So when I came across this one in the TOH 2002 Annual Recipes that was sent in to them by Edith Jennings of Prarie City, Iowa, I knew I had to try it.The time for peeling the potatoes has been included in the...

Steps:
- 1. Pre-heat oven to 375 degrees.
- 2. Place potatoes in a greased 1 quart baking dish, set aside.
- 3. In a small pan, melt margarine and then add flour cook until the flour taste disappears ( About 3 to 4 minutes ),then add the milk a little at a time, bring to a boil then reduce heat and stir until slightly thickened.
- 4. Add cheese,salt, pepper, and worcestershire sauce and stir until cheese is melted.
- 5. Cool sauce slightly, pour over potatoes.
- 6. Cover potatoes and bake for 25 minutes at 375 degrees, remove cover and top with french fried onions and paprika,then bake for another 20 minutes or until potatoes are fork tender.
- 7. Let " rest " for 10 minutes, so sauce will thicken.
QUICK AND EASY SCALLOPED POTATOES FOR TWO
These are so quick and easy to do and they're delicious! It's the perfect size for two or three people and it's ready in a snap, so it can easily be fixed during busy weekdays. Enjoy!

- 1. Preheat oven to 375 degrees. Spray a small casserole dish with cooking spray and set aside.
- 2. Fill a large sauce pan about 1/2 full of water and bring to a boil. While water is heating, peel potatoes and onion and slice into about 1/4" slices. Add potatoes and onion to water and return to boil. When water is boiling, cover and reduce heat to medium. Cook 7 to 8 minutes or until potatoes are just tender.
- 3. Drain off all but about1/4 cup of water. Mix flour and evaporated milk with a fork until smooth. Pour into potatoes. Add salt, onion powder and garlic powder and return to heat. Gently fold being careful not to break up potatoes until sauce begins to thicken. Remove from heat and gently fold in 1/2 of the cheese until melted.
- 4. Pour potatoes into casserole dish and top with remaining cheese. Bake for about 20 minutes or until bubbly.

- Preheat oven to 375°F.
- Wash potatoes and slice ¼″ thick (no need to peel). Drop into boiling water for 5 minutes. During the last minute, add sliced onions to the water. Drain.
- Meanwhile, combine soup, milk, pepper and garlic powder in a bowl. Microwave until hot.
- Put a little bit of the soup mixture in the bottom of a greased 2 QT casserole dish, a 9×9 pan, or an oven-safe pan. Layer ½ of the potatoes, ½ of the soup mixture, and ½ of the cheese. Repeat layers ending with cheese.
- Bake at 375°F for 45-55 minutes or until hot and bubbly.

OLD FASHION SCALLOPED POTATOES
Old Fashion Scalloped Potatoes (AKA Au Gratin Potatoes) just like grandma made are the perfect side dish for almost any meal. Just follow these easy step by step photo instructions for this classic homemade dish.

- Preheat oven to 350, not convection.
- Slice 5-6 medium russet potatoes about 1/8 inch to make about 4 cups. If you have crazy ninja knife skills, you can do this by hand, but a mandolin is a good thing here. The setting on mine for this is "thin."
- Rinse the potato slices in a bowl of cold water. Let soak until ready to use then dry a bit with a paper towel.
- Start the sauce with 3 tablespoons butter over medium heat in a large pan. When melted, add 3 tablespoons flour and whisk for a few minutes. Add 1 ½ cup milk. Frequently whisk for a couple of minutes and add 1 teaspoon salt and ⅙ teaspoon cayenne pepper (optional.) Bring to a light boil and whisk contentiously, and this will start to thicken in a few more minutes.
- Reduce heat to low and add 1 cup of cheese. I used sharp cheddar. Whisk until smooth and remove from heat.
- Layer half of the potatoes into a casserole dish (6 by 9 inches) that has been sprayed with PAM. Put them in individually, so they are not stuck together. Do not just dump them in.
- Pour half the cheese sauce over the first half of the potatoes.
- Add the second half of the potatoes, then rest of the cheese sauce. Now top with ½ cup of shredded cheese. Give a light sprinkle of paprika (an old fashion touch.)
- Bake until potatoes are "fork-tender." This will be about an hour or a little more. Let sit for 5-10 minutes before serving.

Steps:
- Start by slicing the potatoes about 1/8-1/4 inch thick.
- You may peel them first if you like.
- In a casserole dish, lay down a single layer of potatoes.
- Put some onion of top if you like.
- Sprinkle lightly with flour, salt, and peper.
- (If you like it really creamy, add more flour) Place 2-3 tabs of butter on top Repeat the layers to the top of the casserole dish.
- Pour the milk over the top of the potatoes until the dish is about 2/3 full.
- Bake at 375F for 1 hour.

I guess if you wanted to speed up the time it takes to prepare this recipe, you could slightly cook the potatoes in the microwave or on the stove top.
