Time 45m

Number Of Ingredients 14

2 and 3/4 cups all-purpose flour
3 Tablespoons granulated sugar
1 teaspoon salt
1 package instant yeast ((1 packet = 2 and 1/4 teaspoons))
1/2 cup water
1/4 cup milk
2 Tablespoons unsalted butter
1 large egg
1/2 stick unsalted butter, softened to room temperature
2 Tablespoons ground cinnamon
1/4 cup brown sugar
1 cup powdered sugar
1 teaspoon vanilla extract
2-3 Tablespoons milk

Steps:

  • In a large bowl, mix the flour, the sugar, salt, and yeast together until evenly dispersed. Set aside. In a small microwavable bowl, heat the water, milk, and butter together in the microwave until the butter is melted (about 30-45 seconds). Stir the butter mixture into the flour mixture. Add the egg and knead with hand or with stand mixer for 3-4 minutes or until the dough is no longer sticky. Place in a lightly greased bowl and let rest for about 5 minutes.
  • Preheat the oven to 200 degrees and turn off after 10 minutes or just before placing rolls in oven.
  • After the dough has rested for 5 minutes, roll it out in a 15x9 inch rectangle. Spread the softened butter on top. Mix together the cinnamon and sugar and sprinkle it all over the dough. Roll up the dough tightly and cut into 9 (large) even piece. Place in a lightly greased 9-inch or square pan (or cut into 12 small pieces and place in a 9x13 pan) and lightly cover with aluminum foil or plastic wrap.
  • TURN OFF the oven and place the cinnamon buns in the oven to rise for 20 minutes. Keep the buns in the oven (REMOVE THE FOIL OR PLASTIC) and turn on the oven to 375F. Bake the cinnamon rolls for 15-20 minutes or until golden. Remove from oven and top with glaze.
  • Mix the powdered sugar, vanilla and 2 Tablespoons milk together until smooth and lump free. Drizzle over warm rolls.

These impressive pastries are so simple using refrigerated crescent rolls and a few pantry staples. Based on Pillsbury recipe.

Provided by Mamas Kitchen Hope

Categories     Breads

Time 20m

Yield 4 serving(s)

Number Of Ingredients 5

8 ounces crescent roll dough, 8 roll tube
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 cup powdered sugar
1 tablespoon orange juice

Steps:

  • Unroll dough in one long rectangle and press to seal perforations.
  • Combine cinnamon and sugar and sprinkle over dough.
  • Roll up jelly roll style starting from the short end and pinch seam to seal.
  • Using a serrated knife slice into 4 equal slices. (I use unwaxed dental floss threading underneath the 'log' and then crossing the ends above the 'log'(floss makes an O around the dough, floss ends form a V) Pull ends to draw floss through to cut dough. Makes a cleaner cut.).
  • Place rolls pinched side down in ungreased muffin tin.
  • Bake at 375 for 10-12 minutes or until brown. Cool for 5 minutes then transfer to wire rack.
  • Mix powdered sugar and orange juice to make a thin glaze. Drizzle over the warm rolls and serve.

BREAKFAST CINNAMON LOGS

Breakfast Cinnamon Logs image

Very good very filling for Sunday or holiday breakfast

Provided by Rita Heist

Categories     Other Breakfast

Time 1h

Number Of Ingredients 11

1 lb good italian, french or brioche bread
5 eggs, whisked
1 Tbsp good vanilla
2 tsp orange zest
1 c half and half
1 c heavy cream
2 Tbsp cinnamon
1 dash(es) fresh nutmeg
1 1/4 c sugar
1 pinch ground sea salt
sifted powdered sugar, agave or maple syrups for presentation if desired

Steps:

  • 1. cut bread in 1 1/2" slices and cut off crusts. Cut slices in shape of oblong logs and let air dry for a few hrs or until a bit stale. Take all wet ingredients and mix with dry, put in deep and wide casserole dish (or more than one if needed) Place bread logs in single rows in mixture, cover and refrigerate. Before going to bed, turn the logs over and return to refrigerator. The next morning, heat oil (I have always used peanut due to it's high heat tolerance) in a fryer (I have had great success with my fry daddy) and place logs in oil.Make sure oil is sizzling hot first. Let cook until bottom is brown, about 6 min or so and then turn with slotted spoon. When logs are brown on both sides, drain and sprinkle with powdered sugar or pour agave or maple syrup over them. They are super creamy on the inside and very crispy on the outside. These are totally decadent and delicious.

CINNAMON-LOG SLICES

Cinnamon-Log Slices image

The dough for these bark-like slice-and-bake cookies is amped up with cinnamon and cocoa and finished with a crust of raw sugar.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 3h30m

Yield Makes about 50 cookies

Number Of Ingredients 11

3 sticks unsalted butter, softened
1 cup granulated sugar
3/4 cup packed light-brown sugar
2 large eggs plus 1 large egg white
1 teaspoon coarse salt
2 teaspoons ground cinnamon
2/3 cup whole milk
2 teaspoons pure vanilla extract
5 cups all-purpose flour, plus more for work surface
3 tablespoons unsweetened cocoa powder
1/3 cup turbinado sugar

Steps:

  • Beat together butter and granulated and brown sugars with an electric mixer on medium-low speed until creamy, about 3 minutes. Beat in whole eggs 1 at a time, then salt and 1 teaspoon cinnamon, until combined. Beat in milk and vanilla. Add flour a little at a time, beating until incorporated. Divide dough into 4 balls. Roll 1 ball into a 12-inch log; wrap in parchment and refrigerate, along with remaining 3 balls of dough, until firm, about 1 hour.
  • Combine cocoa powder and remaining 1 teaspoon cinnamon and sprinkle over work surface. Roll out 1 ball of dough into a 6-by-12-inch rectangle in cocoa mixture. Flip rectangle over onto lightly floured work surface so that 1 long side is facing you; brush off excess cocoa mixture. Place log of dough, also with a long side facing you, in center of rectangle and wrap rectangle around log to enclose completely. Firmly squeeze and massage wrapped log of dough to adhere rectangle to log. Repeat process with second ball of dough, rolling it out into an 8-by-13-inch rectangle, then with final ball, rolling it out into a 10-by-14-inch rectangle. Refrigerate log until firm, about 1 hour, 15 minutes. Log can be stored in refrigerator up to 1 day.
  • Preheat oven to 350 degrees. Lightly beat egg white. Brush outside of log with egg white and roll in turbinado sugar, patting to adhere. Refrigerate until sugar is set, about 10 minutes. Slice log into 1/4-inch-thick rounds and transfer to parchment-lined baking sheets. Bake until slices are golden around edges (rings may separate slightly), 18 to 20 minutes. Let cool completely. Slices can be made 3 days ahead and stored at room temperature.
