A Korean inspired recipe of marinated pork tenderloin. Easy, quick, and loaded with bold flavors this Korean Bulgogi Pork is one of Korea's most beloved meat dishes.

Number Of Ingredients 10

1 pound pork tenderloin
3 cloves garlic (minced)
1 tablespoon fresh ginger (peeled and grated, about 1 inch piece)
1/4 cup soy sauce (low sodium)
1 tablespoon red chili flakes
1/2 pear (grated)
1 tablespoon sesame oil
1 tablespoon light brown sugar
2 tablespoon vegetable oil (for cooking meat)
2 green onions (chopped for garnish)

Steps:

  • Prepare the pork tenderloin by cutting it into very thin slices. Place the meat in a ziploc bag. Set aside.
  • In a bowl add the garlic, ginger, soy sauce, chili flakes, pear, sesame oil and brown sugar. Whisk everything together well. Pour the marinade over the pork, close the ziploc bag and shake it around a bit to make sure that the all the pork meat is covered in the marinade. Let it marinate at room temperature for 30 minutes or refrigerate for up to 8 hours.
  • Add 1 tbsp of the vegetable oil to a large skillet and heat it over medium high heat. Add half of the meat to the skillet and arrange it so that it's in a single layer. Cook it for about 3 minutes without touching the meat, or until the meat starts to brown, almost char, then turn it and cook for another 3 minutes until it's browned on both sides. Remove from skillet to a bowl and set aside.
  • Add the remaining tbsp of vegetable oil and remaining meat along with remaining marinade. Repeat cooking the same as above.
  • Serve over cooked rice or noodles and garnish with chopped green onions.

1 ½ lb boneless pork shoulder, or pork belly, chilled or frozen for easier slicing
½ onion, sliced into thin strips
3 stalks green onion, sliced into 2-inch (5 cm) pieces
3 cloves garlic, minced
1 teaspoon ginger, minced
¼ cup korean red chili paste, gochujang
1 teaspoon red pepper flakes
¼ cup soy sauce
3 tablespoons rice wine
1 tablespoon sesame oil
1 tablespoon sugar
1 teaspoon black pepper
1 tablespoon canola oil
sesame seed, to garnish
rice, to serve

Steps:

  • Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
  • Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
  • Cover and marinate in the refrigerator for at least 30 minutes.
  • Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
  • Sprinkle a bit of sesame seeds on top, then serve with rice!
  • Enjoy!

Quick & easy Korean pork image

Sweet and spicy marinated pork belly served with crisp fresh lettuce makes a sensational barbecued dish

Number Of Ingredients 17

500g good-quality pork belly , skin and ribs removed (you can ask your butcher to do this), carved into thin slices
1 large lettuce , such as Little Gem or iceberg, leaves washed and separated, cooked white short-grain rice, to serve
2 Conference pears , peeled and cored
½ white onion
3 garlic cloves
thumb-sized piece ginger
1 spring onion
1 tbsp soy sauce
2 tbsp brown sugar
1 tbsp toasted sesame oil
2 tbsp Korean chilli paste (or any Asian chilli paste)
3 tbsp Korean soy bean paste
1 ½ tbsp Korean chilli paste
2 tbsp mirin
1 tsp roasted sesame oil
1 tsp sesame seed
½ spring onion , white part only, finely chopped

Steps:

  • Put all the ingredients for the marinade in a food processor and blend until smooth. Season to taste, then pour over the sliced pork. You can now cook the meat straight away, but for best results allow it to marinate in the fridge for at least 30 mins.
  • Make the ssamjang sauce (if using) by mixing all of the ingredients together, then set aside.
  • Heat a griddle pan over a high heat and cook the pork in batches for 2-3 mins each side until charred and cooked through. Serve with white rice and a few lettuce leaves. To eat, place a small scoop of rice in a leaf, then a piece of pork, smear with ssamjang sauce (if using) and wrap up.

3 tablespoons sesame oil
2 teaspoons rice wine vinegar
3 tablespoons dark soy sauce
4 tablespoons honey
30 mL bourbon whiskey
15 mL fresh lime juice
4 medium cloves garlic cloves, finely chopped
2 teaspoons smoked paprika
4 tablespoons dark muscovado sugar
1 teaspoon red chili flakes
2 teaspoons corn flour
1 teaspoon sesame seeds
1 whole rack of pork ribs
1 tablespoon kosher salt
1 tablespoon pepper
1 tablespoon dark muscovado sugar

Steps:

  • Preheat the oven to 150 degrees celsius.
  • Mix together the salt, pepper and sugar for the rub and apply liberally over the ribs.
  • Wrap entirely in foil and bake in the oven for 2 hours at 150 degrees celsius / 300 degrees Fahrenheit.
  • In a saucepan, combine all of the sauce ingredients and bring to a boil then immediately reduce the heat until the sauce thickens and then set aside.
  • Remove the ribs from the oven and unwrap from the foil. Brush a generous amount of the BBQ sauce over both sides of the ribs and place back in the oven for a further 10 minutes.
  • Remove from the oven, brush more bbq sauce on and sprinkle with sesame seeds.
  • Enjoy!

3 tablespoons soybean paste, doenjang
1 tablespoon korean chili paste, gochujang
1 tablespoon mirin
1 tablespoon sesame oil
2 teaspoons garlic, minced
1 teaspoon sugar
1 teaspoon sea salt
2 tablespoons sesame oil
freshly ground black pepper, to taste
1 lb fresh pork belly
perilla leaf
red leaf lettuce
3 jalapeñoes, sliced into rounds
10 cloves garlic, thinly sliced

Steps:

  • Make the ssamjang: In a medium bowl, stir together the soybean paste, chile paste, mirin, sesame oil, garlic, and sugar.
  • Make the salt & pepper sesame oil: In a small bowl, stir together the salt, sesame oil, and pepper.
  • Heat a Korean barbecue griddle or large pan over medium-high heat. When the pan is hot, rub a piece of pork belly around the pan to grease with the melted fat, then arrange the pork belly in the pan in a single layer, working in batches to avoid overcrowding the pan. Cook until the pork belly is golden brown and crispy and the internal temperature reaches at least 145°F (63°C), 2-3 minutes per side.
  • Cut the pork belly into bite-size pieces using kitchen shears, then arrange on a plate with the perilla leaves, red leaf lettuce, jalapeños, and garlic. Serve with the ssamjang and salt & pepper sesame oil.
  • Enjoy!
