SOUR CREAM AND HORSERADISH SAUCE

We use this dipping sauce for Beef Fondue or prime rib. It has lots of flavor and I like that the horseradish isn't too over powering.

Ingredients

3/4 cup sour cream (I use fat free.)
2 tablespoons prepared horseradish
1 whole green onion (green and white parts finely chopped)
1 teaspoon lemon juice
1/4 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper

Steps:

Mix all the ingredients in a small bowl.
Cover and let stand at room temperature for 1 hour for the flavors to blend.
Refrigerate any leftovers.

Ingredients

2 bunches of radishs, washed and cleaned..save the tops for rasdish soup
1/2 c sour cream or greek yogurt
a pinch of sugar or salt

Steps:

1. Slice the radishes juliene style. Add a pinch of salt or sugar (my mom like the sugar). Set in refig. Just before serving add the sour cream. Mix to incorporate. Serve immediately.

Heat oil in a large saucepan over medium-high heat. Add 1 3/4 cups radishes and onion and cook, stirring frequently, until the onions are beginning to brown and the radishes are translucent, about 5 minutes. Add potato, milk, salt and pepper to taste. Bring to a boil, stirring occasionally. Reduce heat to a simmer, cover and cook, stirring occasionally, until the potato is tender, about 5 minutes more.
Working in batches, puree the mixture in a blender (or in the pan with an immersion blender) until smooth. (Use caution when pureeing hot liquids.)
Slice the remaining 1/4 cup radishes into matchsticks. Serve each portion of soup topped with 1 tablespoon sour cream, some radish matchsticks and a sprinkling of radish greens (or parsley).
