Lamb like this is a total treat - it looks dramatic, and gives you tender blushing meat, with an irresistible feisty crumb. It's also easy to scale up or down for two, six or eight, just tweak the timings instinctively.

2 x French-trimmed 7-bone racks of lamb, (caps, fat and sinews removed)
olive oil
unsalted butter
3 cloves of garlic
100 g shelled pistachios
1 bunch of fresh flat-leaf parsley, (30g)
75 g bread
1 whole nutmeg, for grating
Dijon mustard
GREEN BEANS
350 g fine green beans
1 tablespoon white wine vinegar
extra virgin olive oil
½ a lemon
3 sprigs of fresh tarragon

Steps:

  • Get your meat out of the fridge and up to room temperature before you cook it. Preheat the oven to 180ºC/350ºF/gas 4.
  • Drizzle the lamb racks with olive oil and sprinkle generously with sea salt and black pepper, patting the seasoning all over the meat.
  • Sear in a hot frying pan on a high heat with a little extra oil and 1 knob of butter for 2 to 3 minutes, turning with tongs until golden all over, then remove the racks to a roasting tray and let them cool.
  • Peel 2 cloves of garlic and place in a food processor with the pistachios and parsley (stalks and all). Tear in the bread, finely grate in half the nutmeg and blitz into a fine green crumb.
  • Generously brush each lamb rack with mustard, then cover with the herby crumb, patting it all over the top and sides.
  • Roast for 25 minutes, until the crust is crisp, to give you beautifully blushing lamb. Remove from the oven and leave the lamb to rest for 10 minutes.
  • Meanwhile, trim just the stalk ends off the green beans and cook for 6 to 7 minutes in a pan of boiling salted water.
  • Crush the remaining unpeeled clove of garlic through a garlic crusher into a jar and mix with 1 teaspoon of mustard, the vinegar, 2 tablespoons of extra virgin olive oil and the lemon juice, then taste and season to perfection.
  • Finely chop and add the tarragon leaves. Drain the beans and toss with the dressing. Carve up the lamb and serve with the dressed green beans and my potato al forno.

1/2 cup fresh bread crumbs
2 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1 garlic clove, minced
2 tablespoons olive oil
2 frenched racks of lamb (1-1/2 pounds each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 375°. In a shallow dish, combine bread crumbs, parsley, thyme and garlic. Add oil and toss; set aside. Sprinkle lamb with salt and pepper. In a large skillet, brown meat on both sides. Brush mustard over top of meat, then roll in crumb mixture., Place racks in a shallow baking pan side by side with bones interlaced resting against each other. Bake 30-40 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 10 minutes before slicing.

4 ounces creamy goat cheese, such as Montrachet
1 1/4 cups panko (Japanese bread flakes)
1 tablespoon minced garlic (3 cloves)
1 tablespoon minced fresh rosemary leaves
2 teaspoons minced fresh thyme leaves
Fleur de sel or sea salt and freshly ground black pepper
Good olive oil
2 racks of lamb (1 1/2 pounds each), trimmed and frenched
3 tablespoons good Dijon mustard

Steps:

  • Preheat the oven to 450 degrees F. Line a sheet pan with aluminum foil.
  • In a medium bowl, crumble the goat cheese with a fork. Add the panko, garlic, rosemary, thyme, 1 teaspoon fleur de sel, and 1 teaspoon pepper. Drizzle with 3 tablespoons olive oil and stir to moisten the crumbs. Set aside for a few minutes or cover and refrigerate.
  • Remove the racks of lamb from the refrigerator 30 minutes before you plan to cook them. Place the lamb, fat side up, on the prepared pan. Sprinkle with 2 teaspoons fleur de sel and 1 teaspoon pepper. Roast for 12 minutes exactly. Remove from the oven and, working quickly, use a knife to spread the mustard on the top of the lamb. Spread the crumb mixture evenly on the mustard, pressing gently to help the mixture adhere. Return the lamb to the oven right away and continue roasting for another 12 to 18 minutes (depending on the size of the lamb), until the crumbs are golden brown and the meat is 120 degrees F for rare or 125 degrees F for medium rare. (Insert an instant-read thermometer horizontally through the meat.)
  • Cover loosely with aluminum foil and allow the lamb to rest for 8 minutes. Cut the racks into single or double chops and serve hot.

I'm a big fan of nice, thick lamb chops-and I'm an even bigger fan of nice, thick lamb chops deliciously browned all over! That's exactly what you get with this recipe. Since you remove two bones from an eight-bone rack, these babies are thicker than a normal lamb chop. And, because you sear the chops on both sides-and the fat edge-before schmearing them with the lovely olive purée and finishing them in the oven, the inside stays tender and juicy, and the outside gets a beautiful, delicious, brown crust. Why is that so important? Because brown food tastes good!

1 cup kalamata or gaeta olives, pitted
1/2 bunch of fresh oregano, leaves finely chopped
1 clove garlic, smashed
Zest of 1 lemon
Pinch of crushed red pepper
Extra virgin olive oil
1 8-bone rack of lamb
Kosher salt

Steps:

  • In a food processor, combine the olives, oregano, garlic, lemon zest, and red pepper. While the machine is running, drizzle in enough olive oil to create a smooth paste. Taste it-it should be olive-y and delicious!
  • Preheat the oven to 425°F.
  • Using a sharp knife and working from either end, remove the second and seventh bones from the lamb to make it a 6-rib rack; then cut 6 even chops, season them with salt, and let sit for 10 to 15 minutes.
  • Coat a large sauté pan with olive oil and bring to medium-high heat. Working in batches (if you crowd the pan the chops will steam instead of sear), add the chops and cook, turning once, until beautifully brown, 2 to 3 minutes per side. Then brown the fatty outside edge as well for another 2 minutes-SOOOOO delicious!
  • When all the chops are done, schmear them generously with the olive purée. Put the chops on a baking sheet and roast for 5 to 6 minutes for medium rare (7 to 8 for medium). Then let them rest for 4 or 5 minutes before digging in.
  • If you're making this for a dinner party, the browning and schmearing can be done ahead of time and the chops can be tossed in the oven just before serving.

1 lb rack of lamb
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
8 large green olives, pitted
1 egg yolk
1 tablespoon butter
2 tablespoons parmesan cheese
1 teaspoon thyme
1 teaspoon basil
1 garlic clove, minced
1 teaspoon lemon zest

Steps:

  • Chop the olives finely and mix with all other crust ingredients.
  • Sprinkle the rack with salt and pepper. Heat the oil in a non-stick frying pan and sear the rack on both sides (about 1 minute per side), until browned.
  • Transfer rack of lamb to a cookie sheet. Spread the crust ingredients over the top of the lamb, and sort of press it on.
  • Bake in a 350F oven for 25-30 minutes. Then turn on the broiler and broil the lamb for about a minute to crisp up the crust a bit.

2 ½ lb rack of lamb, frenched
salt, to taste
pepper, to taste
5 tablespoons olive oil, divided
8 cloves garlic, peeled and smashed
¾ cup breadcrumb
¼ cup fresh flat-leaf parsley
1 ½ tablespoons fresh rosemary
½ cup grated parmesan cheese
1 ½ tablespoons whole grain dijon mustard

Steps:

  • Preheat oven to 400°F (200°C).
  • Season lamb generously with salt and pepper.
  • Heat a cast iron over medium high heat.
  • To the hot pan, add in 4 tablespoons of the the olive oil, along with the lamb and garlic. Sear all sides of the lamb until browned, about 3-4 minutes. Remove browned lamb, and place cooked lamb onto a baking sheet.
  • Remove garlic and add to food processor with along with the breadcrumbs, parsley, parmesan, rosemary, and 1 tablespoon of olive oil. Pulse until combined. Pour onto a large plate.
  • Brush the top and sides of the lamb with mustard.
  • Coat the top and sides of the lamb with the breadcrumb mixture and roast in oven for 20-25 minutes.
  • Allow to rest before slicing.
  • Enjoy!

2 1/3-to 1 1/2-pound racks of lamb, trimmed, Frenched
5 ounces egg bread, crusts trimmed, torn into pieces
1/2 cup chopped fresh parsley
1/4 cup hazelnuts, toasted, husked
1 large shallot
For tomato-olive ragout
1 tablespoon olive oil
16 3/4-inch-diameter pearl onions, blanched 30 seconds, peeled
1 tablespoon chopped garlic
1/2 teaspoon dried crushed red pepper
2 cups chopped fresh fennel bulb (about 1 large)
1 28-ounce can Italian-style tomatoes
1/2 cup brine-cured black olives (such as Kalamata), pitted, halved
For final preparation
3 tablespoons Dijon mustard
1/4 cup chopped fresh basil
1 tablespoon butter

Steps:

  • Prepare lamb:
  • Mix 1 cup oil, rosemary and garlic in 13 x 9 x 2-inch glass baking dish. Sprinkle lamb with salt and pepper. Add to marinade; turn to coat on all sides. Cover and chill overnight, turning occasionally.
  • Grind bread in processor until small crumbs form. Combine 2 cups crumbs (reserve and remaining crumbs for another use), parsley, nuts and shallots in processor. Process until nuts are finely ground. Gradually add 2 tablespoons oil; process until crumbs begin to stick together. Transfer to bowl. Season with salt and pepper. Add 1 tablespoon oil toss gently to coat. (Coating can made 1 day ahead. Cover, chill.)
  • Make tomato-olive ragout:
  • Heat olive oil in heavy large skillet over medium-low heat. Add onions, garlic and dried red pepper. Sauté 5 minutes. Add fennel and sauté until translucent, about 3 minutes. Add tomatoes with their juices and olives. Increase heat and bring to gentle boil. Cook until onions are tender and juices thicken, stirring occasionally and breaking up tomatoes with spoon, about 18 minutes. (Can be prepared 1 day ahead. Cover, chill. Rewarm over medium heat before continuing.)
  • Final preparation:
  • Preheat oven to 400°F. Heat heavy large skillet over high heat. Remove lamb from marinade. Add lamb to skillet with some marinade still coating lamb. Cook until brown, about 4 minutes per side. (If necessary, brown 1 rack at a time.) Using tongs, transfer lamb to baking sheet; cool 15 minutes. Spread 1 1/2 tablespoons mustard over rounded side of each rack; firmly press half of breadcrumb coating into mustard on each rack.
  • Roast lamb until meat thermometer inserted into center of lamb registers 135°F for medium-rare, about 25 minutes. Let lamb rest 15 minutes.
  • Meanwhile, mix basil and butter into warm ragout; stir until butter melts. Season to taste with salt and pepper.
  • Transfer lamb to cutting board. Cut lamb between bones into individual chops. Divide chops among 4 plates. Spoon ragout alongside chops and serve.

  • Prepare the lamb. Cut away the thick layer of fat on the outside of each rack of lamb, taking with it the thin sinewy layer of meat underneath – this will leave you with a thick meaty fillet and a fatty layer that lies against the bones. Discard the fat but keep the meaty sinew for the sauce. Score the fat layer on each rack to help it crisp. Season well all over. Heat the oil and butter in a large frying pan over a medium heat. When foaming, add the lamb and sear for 2 minutes each side, until browned all over. Remove and set aside. Once cool, discard the fat in the pan and clean the pan with kitchen paper. Set aside.
  • Make the herb crust. Whizz the herbs in a food processor. Add the breadcrumbs, olives and anchovies and whizz to a fine, damp, vibrant green mixture. Season with pepper. Brush the fillet on each lamb rack with the mustard, then coat with the breadcrumb mix, pressing it on firmly. Put in a large roasting tin and set aside.
  • For the vegetables, lightly score the flesh on 1 side of each courgette and aubergine slice. Peel the peppers with a potato peeler and cut into wide strips. Reserve any trimmings. Put 1 tablespoon olive oil into a griddle pan over a medium-high heat. When really hot, add some of the vegetables, herbs and garlic in 1 layer, and fry for 1-2 minutes, turning, until charred on both sides and just tender. Place in an ovenproof dish and cover with cling film, so they continue to cook in the steam. Repeat with the remaining oil and vegetables, until they are all in the dish. Set aside, covered. Discard the garlic and herbs before serving. (Angela Hartnett’s tip: You can cook the vegetables a day ahead. Cool, cover and chill overnight. Reheat with the lamb for 5 minutes.)
  • Preheat the oven to 240°C/fan220°C/gas 9, or as high as it will go. Make a quick sauce. Heat the cleaned frying pan over a medium heat. When hot, add the meaty sinew and vegetable trimmings. Cook for 5 minutes, stirring, until lightly browned. Add the wine and rosemary and simmer until reduced by half. Add 300ml boiling water and simmer rapidly for 5-6 minutes, removing any scum. Stir in the redcurrant jelly, bubble for a few minutes and season. Strain into a jug. It should be fairly thin but well-flavoured.
