Rainbow Trout, Tomatoes, and Basil in Parchment image

This parchment-baked trout is about as simple as dinner gets. It's also fast and requires virtually no cleanup.

4 fillets rainbow trout
Kosher salt and freshly ground pepper
2 small tomatoes, sliced
Extra-virgin olive oil, for drizzling
1 cup fresh basil leaves, torn if large

Steps:

  • Heat oven to 400 degrees. Arrange fillets in the center of parchment rectangles. Season with salt and pepper and top with tomatoes. Drizzle with oil.
  • Fold parchment closed and transfer to a rimmed baking sheet.
  • Bake until fish is cooked through, 12 to 14 minutes. Top with basil before serving.

2 large carrots , cut into batons
3 celery sticks, cut into batons
1 tbsp olive oil
½ tsp sugar
6 tbsp white wine vinegar
4 x 175g trout fillets
basil leaves
juice 1 lemon

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Put the carrots and celery in a pan with the oil, sugar, wine, salt and pepper. Bring to the boil, tightly cover, then cook for 10 mins until the vegetables are tender. Cool.
  • Cut four large sheets of baking parchment, about 35cm square. Divide the vegetables between them and top each with a trout fillet. Scatter a few basil leaves and a little lemon juice over each, then season the fish with a little salt and pepper. Fold the paper in half and double fold all round to seal in the fish, a bit like a pasty.
  • Put the parcels on two baking sheets and bake for 15-20 mins (depending on the thickness of the fish). Serve in their paper with some steamed new potatoes.

1 ½ tbsp olive oil
1 shallot , thinly sliced
2 garlic cloves , crushed
1 bay leaf
400g can good-quality chopped tomatoes
1 tsp sherry vinegar
1 tbsp butter
2 rainbow trout fillets, pin-boned, skin left on (if the fillets are large, cut in half lengthways or ask your fishmonger to do this for you)
handful mixed olives , stones removed
handful basil , shredded
good-quality extra-virgin olive oil , for drizzling

Steps:

  • In a frying pan, heat 1 tbsp of oil over a low-medium heat. Add the shallot and a pinch of salt, then cook, stirring occasionally, for 8 mins until softened and the edges begin to brown. Stir in the garlic and cook for 1 min, then add the bay leaf, tomatoes, vinegar and seasoning. Stir well, bring to the boil, then reduce the heat and simmer gently for 15 mins.
  • After the sauce has been simmering for 7 mins, heat the remaining oil with the butter in a non-stick frying pan over a medium-high heat. Season the fish well and place, skin-side down, in the pan. Cook for 4 mins - try not to move the fish so the skin gets evenly coloured. Flip over and continue to cook for 2 mins or until the flesh begins to flake in large chunks.
  • Season the sauce to taste, then spoon some onto each plate and top with a fillet. Scatter over the olives and the basil, then drizzle over the extra virgin olive oil to serve.

Rainbow Trout Baked in Foil With Tomatoes, Garlic and Thyme image

My friend Christine always makes salmon prepared this way when I arrive at her home in Provence after my long trip from California. It's a great dish to make when you don't know exactly when guests are going to arrive, as everything can be prepared in advance and the fish can be baked at the last minute. I've adapted Christine's salmon recipe to rainbow trout, which are farmed in a sustainable way and less expensive than wild salmon.

Extra virgin olive oil for the foil
4 small rainbow trout, boned
Salt and freshly ground pepper
1 pound ripe tomatoes in season, peeled, seeded and chopped
2 garlic cloves, minced
1 tablespoon extra virgin olive oil
4 to 8 sprigs fresh thyme
Chopped fresh parsley or thyme for garnish
Lemon wedges for serving

Steps:

  • Preheat the oven to 450 degrees. Cut 4 sheets of heavy-duty aluminum foil, or 8 sheets of lighter foil, into squares that are 3 inches longer than your fish. If using lighter foil, make 4 double-thick squares. Oil the dull side of the foil with olive oil and place a trout, skin side down, on each square. Season both sides with salt and pepper and open them out flat.
  • In a bowl combine the tomatoes, garlic, 1 teaspoon olive oil and salt and pepper to taste. Spoon over the middle of each trout. Place 1 or 2 sprigs of thyme on top, and fold the two sides of the trout together. Drizzle 1/2 teaspoon olive oil over each fish.
  • Making sure that the trout are in the middle of each square, fold the foil up loosely, grab at the edges and crimp together tightly to make a packet. Place on a baking sheet and bake for 10 to 15 minutes, checking one of the packets after 10 minutes. The flesh should be opaque and pull apart easily when tested with a fork.
  • Place each packet on a plate. Carefully cut across the top to open it, taking care not to let the steam from inside the packet burn you. Gently remove the fish from the packet and pour the juices over. Sprinkle with parsley or thyme and serve, passing the lemon wedges.

  • In a small bowl, combine all the ingredients for the Lemon Garlic Butter and mix well. Set aside.
  • In a large, non-stick skillet, heat 1 tsp olive oil over just a bit higher than medium heat. Add 1 Tbsp of the Lemon Garlic Butter to the pan. Once melted, add the whole cherry tomatoes. Sprinkle with some salt and pepper and cook, swirling the pan to move the tomatoes around, until the skin on the tomatoes is just starting to wilt, but not cracking open, about 2-3 minutes. Remove cherry tomatoes to a bowl, loosely cover with aluminum foil (to keep them warm) and set aside.
  • Your skillet should be dry-ish (at least without tomato liquid). If not, wipe clean. Return skillet to heat, just a touch over medium heat. Add 1 tsp of olive oil and allow to heat.

  • Boil water for pasta. *Tip: for this small amount of pasta, use a deep, wide skillet for the job. The water will boil more quickly! Once water is boiling, salt water and add your pasta. Cook until al dente. Drain well and remove to a medium bowl. Add butter and stir until butter is melted and pasta is coated well. Add Parmesan, parsley, salt and pepper. Stir well to combine. Drizzle with lemon juice and stir to combine. Set aside.
  • While pasta is cooking, prepare your parchment hearts. Cut two pieces of parchment 15-inches x 12-inches. Fold in half to make a 7 1/2-inch x 12-inch rectangle. Starting from the bottom fold corner, cut the bottom of the heart shape to the open side. Leave a few inches of the open side flat, then cut the top curve back towards the top fold edge (see photo below). Open up your parchment hearts and lay flat on a work surface.
  • Place a pile of your pasta in the centre, just to the right of the centre fold. Keep it a couple of inches from the side edge. Top with a fillet of rainbow trout. Season trout with salt and pepper and a pat of butter. Top with a couple of thin slices of lemon. Tuck a couple of broccolini stalks next to it (on the centre fold side). Fold the unfilled parchment side over-top to enclose. Starting from the bottom heart point, begin folding the edges in, over-lapping and pinching as you go to keep the shape. Once you get to the top, work your way back down, folding over again and folding/pinching as you go. End with twisting the bottom point a bit to seal. Place packets on a baking sheet.
