RAMEN NOODLE SLAW

Ramen Noodle Slaw image

This summer my son graduated from high school, and we attended over 20 graduation parties. Needless to say, we're now broke (lol), but I also got quite a few wonderful recipes. This is one of them. To make it a complete meal, just add chicken. While this does not have to be cooked, I added 30 minutes under "cooking time" because it does have to chill for 30 minutes.

Mother gave me this recipe 40 years ago, and we still love it. The oil and vinegar, mixed with the Ramen noodle flavor packet, make a light dressing for this luscious salad which keeps well. Great for buffets and covered-dish suppers!

Refrigerate any leftovers-it'll still taste great for a day or two, if you can keep people out of it that long! -Cornelia Cree, Waynesville, North Carolina
