1 package (16 ounces) ziti or small tube pasta
1 large egg, lightly beaten
1 carton (15 ounces) part-skim ricotta cheese
1/2 cup grated Parmesan cheese, divided
1 jar (28 ounces) meatless spaghetti sauce
2 cups shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions. Drain pasta; set aside. In a small bowl, combine the egg, ricotta and 1/4 cup Parmesan cheese. , Spread 1 cup spaghetti sauce in a 13x9-in. baking dish coated with cooking spray. Top with a third of the pasta, half of the ricotta mixture, 2/3 cup mozzarella cheese, 1 tablespoon Parmesan cheese and 1 cup sauce. Repeat layers of pasta, ricotta mixture and mozzarella cheese. Sprinkle with 2 tablespoons Parmesan cheese. Top with remaining pasta, sauce mozzarella cheese and Parmesan cheese. , Cover and bake at 375° for 45-50 minutes or until heated through.

Baked Ziti is an easy, saucy, and cheesy pasta casserole. It has all of the great flavors of Lasagna but is simple to prepare and serve as a pasta bake.

1 lb ziti pasta (or penne pasta)
1 lb ground beef (85% lean)
1 onion (chopped)
2 garlic cloves (minced)
1 tsp salt
1/2 tsp black pepper
5 cups marinara sauce
15 oz fresh ricotta
10 fresh basil leaves
12 oz mozzarella cheese (shredded, divided)
1 cup grated parmesan cheese (divided)

Steps:

  • Cook pasta in salted water according to package instructions until just aldente them drain (so not overcook since they will continue to cook in the oven).
  • In a deep pan or dutch oven, over medium-high heat, cook ground beef and onion, breaking up the beef with a spatula, until beef is fully cooked through and onions are softened (5-7 minutes). Add minced garlic, 1 tsp salt, 1/2 tsp pepper and sautee another minute. Add 5 cups marinara, bring to a simmer and continue cooking 5 minutes then turn off the heat.
  • Spread a ladle of meat sauce over the bottom of a 9x13 casserole dish.
  • Into the remaining sauce, add chopped basil and spoon in ricotta. Add cooked pasta and stir just until noodles are coated (you want to keep that ricotta texture)
  • Transfer half of the pasta to the casserole dish. Top with 1/2 of shredded mozzarella and 1/2 grated parmesan. Add remaining pasta and top with remaining mozzarella and parmesan.
  • Clear the edges of the pan so the cheese doesn't burn onto the dish. Bake at 350˚F for 25 minutes. Broil 1-2 minutes to brown the cheese. Let cool 5 minutes then garnish with basil if desired and serve.

This bubbling baked ziti is perfect for feeding a crowd, and it freezes well too.

1 lb ziti noodles
1.5 lbs ground spicy or sweet Italian sausage (or removed from casings)
4 cloves garlic, minced
1 (28-oz) can crushed tomatoes
1 teaspoon salt
1½ teaspoons sugar
¼ teaspoon crushed red pepper flakes
1 cup heavy cream
⅓ cup plus 3 tablespoons grated pecorino Romano (or Parmigiano Reggiano) cheese, divided
⅓ cup chopped fresh basil, plus more for serving
8 oz whole milk mozzarella cheese, shredded (about 2 cups)

Steps:

  • Bring a large pot of salted water to a boil. Cook the ziti according to the package directions for very al dente, about 7 minutes. (It will continue to cook in the oven so you want to undercook it just a bit.) Drain and add the pasta back to the pot. Set aside.
  • Preheat the oven to 425°F and set the oven rack in the middle position.
  • Heat a large sauté pan (preferably nonstick) over medium-high heat. Crumble the sausage into the pan and cook, breaking apart with a wooden spoon, until lightly browned and just cooked through, 5 to 6 minutes. Use a slotted spoon to transfer the cooked sausage to a plate. Drain all but 1 tablespoon of the fat from the pan and set over low heat (if you don't have enough fat in the pan, add a tablespoon of olive oil). Add the garlic and cook, stirring constantly with a wooden spoon, until soft but not browned, about 1 minute. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer, uncovered, for 10 minutes.
  • Add the cream, ⅓ cup of the pecorino Romano, cooked sausage, and basil to the pan; stir until evenly combined. Carefully pour the contents of the sauté pan into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 9 x 13-inch baking dish. Sprinkle with half of the shredded mozzarella and half the remaining pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and pecorino Romano. Transfer to the oven and bake, uncovered, until the cheese has melted and browned, 15 to 20 minutes. Sprinkle with more basil and serve.
  • Make-Ahead/Freezer-Friendly Instructions: The dish can be assembled, covered, and refrigerated for up to 2 days in advance, or frozen for up to 3 months. (If frozen, defrost in the refrigerator overnight.) Whether refrigerated or frozen and defrosted, bake, covered tightly with aluminum foil, in a 425°F oven for 25 minutes. Then uncover and bake for another 10 to 15 minutes, until the cheese is lightly browned and the pasta is hot throughout.

2 cups tomato sauce, divided
¼ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook ziti in boiling water until cooked through but firm to the bite, about 13 minutes; drain. Rinse ziti with cold water until cool; drain.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix ziti, ricotta cheese, 1 1/2 cups tomato sauce, mozzarella cheese, egg, salt, and pepper in a large bowl.
  • Spread 1/2 cup tomato sauce into the bottom of a 2 1/2-quart shallow baking dish. Pour ziti mixture into the dish. Top with remaining 1 1/2 cup tomato sauce and Parmesan cheese.
  • Bake in preheated oven until sauce and cheese layer is bubbly and lightly browned, about 30 minutes. Let cool 10 minutes before serving.

1 (15 ounce) container ricotta cheese
¼ cup grated Parmesan cheese
1 (28 ounce) jar meatless spaghetti sauce, divided
2 cups shredded part-skim mozzarella cheese, divided
¼ cup grated Parmesan cheese, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in ziti pasta and return to a boil. Cook pasta, stirring occasionally, until cooked through but still firm to the bite, about 11 minutes; drain.
  • Combine egg, ricotta cheese, and 1/4 cup Parmesan cheese in a bowl. Spread 1/3 the spaghetti sauce in prepared baking dish. Top with 1/2 the pasta, 1/2 the ricotta mixture, 1/3 the spaghetti sauce, 1/2 the mozzarella cheese, and 1/2 the Parmesan cheese; repeat layers. 3 ½ cups pasta sauce (divided)
25 ounces cheese ravioli (frozen)
2 cups cottage cheese
2 cups Mozzarella cheese (shredded)
½ cup Parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Spread 1 cup of pasta sauce in ungreased 9 x 13 inch pan.
  • Arrange ½ of the frozen ravioli over pasta sauce, covering the bottom of the pan.
  • Top with ½ of the remaining pasta sauce, 1 cup of cottage cheese, and 1 cup of mozzarella cheese. Repeat layers again starting with ravioli.
  • Top with parmesan cheese. Bake for 30-40 minutes or until cheese begins to bubble.
  • To make into a freezer meal, assemble casserole as directed above in freezable container. Secure with lid and freeze for up to 30 days. Thaw for one hour before baking. Bake at 350 degrees for 40-50 minutes, or until cheese begins to bubble.

1-1/2 lbs pasta (ziti, shells, penne or rigatoni pasta)
2 lbs. ricotta cheese
8 oz. shredded mozzarella
8 oz. Romano or Parmesan grated cheese
1 T dried parsley
1/8 tsp. black pepper
1-1/4 lbs. ground beef (brown and drain fat)
2 - 64 oz. Jars of pre-made sauce (may only need 1.5 jars)

Steps:

  • There are a couple of ways to assemble the Casserole: One Way: Cook pasta, drain and put into large bowl. Mix with approximately 1 cup of sauce. Set aside. Mix ricotta cheese in a bowl with parsley and Romano or Parmesan grated cheese. Brown and drain ground beef and then add to the remaining first jar of sauce. Spread some sauce on bottom of pan. Add layer of pasta. Then add 6 large spoonfuls of ricotta mixture, sprinkle with mozzarella, and cover in a thin layer of sauce. Repeat layers of pasta, ricotta mixture, mozzarella and sauce. Last layer should be pasta and as much of the second jar of sauce to have a moist casserole. Bake in preheated 350-degree oven for 45min (or until lightly browned). Bring casserole hot to the Team Dinner. Another Way: Cook pasta, drain and put into a large bowl. Mix with the ricotta cheese, Romano or Parmesan cheese, mozzarella cheese, parsley, pepper, and 1-jar of sauce. Put mixture into a disposable aluminum pan. Add as much of the second jar of sauce to the top to ensure a moist casserole. Bake for 45min (or until lightly browned) in a preheated 350-degree oven. Bring casserole hot to the Team Dinner.
