Raspberry Chipotle Glaze for Ham image

Add something new to your traditional ham entree with this easy glaze. It covers an 8- to 10-pound ham and provides about 20 servings. -Mary Lou Wayman, Salt Lake City

Yield 1-2/3 cups (enough for an 8- to 10-pound ham).

Number Of Ingredients 5

1 jar (12 ounces) seedless raspberry jam
2 tablespoons white vinegar
2 chipotle peppers in adobo sauce, drained, seeded and minced
2 to 3 garlic cloves, minced
2 teaspoons coarsely ground pepper

Steps:

  • In a small saucepan, combine the jam, vinegar, peppers and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Brush over ham during the last 30 minutes of cooking. Sprinkle with pepper before serving.

1 cup raspberry preserves
1/2 cup Dijon mustard
1 fully cooked bone-in ham (18 to 20 pounds)

Steps:

  • Preheat the oven to 325 degrees F. Mix together the preserves and mustard in a small bowl and set aside.
  • Score the surface of the ham in a diamond pattern, about 1/8 inch deep. Bake according to the package instructions, 2 1/2 hours or longer. About 30 minutes before the cooking time is up, remove the ham from the oven and brush the glaze onto it. Cook until it's nice and glossy. Repeat with another layer of glaze if desired.
  • Serve the remaining glaze in a dish alongside the ham.

1 bone-in fully cooked spiral-sliced ham (9 to 10 pounds)
2-1/4 cups seedless raspberry jam
3 tablespoons white vinegar
3 chipotle peppers in adobo sauce, drained, seeded and minced
3 to 4 garlic cloves, minced
1 tablespoon coarsely ground pepper

Steps:

  • Place ham on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2-1/2 hours;. , Meanwhile, in a small saucepan, combine the jam, vinegar, peppers and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Brush some of the sauce over ham. Bake 30-35 minutes longer or until thermometer reads 140°, brushing twice with sauce. Sprinkle pepper over ham. Serve with remaining sauce.

  • First, make the glaze: In a medium saucepan, combine the raspberries, both sugars, vinegar, orange juice, chipotle, shallot halves, rosemary, cinnamon stick, salt and pepper. Set the pan over medium heat and bring to a boil, then reduce the heat and simmer, stirring often, for 8 to 10 minutes or until it’s a deep red and has thickened. Remove from heat, cover and let stand for 3 minutes. Carefully strain the sauce into a bowl and discard the solids. Stir in the orange zest. Measure out ½ cup and reserve for serving.
  • Preheat the oven to 325F degrees and arrange the rack in the centre position. Using a sharp knife, score the ham into a diamond pattern using ½-inch diagonal cuts. Arrange flat-side-down, in a large roasting pan. Add enough water to cover the bottom of the pan and come ¼ inch up the sides. Brush the ham with half of the glaze.
  • Bake, basting every 30 minutes, for 2 to 2 ½ hours or until the ham is shiny and sticky, and the internal temperature registers 160F degrees on a meat thermometer when inserted into the centre of the roast (away from the bone). Tent with foil and let stand for 10 minutes. Then carve the roast into slices, arrange on a platter and serve with the reserved glaze.
