.
  • Place in a dark jar (or a light jar in a dark place).
  • Let sit for a month or so.
  • Shake often.
  • Strain. (optional).
