No kneading is needed for this fragrant, dense bread dough. The ingredients are quickly mixed together, similar to quick-bread batters, and then baked, making these loaves speedy work.

Yield Makes 4 loaves

Number Of Ingredients 15

4 cups rye flour
1 cup all-purpose flour
1 tablespoon coarse salt
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup untoasted sunflower seeds
3 tablespoons sesame seeds, toasted
2 tablespoons flaxseed
1/2 teaspoon cumin seeds, lightly crushed
4 ounces (1 stick) unsalted butter, chilled and cut into small pieces, plus more for pans
2 cups plain whole-milk yogurt
1/2 cup whole milk
1/4 cup honey
2 large eggs
2 tablespoons mixed seeds (sunflower, sesame, flax, and cumin), for sprinkling

Steps:

  • Preheat oven to 350 degrees. Place a baking sheet on center rack. Butter four 6-by-3-by-2-inch loaf pans, line with parchment, and butter parchment.
  • Mix flours, salt, baking powder, baking soda, and seeds. Cut butter into flour mixture with a pastry cutter or rub in with your fingers, until the mixture resembles coarse crumbs.
  • Whisk together yogurt, milk, honey, and eggs. Make a well in center of flour mixture, and pour in yogurt mixture. Stir well to combine (batter will be sticky). Spoon batter into pans, smoothing the tops. Scatter mixed seeds on top of batter.
  • Transfer pans to baking sheet, and bake until loaves are slightly cracked and golden brown, about 1 hour. (A skewer inserted into centers should come out clean.) Let cool in pans for 15 minutes. Turn out onto wire racks, and let stand for 2 hours.

25 gfresh brewer's yeast
300 mllukewarm water

Steps:

  • Step 1 Making home-baked bread is simpler than you might think, especially when you have the kneading power of the KitchenAid Artisan Stand Mixer and the special "Rising" function of the Twelix Artisan Oven. Using both these appliances, dough rises in only 90 minutes and you get fragrant, crunchy bread in about two hours. The constant temperature maintained by the oven throughout the rising period and the kneading power of the Stand Mixer makes waiting for a second rising unnecessary. These steps can be used for a number of different recipes. Step 2 Place both flours and the salt in the bowl of the Stand Mixer and attach the dough hook. Run the Mixer on minimum speed to thoroughly blend. Step 3 In another bowl, dissolve the brewer's yeast in the water. The water must be lukewarm because if it's too hot or too cold, it could inhibit or slow the rising process. Pour the water with the yeast into the Mixer bowl with the dough hook attached and the mixer running. Next, gradually increase the mixer speed to 8. You may need to add a little more water and a tablespoon of flour. Step 4 Turn off the mixer and detach the dough hook. Transfer the dough to a glass bowl and activate the oven's special "Rising" function. Cover the bowl with a damp cloth and put it on the middle shelf of the oven. Allow to rise for 90 minutes. Step 5 After the dough has risen, remove it from the oven and select the "Traditional Bread" professional bakery function. Punch down the dough on a floured work surface and shape it into a loaf. Make a cut in the shape of a cross on the top and sprinkle with flour. Place in the oven and bake for 33 minutes.

Quick Swedish Rye Bread image

This all-rye bread, called matbrod or "food bread" in Sweden, is incredibly simple to make. The cumin seeds impart a unique but delicious flavour. You could use caraway seeds instead. Recipe found in Canadian House and Home and is from Jeffrey Alford and Naomi Duguid's Home Baking: The Artful Mix of Flour and Tradition Around the World (2003 Random House Canada).

5 cups light rye flour
2 teaspoons baking soda
1 teaspoon baking powder
1 tablespoon salt
1 1/2 teaspoons whole cumin seeds or 1 1/2 teaspoons caraway seeds
2 cups plain yogurt (don't use reduced fat yogurt)
1/2 cup milk
1/4 cup liquid honey

Steps:

  • Preheat oven to 400°F and butter 2 8" x 4" loaf pans.
  • In large bowl, stir together flour, baking soda, baking powder, salt and cumin seeds.
  • In separate bowl, mix together yogurt, milk and honey; stir to blend well (if the honey is stiff, warm it a little to make it more liquid before mixing with the yogurt and milk).
  • Pour yogurt mixture into flour mixture and stir until dry ingredients are well moistened (mixture will be sticky but quite stiff).
  • Stir vigorously for several minutes.
  • Divide dough evenly among prepared pans, smoothing tops with wet spatula.
  • Place in centre of oven, lower heat to 385°F and bake for 30 minutes, then lower heat to 350°F and bake another 20 minutes or until loaves have pulled away from sides of pans and a skewer inserted in centre comes out clean.
  • Turn loaves out of pans onto rack. (The loaves will be about 2" high.).
  • Allow bread to cool for at least two hours before slicing to give loaves time to firm up.

5 cups bread flour, divided
2 cups plus 1 tablespoon rye flour, divided
1/2 cup potato flour
1/3 cup nonfat dry milk powder
2 tablespoons sugar
2 tablespoons caraway seeds
3 teaspoons instant or quick-rise yeast
2-1/2 teaspoons onion powder
2 teaspoons salt
2-3/4 cups warm water (110° to 115°)
1/4 cup vegetable oil
2 tablespoons dark baking cocoa
1 large egg, lightly beaten with 1 tablespoon water

Steps:

  • In a large bowl, whisk together 4 cups bread flour, 2 cups rye flour, potato flour, milk powder, sugar, caraway seeds, yeast, onion powder and salt. In another bowl, whisk together warm water and oil; pour over flour mixture and stir until combined. Dough will be sticky. Turn dough onto a lightly floured surface; with floured hands, knead dough, incorporating remaining 1 cup bread flour as needed until dough becomes smooth and elastic, 8-10 minutes. Divide dough in half. Mix dark cocoa powder with remaining 1 tablespoon rye flour; knead cocoa mixture into 1 portion of dough until fully incorporated. , Lightly coat 2 large bowls with oil. Place 1 portion of dough into each bowl and turn to coat. Cover and allow dough to rise until doubled in size, 1 to 1-1/2 hours. Working with 1 portion of dough at a time, turn onto lightly floured surface; roll each into a 14x12-inch rectangle. Place dough with cocoa on top of remaining dough; starting with a long side, roll jelly-roll style to form a spiral, pinching seam together to seal. Place seam side down in a greased 13x4-inch Pullman loaf pan, tucking ends under to form smooth loaf. Loosely cover pan with damp cloth or plastic wrap and allow to rise until doubled in size, 1 to 1-1/2 hours; dough should rise about 1/2 to 3/4 inch above edge of loaf pan. , Brush loaf with egg wash; using a sharp knife, cut 3-4 deep diagonal slashes on top of loaf. Cover with nonstick foil and place in preheated 400° oven; bake 15 minutes. Reduce heat to 375° bake 20 minutes. Remove foil; bake until loaf is deep golden brown and reaches an internal temperature of 200° when measured with an instant-read thermometer, about 10 minutes longer. Remove from oven; allow to cool 10 minutes. Remove loaf from pan. Cool completely on wire rack.
