Steps:
- Preheat oven to 400°F (200˚C).
- Slice the potatoes in half, lengthwise, then slice each half lengthwise three times and across four times, to cube.
- Bring a large pot of water to a boil and drop in chopped potatoes, cook 10 minutes.
- Drain potatoes and mix in ranch, garlic powder, paprika, salt, and pepper.
- Transfer to a 9x13-inch (23x33 cm) baking dish.
- Bake for 30-35 minutes, or until nicely browned.
- While still hot, mix in cheddar and chives.
- Allow to cool for 5 minutes.

- In a gallon zip-top storage bag, combine potatoes, onion, pepper (if using), and oil.
- Toss to coat vegetables with oil.
- Add paprika and ranch dressing mix, toss again until coated with seasonings.
- Bake in an ungreased baking pan 30-35 minutes until potatoes are browned, or cook longer for crispier potatoes.
- Remove from oven and top with cheeses, return to oven for 2-3 minutes to let cheese melt.

- Preheat oven to 350 degrees F. Mix together (in a large bowl) the ranch dressing, dill, cheese and bacon. Add in the potatoes. Sprinkle in a pinch of salt and pepper. Toss to coat potatoes. Spoon into a greased 9 x 13 baking dish. Cover with foil. Bake for 60 minutes. Stir gently halfway through to get the bottom potatoes rotated so they don't become burnt and to ensure that the middle and top potatoes get a chance to brown. Remove foil. Raise oven temperature to 400 degrees. Gently stir again, as necessary. Bake for an additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is gooey, browned and bubbly on top. Serve with scallions sprinkled on top for garnish. Great with a dollop of sour cream.

- Place the potatoes in a large bowl cover with cold water, let sit for 30 minutes. Prepare the ranch sauce while you wait. Combine all the ingredients in a bowl and whisk until smooth.
- Position a rack in the center of the oven and preheat the oven to 425ºF. Grease a large rimmed baking sheet with 1 tablespoon of olive oil. I used a pastry brush to help the process.
- Drain the potatoes, rinse a few times with running water and pat dry with paper towel. Toss the potatoes in the remaining 2 tablespoons of olive oil. In a small bowl, combine the chili powder, garlic, cumin, red pepper flakes, a big pinch of salt and pepper. Sprinkle the seasonings on the potatoes, tossing as you go to ensure they're all seasoned.
- Spread in a single layer onto the baking sheet, bake for 30-35 minutes, tossing half way in between using a thin metal spatula. Bring the potatoes to the center of the baking sheet and top with shredded cheese. Let the cheese melt in the oven for another 1-2 minutes. Top with scallions and drizzle with desired amount of ranch sauce. Serve immediately.
