4 very large Idaho potatoes
cut lengthwise into 6 wedges
2 tablespoons grill seasoning
2 tablespoons plus 1/4 cup extra-virgin olive oil (EVOO)
plus additional
divided
2 to 2 1/2 pounds lean ground sirloin
turkey or chicken
1 large onion
chopped
3 to 4 cloves garlic
finely chopped or grated
1 jalapeno pepper
seeded and chopped
2 tablespoons (about 2 palmfuls) chili powder
2 teaspoons (half a palmful) ground cumin
Salt and freshly ground black pepper
3 tablespoons tomato paste
Hot sauce
to taste
2 tablespoons Worcestershire sauce
1 bottle dark beer
such as Negro Modelo
or 1 1/2 cups beef or chicken stock
3 tablespoons butter
3 tablespoons flour
3 tablespoons yellow mustard
1 cup milk
1 cup chicken stock
1 1/2 to 2 cups shredded sharp cheddar cheese
2 tablespoons red wine vinegar
1 head romaine lettuce
chopped

Steps:

  • Preheat oven to 450F
  • Place the potatoes onto a baking sheet
  • Sprinkle them with the grill seasoning and a good drizzle of EVOO
  • Toss to coat, then transfer to the oven and roast, until crispy golden brown, about 40 minutes
  • Turn them once halfway through cooking time
  • While the potatoes are roasting, place a large, heavy-bottomed pot over medium-high heat with 2 tablespoons EVOO, about 2 turns of the pan
  • Add the ground meat to the pan and cook until brown, about 6-7 minutes, breaking it up into small pieces as it cooks using a potato masher or back of a wooden spoon
  • Push the meat to one side of the pan and add the onion, garlic, jalapeno, chili powder and cumin to the pot
  • Cook until the veggies soften, 5-6 minutes, and season with salt and freshly ground black pepper
  • Add the tomato paste to the pot and cook for about 1 minute, until it smells sweet and has caramelized slightly
  • Add the hot sauce, Worcestershire and beer or stock to the pot
  • Bring everything up to a bubble, then reduce the heat and simmer the chili until thickened, about 10 minutes
  • While the chili is simmering, place a medium-size pot over medium-high heat and melt the butter
  • Sprinkle the flour over the melted butter and cook it for about a minute
  • Stir the mustard into the butter-flour mixture, then whisk in the milk and stock
  • Continue whisking the sauce until it has thickened up, then remove the pot from the heat and stir in the cheese until melted
  • Season the cheese sauce with salt and freshly ground black pepper and reserve
  • In a large salad bowl, whisk together 1/4 cup EVOO along with the red wine vinegar, salt and freshly ground black pepper
  • Add the lettuce and cucumber to the bowl and toss to combine
  • To serve, divide the fries between four plates and top each one with some chili-cheese sauce and some salad alongside

2 pounds ground lamb or chicken
2 large cloves garlic, finely chopped
2 chile peppers, such as Fresno, jalapeno or finger peppers, seeded and finely chopped
1 onion, finely chopped
1 inch ginger root, grated or 1 teaspoon dried ginger powder
1 tablespoon chili powder, such as Gebhardt's
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon ground turmeric
Salt and freshly ground black pepper

2 tablespoons tomato paste
2 cups chicken stock
1 cup plain Greek yogurt
2 to 3 tablespoons Sriracha
3 sweet potatoes (2 to 2 1/2 pounds)
Natural nonstick cooking spray

3 tablespoons butter

1/4 cup fresh cilantro or parsley, finely chopped

Steps:

  • Heat the EVOO in a Dutch oven or chili pot over medium-high heat. Add the meat, then crumble and brown. Add the garlic, chiles, onions, ginger, chili powder, coriander, cumin, turmeric and some salt and pepper. Cook for 5 minutes, then add the tomato paste and stir a minute more. Add the stock and simmer for the flavors to combine, 15 to 20 minutes. Cool and store for a make-ahead meal.
  • Stir together the yogurt and Sriracha and store in a airtight container in the refrigerator.
  • When ready to eat, reheat the curry chili over medium heat, adding more stock or water if needed, while you bake the sweet potato fries.
  • For the fries: Place a rack in upper third of the oven and preheat to 450 degrees F. Cut the sweet potatoes into fairly thin fries, 1/4-inch thick, and arrange on baking sheet. Spray with the cooking spray and season with salt and pepper. Bake for 7 to 8 minutes, then switch on the broiler and broil until brown and crispy at edges, 15 to 20 minutes, turning once.
  • Melt the butter in a small skillet over medium heat. When it foams, add the garlic and swirl for a minute. Toss the fries with the butter and cilantro in large bowl using tongs.
  • To serve, arrange the fries on a platter or individual plates. Ladle the chili over the fries and top with the spicy yogurt, mint and scallions, and pass the limes for squeezing on top.

6 large jalapeno peppers
4 large poblano peppers
1 cup all-purpose flour, plus 2 tablespoons
3 large eggs, beaten
1/4 cup milk
2 tablespoons spicy mustard (recommended: Gulden's)
1 cup bread crumbs
1/2 cup grated Parmesan or Romano
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove the seeds from all of the peppers and cut into 1/2-inch lengthwise strips.
  • Set up a breading station: 1 pan of 1 cup of flour, 1 pan of eggs beaten with milk, 2 tablespoons of flour and mustard, and 1 pan of bread crumbs seasoned with cheese, and salt and pepper, to taste.
  • Coat the peppers in the flour, then in the egg mixture and then in the bread crumbs.
  • Arrange the chili fries on a nonstick baking sheet and roast for 18 minutes, turning once.
  • Remove from the oven and transfer to a serving platter.

1 sack frozen French fries, any brand or shape ? crinkle cut, thin cut, steak cut, waffle fries prepared to package directions
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
2 1/2 cups, (10-ounce) sack shredded yellow Cheddar
3 squirts ketchup, about 1/4 cup

Steps:

  • Have your GH (Grown Helper) put fries in oven on a cookie sheet. While fries are baking in the oven, have a GH place a sauce pot on the stove and heat it over medium heat. Add butter and melt it. Add the flour and stir. Cook butter and flour together for 1 minute or so. This is called "roux" (like Tiger and Roo with Pooh Bear) and it helps to thicken up sauces. Use a whisk to stir as the milk goes into the pot. Keep stirring until the milk gets thicker. Use a wooden spoon or heat-safe spatula to stir in the cheese. When all of the cheese melts, take the sauce off the heat and stir in 3 squirts of ketchup. This is your SECRET ingredient. When everyone asks what you put in your cheese sauce that makes it taste so good, just say milk and cheese, you can NEVER tell what secret ingredients you add! Tell your GH to keep the secret, too or they can never help you again!
  • Pour the sauce over the fries or serve the sauce on the side if you like to dipping better.

2 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons tomato paste
2 cups milk
2 cups grated Cheddar
2 chipotles in adobo, chopped, plus 2 spoonfuls sauce

Steps:

  • Bake waffle fries to package directions. Heat butter in a small pot over medium heat and whisk in flour. Cook the flour a minute then add the tomato paste. Cook paste a minute then whisk in milk. When sauce bubbles, stir the cheese and chipotles into it. Season the sauce with salt, to taste.
  • Remove fries from oven when crisp and golden brown. Spoon the thick cheese sauce over waffle fries and serve.

3 tablespoons extra-virgin olive oil, divided
2 pounds ground sirloin
2 tablespoons grill seasoning (recommended: McCormick's Montreal Steak Seasoning) a palm full
1/2 pound baby Portobello mushrooms, chopped
1/4 pound shiitake mushroom caps, sliced
1 medium yellow skinned onion, chopped
3 ribs celery, chopped
1 large red bell pepper, seeded and chopped
4 to 6 cloves garlic, chopped
2 tablespoons Worcestershire sauce
2 canned chipotle peppers in adobo, chopped, with their juices or 1 generous palm full ground chipotle chili powder, about 2 tablespoons
1 tablespoon ground cumin, half a palm full
1 bottle imported beer (recommended: Stella Artois (...imported just 'cause we're Uptown and that's all they drink here.)
1 (15 ounce) can black beans, drained
1 (15 ounce) can crushed tomatoes
1 cup beef stock (8-ounce box)
2 to 3 tablespoons fresh thyme leaves
8-ounce piece smoked Gouda, shredded
1 small white onion, finely chopped

Steps:

  • Heat a deep, large skillet or a pot over high heat. Add 2 tablespoons extra-virgin olive oil and the meat. Season it with grill seasoning and sear it up, browning and crumbling it, for 3 to 5 minutes. Transfer meat to a plate and return pot to stove. Reduce heat to medium- high and add another tablespoon extra-virgin olive oil. Add the mushrooms and begin to brown them before adding the other veggies. After 2 or 3 minutes the mushrooms will begin to shirk and soften. Push the mushrooms off to one side of the pot and add all the remaining veggies to the opposite side of the pot surface. Once the onions, celery, peppers and garlic have been working for a few minutes as well, mix the veggies with the mushrooms. Add the meat back, season with Worcestershire sauce, chipotle in adobo or chipotle powder and cumin. Add in beer to deglaze the pot, scraping up all the pan drippings. Reduce the beer by half, about 2 minutes. Add the black beans, tomatoes, stock and thyme to chili and simmer 10 minutes for flavors to combine. Taste to adjust seasonings. Top bowls of the chili with shredded smoked Gouda and finely chopped raw onions.

8 slices center cut or other lean, thick-cut, smoky bacon
1 pound ground lean beef
2 hot dogs, beef or pork, diced
2 tablespoons chili powder
1 tablespoon grill seasoning (recommended: Montreal Seasoning by McCormick)
2 teaspoons Worcestershire, eyeball it
1 teaspoon plus 1 tablespoon hot sauce, eyeball it, divided
2 tablespoons ketchup
Vegetable oil, for drizzling
4 slices deli sliced Cheddar
1 sack (16 to18 ounces) crispy style frozen potato fries
2 tablespoons butter
3 cloves garlic, finely chopped
3 tablespoons chives, a handful
Salt
1/2 cup chili sauce
4 kaiser rolls, split
1/4 head iceberg lettuce, shredded
1/4 cup chopped cilantro leaves
1/2 lime, juiced

Steps:

  • Preheat broiler to high.
  • Place bacon on slotted broiler pan. Cook bacon 10 inches from the heat and cook 3 to 4 minutes on each side until crisp then adjust oven to bake setting for temperature recommended on fries packaging.
  • While bacon cooks, make the burgers. Preheat a large nonstick skillet over medium high heat. Mix beef with diced dogs, chili powder, grill seasoning, Worcestershire, 1 teaspoon of hot sauce and ketchup. Form 4 large patties. Add a drizzle of oil, 1 turn of the pan and add the patties. Cook burgers 6 minutes on each side, then top with 2 slices bacon and 1 slice of cheddar, each. Turn pan off, cover with loose foil tent and let cheese melt, 1 to 2 minutes.
  • While the burgers cook, add fries to oven and cook until extra-crisp. Remove from oven. Place butter, 1 tablespoon hot sauce and garlic in a small dish and microwave on high 20 seconds then transfer fries to a large bowl. Toss fries with garlic-hot sauce butter and chives and season with salt, to taste.
  • Slather chili sauce on the tops of split keiser rolls. Place bacon chili-cheese burgers on bun bottoms and top each burger with lettuce, cilantro, and lime juice. Set bun tops in place. Pile fries alongside and serve.
