BERRY PIE BAKED ALASKA

1 sheet frozen puff pastry, thawed and cut in half
3 tablespoons sugar
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted
Cooking spray
4 pints assorted berry and cherry ice cream and sorbet
1/4 cup seedless raspberry jam
6 large egg whites, at room temperature
Pinch of cream of tartar
1 cup sugar
1/4 cup freeze-dried strawberries, finely crushed

Steps:

  • Make the ice cream cake: Preheat the oven to 400˚. Put the puff pastry halves on a baking sheet, leaving a little space between each piece. Top with another baking sheet to keep the pastry from puffing up too much. Bake until golden, about 30 minutes.
  • Combine the sugar and cinnamon in a small bowl. Remove the top baking sheet and brush the pastry with half the melted butter. Sprinkle with half the cinnamon sugar, then flip the pastry; brush with the remaining butter and sprinkle with the remaining cinnamon sugar. Let cool.
  • Coat a 9-by-5-inch loaf pan with cooking spray and line with plastic wrap, leaving a 6-inch overhang on the two short ends. Trim the puff pastry pieces if necessary so they fit snugly in the pan; set aside.
  • Scoop half the ice cream and sorbet into the pan, alternating flavors. Use a piece of plastic wrap to pack in the ice cream evenly. Spread with half the jam and top with 1 piece of puff pastry. Repeat with the remaining ice cream and sorbet, jam and puff pastry. Cover with the overhanging plastic wrap and freeze until firm, at least 6 hours or overnight.
  • Make the meringue: Beat the egg whites and cream of tartar in a large bowl with a mixer on medium-high speed until foamy, 30 seconds to 1 minute. Gradually beat in the sugar. Increase the mixer speed to high and beat until stiff, shiny peaks form, 4 to 5 minutes. Add the freeze-dried strawberries and beat until combined, about 1 minute.
  • Uncover the ice cream cake and invert onto a foil-lined baking sheet. Let stand until the ice cream cake slips out of the pan easily; unwrap. Spread one-quarter of the meringue over the top and sides. Transfer the remaining meringue to a large piping bag fitted with a 1/2-inch star tip. Pipe over the top and sides of the cake. Freeze until firm, at least 4 hours and up to 2 days.
  • Brown the meringue with a kitchen torch (or bake at 500˚ until golden, 3 to 5 minutes). Use two large spatulas to transfer the baked Alaska to a platter and slice.

1/2 cup butter, cubed
2 ounces unsweetened chocolate, chopped
1 cup sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped hazelnuts
2 quarts vanilla ice cream, softened, divided
1/2 cup chopped pistachios
1/2 teaspoon almond extract
6 drops green food coloring, optional
1/3 cup chopped maraschino cherries
1 tablespoon maraschino cherry juice
1 tablespoon rum
MERINGUE:
8 large egg whites, room temperature
1 cup sugar
1 teaspoon cream of tartar

Steps:

  • Preheat oven to 350°. In a microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually stir into chocolate mixture. Stir in hazelnuts., Spread into a greased 8-in. round baking pan. Bake until a toothpick inserted in the center comes out with moist crumbs (do not overbake), 35-40 minutes. Cool 10 minutes before removing from pan to a wire rack to cool completely., Meanwhile, line an 8-in. round bowl (1-1/2 qt.) with foil. In a smaller bowl, place 1 qt. ice cream; add the pistachios, almond extract and, if desired, food coloring. Quickly spread ice cream over bottom and up sides of foil-lined bowl, leaving the center hollow; cover and freeze for 30 minutes., In a small bowl, combine cherries, cherry juice, rum and remaining 1 qt. ice cream. Pack ice cream into hollow center of 8-in. bowl; cover and freeze., In a large heavy saucepan, combine egg whites, sugar and cream of tartar. With a hand mixer, beat on low speed 1 minute. Continue beating over low heat until egg mixture reaches 160°, about 8 minutes. Transfer to a bowl; beat until stiff glossy peaks form and sugar is dissolved., Place brownie on an ungreased foil-lined baking sheet; top with inverted ice cream mold. Remove foil. Immediately spread meringue over ice cream, sealing to edges of brownie. Freeze until ready to serve, up to 24 hours., Preheat oven to 400°. Bake until meringue is lightly browned, 2-5 minutes. Transfer to a serving plate; serve immediately.

1 cup raspberry sherbet, slightly softened
1 1/3 cups vanilla ice cream, slightly softened
Unsweetened baking cocoa
1 1/4 cups bittersweet chocolate chips
1/3 cup butter
1 2/3 cups sugar
2 whole eggs
3/4 cup Gold Medal™ all-purpose flour
1/8 teaspoon baking powder
1/8 teaspoon salt
2 1/4 teaspoons vanilla
2 egg whites
1/4 teaspoon cream of tartar

Steps:

  • Spray 4 (6-oz) custard cups with cooking spray. Spoon 1/4 cup sherbet into each cup, pressing firmly up sides of cups. Scoop 1/3 cup ice cream onto raspberry layer in each cup, spreading to edge and pressing firmly. Cover surface with plastic wrap. Freeze at least 2 hours or until firm.
  • Heat oven to 350°F. Spray 8-inch square pan with cooking spray; line with waxed paper. Grease waxed paper with shortening; lightly sprinkle with cocoa.
  • In large microwavable bowl, microwave chocolate chips and butter uncovered on Medium (50%) 1 minute 30 seconds, stirring after 30 seconds, and then at 15-second intervals; stir until smooth. Stir in 1 1/3 cups of the sugar with whisk. Add whole eggs, one at a time, stirring just until blended after each addition. Gradually add flour, baking powder and salt, stirring with whisk just until blended. Stir in 2 teaspoons of the vanilla. Spread batter in pan.
  • Bake 20 to 25 minutes or until set. Cool 5 to 10 minutes on cooling rack. Run small metal spatula around edge of pan to loosen brownie. Invert pan on cooling rack; remove pan and waxed paper. Cool completely, about 40 minutes.
  • Line cookie sheet with cooking parchment paper. Using 3 1/4-inch cutter, cut out 4 brownie rounds. Place rounds on cookie sheet about 2 inches apart. Remove ice cream cups from freezer. Run small metal spatula around edge of each cup to loosen ice cream. Immediately turn each cup upside down onto a brownie round; remove cups. Freeze ice cream-topped brownies just until ready to use.
  • Heat oven to 450°F. In small deep bowl, beat egg whites, cream of tartar and remaining 1/4 teaspoon vanilla with electric mixer on high speed until foamy. Gradually add remaining 1/3 cup sugar, 1 tablespoon at a time, beating on high speed until stiff glossy peaks form and sugar is dissolved. Do not underbeat.
  • Using offset spatula, spread meringue over ice cream-topped brownies, carefully sealing meringue to bottom edge of brownie. Bake 3 to 4 minutes or until browned. Serve immediately.

An wonderful make-a-head summer pie. This recipe calls for raspberries and vanilla ice cream but please use any combination of your choosing. Freeze and serve later. Serve plain or with your favorite sundae sauce.

1 9-inch baked pie crust
16 large marshmallows
1 tablespoon water
2 egg whites
1/4 cup sugar
1/4 teaspoon salt
2 cups fresh raspberries, chilled
1 quart vanilla ice cream
2 cups raspberries
3/4 cup sugar
1/2 cup water
1/2 cup currant jelly

Steps:

  • Chill baked crust.
  • Preheat broiler 10 minutes or so.
  • In a heavy-bottomed sauce pan add marshmellows and water heat over low heat until melted.
  • Stir constantly.
  • Set aside.
  • Beat egg whites until stiff.
  • Add sugar and salt.
  • Mix well.
  • Fold in marshmellow mixture until well incorporated.
  • Remove crust from fridge.
  • Sprinkle crust with 1 cup of berries.
  • Fill crust with ice cream.
  • Sprinkle ice cream with 1 cup of berries.
  • Top with meringue covering pie completely.
  • Broil several inches inches below heat until lightly browned.
  • Serve at once plain or with your favorite sauce*.
  • (This pie may be frozen as soon as pie is browned. Remove from oven and place in freezer. After an hour, remove from freezer and cover with plastic. Return to freezer. To serve: let stand at room temp for 45 minutes.) Raspberry Sauce: Heat though and serve.

  • Bring raspberries, sugar, and ¼ cup water to a boil in a small saucepan over medium heat. Reduce heat to medium-low and simmer 4 minutes. Fill half the scoop with sorbet and the rest of the scoop with ice cream. Arrange scoop of sorbet/ice cream flat side down in the center of each round. Freeze until ice cream is very hard, at least 30 minutes.
